4 cups shredded pizza cheese blend or part-skim mozzarella cheese
1 pound bulk Italian sausage, cooked and drained
2 packages (3 ounces each) sliced pepperoni, chopped
1 medium green pepper, finely chopped
1 medium sweet red pepper, finely chopped
1 medium onion, finely chopped
2 jars (14 ounces each) pizza sauce
32 egg roll wrappers
Oil for frying
Additional pizza sauce for dipping, warmed, optional

Steps:

  • In a large bowl, combine the cheese, sausage, pepperoni, peppers and onion. Stir in pizza sauce until combined. Place about 1/4 cup filling in the center of each egg roll wrapper. Fold bottom corner over filling; fold sides toward center over filling. Moisten remaining corner with water and roll up tightly to seal., In a Dutch oven or deep cast-iron skillet, heat 1-2 in. of oil to 375°. Fry pizza rolls until golden brown, 1-2 minutes on each side. Drain on paper towels. If desired, serve with additional pizza sauce.

16 1/3 ounces pillsbury buttermilk biscuits
30 pepperoni slices
8 ounces cheese, cubed
1 egg, beaten
2 tablespoons grated parmesan cheese
1 tablespoon italian seasoning
2 teaspoons garlic powder
marinara sauce, for dipping

Steps:

  • Preheat oven to 375 degrees. Flatten biscuits; layer a pepperoni slice, cheese square and another pepperoni slice on biscuit. Gather edges and pinch closed at top. Place rolls in a small greased pan. Brush tops with egg, sprinkle with Italian seasoning, garlic powder, and parmesan cheese. Bake for 20 minutes. Serve with warmed marinara sauce.
  • Tip: to keep the top from browning too much before baking is complete, cover with tinfoil.
  • Tip #2: If you prefer more filling and less dough in each roll, then cut each biscuit of dough in half lengthwise through the middle (like a hamburger bun) and make each roll using half a biscuit rather than an entire biscuit. The dough cuts best using a serrated knife (bread knife) when the dough has barely been pulled from the fridge and is still chilled. I prefer this way.

1 lb refrigerated bread dough (No-Knead Flatbreads - Master Recipe (Pizza, Naan, Focaccia), grapefruit size piece)
1/2 cup pizza sauce
1 1/2 cups mozzarella cheese, shredded
4 ounces pepperoni, sliced (to taste)
1/2 cup parmesan cheese, grated
1/2 cup barbecue sauce
1 cup diced chicken breast, cooked
1 cup mozzarella cheese, shredded
1/2 cup Fontina cheese, shredded
pickeled jalapeno pepper (to taste)
2 tablespoons cilantro, chopped (to taste)
1/2 cup pizza sauce
1 (8 ounce) can pineapple tidbits, drained
1 1/2 cups mozzarella cheese, shredded
4 ounces deli ham, sliced

Steps:

  • Use the refrigerated pre-mixed dough for No-Knead Flatbreads Recipe #387518.
  • Prepare 2 large baking sheet pans with parchment or Silpats, set aside.
  • Preheat oven to 400 degrees F.
  • Remove the Olive Oil Flatbread dough (Recipe #387518) from the refrigerator. Lighly dust the surface with flour and cut off a 1 pound (grapefruit size) piece.
  • With lightly floured hands quickly shape dough into a ball by streching the surface of the dough around to the bottom on all four sides, rotating the ball a quarter turn as you go.
  • On a lightly floured board, flatten the dough, with hands and rolling pin, into a 1/4 inch thick rectangle, dusting with minimal flour if necessary to keep dough from sticking to the rolling pin. If difficulty is experienced in rolling out the dough, allow it to rest for a few minutes. I've found that pulling the dough with my hands works best.
  • Spread the sauce on the dough, then cheese and top with meat, leaving some of the cheese exposed so that it can help hold the roll together as it bakes.
  • Starting with the long end roll the dough into a log.
  • NOTE: Cut only the number of pieces you want to bake. The rest can be wrapped and stored in the refrigerator for up to 5 days, or can be frozen for up to 2 weeks.
  • Using kitchen shears, cut the dough into 1/2 inch pieces.

