CHICKEN VALDOSTANA

Chicken Valdostana is a delicious dish made with pan seared chicken, prosciutto and fontina cheese in a white wine sauce.

Number Of Ingredients 11

4 large chicken cutlets (thin sliced)
1 cup flour
4 tablespoon unsalted butter
3 tablespoon olive oil
2 large oyster mushrooms (stems removed and sliced)
3/4 cup fontina cheese
4 slices prosciutto
3/4 cup dry white wine
3/4 cup low sodium chicken stock
1 teaspoon kosher salt (plus more to taste)
1/2 teaspoon black pepper (plus more to taste)

Steps:

  • Grate fontina cheese. Clean and slice oyster mushrooms into 1/2" strips. Preheat oven to 375f and set rack to middle.
  • In an oven safe pan heat 1-2 Tbsp butter and 1 Tbsp olive oil (enough to coat pan) on medium heat. Pat dry chicken cutlets and lightly season both sides with salt and pepper. Dredge cutlets in flour and shake off excess. Pan sear the cutlets for 2 minutes per side then remove cutlets and set aside. If required work in batches adding another Tbsp of butter and olive oil to second batch.
  • In the same pan saute mushrooms over medium-high heat for 5-7 minutes or until brown. Use a touch more oil and butter if the pan is dry. When mushrooms are finished remove and set aside.
  • Turn heat to high and add the 3/4 cup chicken stock and 3/4 cup white wine. Cook for 5 minutes to let the sauce reduce. Scrape the bottom of the pan with a wooden spoon to dislodge all brown bits. Add in 1 Tbsp of butter to the sauce and stir to combine.
  • Turn heat off and place the chicken in the pan. Top chicken with 1 slice of prosciutto per cutlet. Next, place the mushrooms on top and finally evenly distribute the fontina cheese. Spoon a touch of the sauce on top of each cutlet and place pan in oven to finish cooking.
  • Remove the chicken valdostana when the cheese is bubbly and the chicken is fully cooked through (about 5-7 minutes). Enjoy!

2 chickens (cut into serving pieces)
2-3 garlic cloves (slightly crushed and peeled)
A sprig of rosemary
A bay leaf
Olive oil
salt and pepper

Steps:

  • In a non-stick sauté pan or covered skillet large enough to hold all the chicken pieces, gently sauté the garlic cloves, rosemary and bay leaf in the olive oil, just until the ingredient give off their aroma and the garlic is just starting to brown. Remove.
  • Turn up the heat to a moderate flame and add the chicken pieces. Brown them well on all sides, which should take about 10-15 minutes. Keep the pieces well spaced to ensure proper browning, proceeding in batches if necessary.
  • Once all the chicken pieces are well browned, season them well with salt and pepper, turning them so that they have seasoning on all sides. Now add a good splash of white wine, again turning the pieces as the wine evaporates.
  • After a couple of minutes, the wine should be well reduced (but not entirely evaporated) and have lost its alcohol. Lower the heat and cover the pan. Let the chicken pieces simmer for about 15-20 minutes further, turning from time to time, until they are cooked through and perfectly tender.
  • Add liquid (either more wine or water) if things dry out during the simmer. If you find that the chicken has given off a lot of liquid during the simmer, turn up the heat and boil off the excess. You should wind up with ample but well-reduced and intensely flavored pan juices.
  • Serve the chicken pieces right away, napped with their pan juices, which are especially delicious drizzled over mashed potatoes.

2 lbs boneless skinless chicken thighs
1 1/2 lbs chicken tenderloins
salt and pepper
3 tablespoons extra virgin olive oil
6 garlic cloves, crushed
3 tablespoons white wine vinegar
2 tablespoons butter
2 shallots, chopped
6 sprigs fresh rosemary, finely chopped
2 tablespoons flour
1 cup dry white wine
2 cups beef broth (not chicken broth)

Steps:

  • Heat a large, deep skillet over medium high heat.
  • Season chicken with salt and pepper.
  • Add 2 tablespoons extra-virgin olive oil, half the chicken pieces, and a couple of crushed cloves of garlic.
  • Brown chicken 2 minutes on each side and remove from pan. Add remaining olive oil, another single turn of the pan, the remaining chicken pieces and garlic.
  • Brown chicken 2 minutes on each side and remove. Add vinegar to the pan. Let it cook off.
  • Add butter, shallots, and rosemary to the pan and cook 2 minutes, add flour and cook 1 minute more.
  • Whisk in wine, reduce 1 minute. Whisk in broth and bring liquids up to a bubble.
  • Return chicken to the pan and simmer over moderate heat 7 to 8 minutes to finish cooking chicken through.

This is an old favourite - chicken cooked "the hunter's way," which grants a certain amount of culinary licence. This, my, version is traditional enough, only speeded up and simplified. The only unexpected deviation lies in the addition of a can of cannellini beans. This, in effect, turns it into a quick, one-pot, all-inc supper. Having said that, I also adore it - as do my children - with plain steamed rice, as well. But whatever. When I cook this, I know I can count on getting tea on the table from scratch in comfortably under half an hour.

1 tablespoon garlic oil
1/2 cup pancetta cubes
6 scallions, finely sliced
1 teaspoon finely chopped fresh rosemary leaves
1 pound chicken thigh fillets, each cut into 4 pieces

1 (14-ounce) can chopped tomatoes
2 bay leaves

Steps:

  • Put the garlic oil into a pan with the pancetta, sliced scallions and chopped rosemary and fry for a couple of minutes.
  • Add the bite-sized chicken pieces, stirring well, and sprinkle in the celery salt.

1/4 cup olive oil
2 red or green bell peppers, seeded and cut into 1-inch wide strips
1/2 pound mushrooms, cut into 1/4- inch thick slices
1 (3 pound) free-range chicken cut into serving size pieces
Kosher salt and freshly ground pepper
1/2 cup dry white wine
2 cloves garlic, roughly chopped
2 1/2 cups roughly chopped onions (about 2 medium size onions)
1 tablespoon fresh rosemary or oregano leaves
1 cup canned whole plum tomatoes, Salsa Marinara, or your own favorite tomato sauce

Steps:

  • Warm the olive oil in a large saute pan set over medium-high heat. Stir in the peppers and cook, stirring, until slightly softened, about 10 minutes. Remove from the pan and set aside. Stir the mushrooms into the pan and cook, stirring, until slightly softened, about 8 minutes. Remove from the pan and set aside. Season the chicken with salt and pepper. Add to the pan and brown lightly on both sides, about 15 minutes in all. Remove the chicken from the pan to a platter and set aside. Pour the wine into the pan and stir to incorporate any cooking juices. Add the garlic, onions, and rosemary and cook until the onions are slightly softened, about 3 minutes. Stir in the tomatoes, crushing them with your hand or the back of a slotted spoon as you add them to the pan. Return the chicken to the pan, along with any juices that have accumulated on the plate. Bring to a boil, then reduce the heat to a simmer. Cover and cook, stirring occasionally, until the chicken is cooked through, about 30 minutes. Stir the peppers and mushrooms into the chicken. Return to a simmer, cover, and cook to blend in the flavor of these ingredients, about 10 minutes. The stew may be set aside at this point for several hours before reheating and serving with bread to dip into the sauce. Variation: Rabbit cut into serving portions may be substituted for the chicken. Omit the peppers. Quarter rather than slice the mushrooms.
