ITALIAN PIZZELLE COOKIES

Italian Pizzelle Cookies image

This recipe comes from my Italian aunt, who every Christmas makes some of the best cookies. You can substitute vanilla and lemon extract for flavor variation. Sometimes it helps to be smarter than a 5th grader when you make these.

This is a recipe that was handed down in my husband's family. You need a Pizzelle iron. It is an easy recipe. It is the only cookie recipe I know without looking at a recipe. Just remember: 3,3,3 and 1,1. We have to make it every Christmas or it just isn't Christmas.

PIZZELLE COOKIES

Pizzelle Cookies image

Pizzelle iron is needed to make these cookies, but they are so good that I would recommend buying one! From my friend Dianne's aunt, these are heavenly. Prep time does not include overnite chilling, and cook time is a guesstimate as everyones iron cooks differently. You may have to experiment with a few cookies before you get the hang of it.

PIZZELLE COOKIES (GRAIN FREE) RECIPE - (4.2/5)

Pizzelle Cookies (Grain Free) Recipe - (4.2/5) image

Provided by á-178187

Number Of Ingredients 8

1-1/4 cups Honeyville almond flour
1/2 cup arrowroot flour
3/4 cups granulated sweetener (I used Swerve for sugar free option)
1/2 cup grass-fed butter, melted
3 eggs
1/2 tsp baking soda
1 tbsp or more anise extract*
These can also be made with vanilla extract. Start with a teaspoon and increase to desired flavor.

Steps:

  • 1. Beat the eggs and sugar together. Add the butter and anise and mix well 2. In another mixing bowl, combine the flour, arrowroot and baking soda 3. Combine the two bowls until smooth 4. Once the iron is hot, spoon a tablespoon of batter into center of each pattern on the iron. 5. Press down for about 8-10 seconds until golden 6. Use a metal spatula to remove each cookie and place them on a cooling rack. Let them cool in a single layer so they can harden and become crisp. 7. To make these in the oven, I would spoon out batter on a parchment lined cookie sheet and bake at 350 until golden brown.
