Easy Platz (Coffee Cake) image

A delicious light fruit cake, to go with a good cup of Java! Or serve as a dessert!

2 cups all-purpose flour
1 ½ cups white sugar
2 teaspoons baking powder
1 teaspoon salt
⅔ cup margarine
2 eggs, beaten
⅔ cup milk
1 cup blackberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch square pan.
  • In a large bowl, combine flour, sugar, baking powder and salt. Cut in margarine until mixture resembles coarse crumbs. Set aside 3/4 cup of crumb mixture, to be used as a topping for the cake. Mix eggs and milk together and then blend into remaining mixture in bowl.
  • Spread batter into prepared pan. Sprinkle blackberries evenly over the top. Sprinkle reserved crumb mixture over fruit.
  • Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.

1/2 Cup Cream (or milk with 2 Tbsp of butter)
1/2 Cup Sugar
1 egg beaten
1 tsp baking powder
1 tap vanilla
1 1/3 Cups Flour (approx.)
FRUIT LAYER
3 cups sliced fruit (approx.) Tart plums or Rhubarb tastes great
1/2 Cup Sugar
2 tsp Minute Tapioca
CRUMBLE TOPPING
3/4 Cup Flour
1/2 Cup Sugar
1/2 Cup Butter

Steps:

  • 1) Mix together ingredients for base to form a soft dough. 2) Press dough into bottom of 9x13 baking pan to make a thin layer 3) Place plum halves cut side down, or other sliced fruit over dough 4) Sprinkle with sugar and minute tapioca 5) Mix together ingredients for crumble topping until crumbly in texture 6) Sprinkle topping over fruit layer 7) Bake at 350 for approximately 35 - 45 minutes, or until crumbs are lightly browned.

When I moved to Winnipeg over 20 years ago, I adopted a lady from my church as my "Winnipeg Mom". This is her recipe. She was an excellent cook and enjoying baking. This fruit square is really good warm with whipped cream or ice cream, but can also be served cold. Other fruit in season can be used in place of rhubarb and in winter you can used fruit like dried apricots.

2 cups flour
1 cup sugar
2 1/4 teaspoons baking powder
1/2 cup butter
1 cup milk
2 eggs
1/2 teaspoon almond flavoring
4 cups rhubarb, cut in 1/2 pieces
1 cup flour
1 cup sugar
1/3 cup melted butter

Steps:

  • Mix 2 cups flour, 1 cup sugar, baking powder and rub in the butter to make a meal appearance.
  • Beat together 1 cup milk, eggs and almond flavoring.
  • Mix these two mixtures together.
  • May be lumpy.
  • Spread into a 10 x 15 inch pan and cover with fruit.
  • Mix together the remaining flour, sugar and melted butter.
  • Sprinkle crumbs on top of the fruit.
  • Bake at 350 deg. for 40 minutes. Do not overbake.
  • Cut into 20 squares.

This German/Austrian cake was very popular in my family and I still make it for my family. Although none of my relatives had a recipe for it written down, I found one for in Canadian Living magazine and adapted it to our tastes.

1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 cup granulated sugar
1/4 cup butter
1 egg, beaten
1/2 cup light cream
4 cups fruit, of your choice (e.g. blueberries, sweet cherries, chopped rhubarb, sliced peaches, apricots, plums or apples)
1 cup granulated sugar
1/4 cup all-purpose flour
1 egg, beaten
2 tablespoons butter, melted
1 cup all-purpose flour
3/4 cup granulated sugar
1/2 teaspoon baking powder
1/4 cup butter
2 tablespoons light cream

Steps:

  • In a bowl, mix together flour, baking powder and sugar; cut in butter finely.
  • Combine egg and cream; stir into dry ingredients, adding a little more cream if needed, to make a soft, sticky dough.
  • With floured hands, pat dough evenly into a lightly greased 12 x 8-inch or 9-inch square cake pan.
  • Filling: In a bowl, combine fruit, sugar and flour.
  • Combine egg and melted butter; gently mix into the fruit mixture.

Steps:

  • Cream butter, sugar and vanilla. Add eggs one at a time. Sift dry ingredients and add alternately with sour cream.
  • Pour batter into a large greased and floured jellyroll pan (13 x 17 3/4).
  • Arrange fruit of your choice on top (you dont have to use blueberries).
  • Cover with a generous sprinkling of Streusel.
  • Streusel is just stirred together.

This is a apple cake recipe that is made in a 10x15 cookie sheet. Very easy to make. This served warm with ice cream is very good. Freezes well. When the berries are in season I top this cake with blueberry, raspberry and blackberries.

3 cups flour
2 cups sugar
3 teaspoons baking powder
1/2 cup margarine
1/2 cup butter
2 eggs
3/4 cup milk
1 teaspoon vanilla
5 large apples, peeled cored and sliced thinly (I like to use Spartan or Jonagold)
1 teaspoon cinnamon
1 teaspoon sugar

Steps:

  • In bowl combine flour and sugar baking powder.
  • Add margarine and butter mix together with hands until you have fine crumbs.
  • Set aside 1 1/2 cups of the crumbs.
  • In remaining crumb mixture add eggs, milk and vanilla, mix until just moist.
  • Pour batter onto a greased 10x15 cookie sheet, top with sliced apples.
  • Sprinkle 1 tsp cinnamon and 1 tsp sugar on top of the apples.
  • Top with remaining 1 1/2 cups of reserved crumb topping. Pat down slightly.
  • Bake at 375°F for 35-40 minutes.
  • When making the blueberry, raspberry, blackberry I don't use the 1 tsp sugar or the cinnamon (about 1 cup of each of the berries or more depending on how much fruit you like for topping).

1 tsp. baking soda
1/4 tsp. salt
1/2 cup butter
1 egg
1/2 cup (approx) milk
FILLING:
4 cups chopped, peeled, cored apples
1 tsp. grated lemon peel
2 tsp. lemon juice
1 1/2 cups granulated sugar
1/2 cup all purpose flour
Pinch salt
2 eggs
1/2 cup butter, melted

Steps:

  • Grease a 9-inch square cake pan and set aside. FOR THE DOUGH: In a large bowl, combine flour, baking soda and salt. With a pastry blender or 2 knives, cut in butter until mixture is crumbly. In a separate bowl, beat egg; drizzle over dry ingredients and toss together with a fork to make coarse crumbs. Scoop out 1 cup and reserve. Sprinkle milk over remaining crumbs; stir together to make a soft dough. Use a little more milk if necessary to achieve this consistency. Spread into prepared pan. FILLING: Combine apples, lemon peel and juice in a large bowl. Add sugar, flour and salt and toss together. In a separate bowl, beat eggs and mix in butter. Stir into apple mixture.   • Set oven at 375F (190C) and prepare cookie sheet. For base-combine flour, baking powder, and salt in a large bowl. Cut in butter until mixture resembles fine crumbs. Combine milk and egg and add to first mixture. Spread on cookie sheet. Top with fresh or frozen fruit.( Rhubarb, apples, apricots, peach slices, blueberries, or plumes.) With a pastry blender, cut butter into sugar, flour, and vanilla to make a fine crumb consistency. Sprinkle over fruit. Bake 35 - 40 min. until lightly brown.