Steps:

Pizza Dough, recipe follows
All-purpose flour, for dusting
Olive oil, for oiling dough
Kosher salt
Marinara Sauce, recipe follows
1/2 cup grated Parmesan
10 slices mozzarella cheese
2 tablespoons jarred pesto
8 slices pepperoni
1/2 cup chopped olives
1/4 cup diced green bell peppers
4 pieces string cheese
1/2 teaspoon active dry yeast
2 cups all-purpose flour
1/2 teaspoon kosher salt
Scant 1/4 cup olive oil (a little less than 1/4 cup), plus more for the bowl
Olive oil, for oiling the pan
3 to 4 cloves garlic, minced
1 small to medium onion, chopped
1/2 cup white wine (or chicken broth)
Three 15-ounce cans crushed tomatoes
Kosher salt and freshly ground black pepper
Pinch sugar
Chopped fresh parsley, as needed
Chopped fresh basil, as needed

Steps:

  • Roll out the Pizza Dough on a floured surface until it's a large rectangle about 8 inches by 12 inches. Smear with a little olive oil and sprinkle with salt. Spread the surface with about 1/2 cup of the Marinara Sauce, then sprinkle with the Parmesan. Lay the mozzarella slices over the sauce. Smear the pesto over the cheese. Lay on the pepperoni, olives and bell peppers.
  • Unwrap the string cheese and lay it in a line at the top of the dough. Roll it towards you so that the string cheese ends up in the middle of the roll of dough; pinch the seam closed. Slice into 1-inch pieces and place them in a 10-inch cast-iron skillet. Allow the rolls to rise for 20 minutes.
  • Preheat the oven to 400 degrees F.
  • Bake until the bread is golden and the fillings are bubbly, about 15 minutes. Serve immediately with warm Marinara Sauce.
  • Sprinkle the yeast over 3/4 cup warm (not lukewarm) water in a bowl and leave to sit for a bit.
  • In a mixer, add the flour and salt and, with the mixer running on low speed (with the paddle attachment), slowly pour in the olive oil and keep going until it's mixed through. Next, pour in the yeast/water mixture and mix until just combined.
  • Coat a separate mixing bowl with a light drizzle of olive oil, tip the dough in and form it into a ball. Toss to coat the dough ball in the olive oil, then cover the bowl tightly with plastic wrap and allow the dough to rise for at least 1 hour.
  • Add a tablespoon or so of olive oil to a hot pan over medium-high heat, throw in the garlic and onion and give them a stir. Add the wine (or chicken broth), whisking to deglaze the bottom of the skillet. Cook until the liquid reduces by half.
  • Add the crushed tomatoes and stir to combine. Add salt and pepper to taste and a pinch of sugar. Reduce the heat to low and simmer for 30 minutes.
  • Toward the end of the cooking process, chop up fresh parsley and basil and add it to the sauce to taste, stirring to combine.

1 teaspoon extra virgin olive oil
2 garlic cloves, minced
1/2 of a medium yellow onion, diced small
28 ounces diced tomatoes
3 ounces tomato paste
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon pepper
1 pinch red pepper flakes
salt, to taste

10 lasagna noodles, cooked and drained and rinsed with cold water
1 egg, lightly beaten
1 1/4 cups part-skim ricotta cheese
1 1/2 cups mozzarella cheese, diveded
3/4 cup grated parmesan cheese, divided
1/4 cup chopped fresh parsley
1/4 teaspoon pepper
3 ounces sliced pepperoni

Steps:

  • In a large pan over medium heat, heat the butter and olive oil until the butter is melted.
  • Add the garlic and onion and saute until tender, about 5 minutes.
  • Stir in tomatoes, tomato paste, basil, oregano, sugar, and red pepper flakes.
  • Bring the sauce to a boil and then reduce heat to low. Place a cover on the pan, tilted slightly to let some steam out.

  • Spread 1/2 cup to 1 cup pizza sauce in bottom of pan.
  • Prepare the filling by mixing beaten egg, ricotta cheese (I used cottage cheese instead), a cup of mozzarella, 1/2 c grated parmesan cheese, parsley, and pepper until well combined.
  • To prepare lasagna rolls, lay out one lasagna noodle and spread it with about 2 tablespoons of cheese filling.
  • Lay out 5 to 6 pepperoni on top of cheese filling. Roll up each noodle starting at one of the short ends.
  • Place in prepared baking dish, seam down. Repeat until all noodles have been filled and rolled. Pour 1 and 1/2 cups pizza sauce over rolls and top with 1/2 cup mozzarella cheese and 1/4 cup parmesan cheese.
  • Cover baking dish with foil and bake for 45 to 50 minutes (remove foil last 10 to 15 minutes) or until hot and cheese is melted. (I skipped the foil and found it unnecessary) Let stand 10 minutes prior to serving.

1 (10 ounce) package egg roll wrappers
1 cup marinara sauce, divided
10 ounces mini pepperoni

Steps:

  • Preheat an air fryer to 400 degrees F (200 degrees C) according to manufacturer's instructions.
  • Cut mozzarella cheese into 6-inch sticks.
  • Place 1 egg roll wrapper on a flat surface, positioned to look like a diamond. Add 1 teaspoon marinara sauce, 1 mozzarella stick, and 2 tablespoons mini pepperoni to the bottom third of the egg roll wrapper.

  • Brush some olive oil over the air fryer basket. Add egg rolls to the basket seam side-down, without letting them touch each other. Reduce the temperature to 360 degrees F (180 degrees C) and air fry for 8 minutes, flipping at the halfway point. Serve with remaining marinara sauce.

  • Preheat the oven to 400˚ F. Melt the butter with the garlic in a saucepan.

1 (13.8 ounce) package refrigerated pizza crust dough
1 1/2 cups shredded mozzarella cheese
1/2 cup mini pepperoni slices
1/2 cup diced cooked ham
1 (4 ounce) can sliced mushrooms
1 Tablespoon olive oil
1/2 teaspoon garlic powder
1 teaspoon Italian Seasoning
2 Tablespoons grated Parmesan cheese
1 1/2 cups marinara sauce (for dipping)

Steps:

  • Preheat oven to 425 degrees.
  • Unroll your pizza dough onto a lightly floured surface. Pat or roll the dough so it's about 8 x 12 inches. Cut it into 24 squares with a pizza cutter.
  • Place cheese and desired toppings on each square. (Do not add marinara sauce, it's for dipping after they are cooked)
  • After adding toppings to each dough square, carefully lift up each square and wrap the dough around the toppings.
  • Pinch to make sure each ball is sealed shut and then place them seam side down on a lightly sprayed pie pan or square pan.
  • Brush the tops of the dough balls with olive oil.
  • Sprinkle with the garlic, Italian seasoning and Parmesan cheese (I mixed all of these together and then sprinkled on top).
  • Cook for about 15-20 minutes or until golden brown on top. Keep an eye on them so they don't overcook. Serve warm with warmed marinara sauce on the side for dipping.

Place an egg roll wrapper on a work surface with a point facing you; place a piece of string cheese near the bottom corner. 1 1/2 c warm water - not hot
1 tsp salt
1 Tbsp sugar
1 Tbsp butter
3 1/2 c all purpose flour
1 pkg active dry yeast
CORN STARCH GLAZE
1/2 c cold water
1 tsp cornstarch

Steps:

  • 1. Preheat oven 375° Bake Time: approximately 20 minutes. My oven cooks hot and yours may need more or less cooking time.
  • 2. Combine the warm water, butter, salt, and sugar. Using water that is very warm will slowly melt the butter while combining. Sprinkle the yeast on top of your liquids mixture. (I own a Kitchen Aid and attach the dough hook and the batter guard.) Add your flour - I add all at once due to running my dough hook on low. Otherwise stir in the flour until it is a slightly sticky ball and knead. (With the Kitchen Aid run the dough hook adding flour until the batter no longer sticks to the bottom of the mixing bowl.)
  • 3. I usually knead the dough around 5 minutes. Well-kneaded dough should feel smooth and elastic. Press your fingertip into the dough; it should spring back. Butter a bowl, turning the dough to completely cover. Cover with a clean towel and let rise until doubled.
  • 4. Once dough is doubled remove and place on a slightly floured board. Knead in flour to feed it one more time before baking. Roll it into a a 12x15 rectangle after working additional flour into the dough.
  • 5. FRENCH BREAD: Roll up from long side and pinch the final seam together. Place seam side down on greased and cornmeal dusted baking sheet or use the Silicone Baking Mats. Cover with a clean towel or plastic wrap and let rise 45 minutes.
  • 6. SANDWICH ROLLS/BAGUETTES: Cut the rolled out dough into squares appropriate to your needs. Place on a greased baking sheet, cover with plastic wrap or a clean towel and let rise 45 minutes.
  • 7. CORNSTARCH GLAZE: NOTE: This is a typical mixture that professional bakers use to get that characteristic sheen on breads. I keep this mixture in my refrigerator to use on all the breads I bake. Save any glaze leftovers. 1/2 cup cold water 1 teaspoon cornstarch In a small saucepan, with a small whisk, stir together water and cornstarch. Heat mixture to a gentle boil. Stir, reduce heat, until mixture thickens and is translucent. Cool. Brush on loaf about 10 minutes before baking is finished and again 3 minutes before bread is completely done.
  • 8. When the bread is cooked, remove from oven and place the bread on a wire cooling rack to cool. Let baked loaf cool for 30 minutes before cutting (this is because the bread is still cooking while it is cooling). Makes 1 large loaf, 12 sandwich rolls, or 16 inch pizza crust.

MUFFIN PAN PIZZA ROLLS

I have come up with a homemade version of the pizza rolls at a local pizza restaurant. They can be filled with what ever toppings you enjoy. I used recipe #35805 in my bread machine and recipe #22280 with great results my kids loved. ***Update: Having made this recipe several more times, I have found that I get better results baking the muffins with the sauce for 10 to15 minutes before adding the cheese. This eliminates the having to cover with foil to keep the cheese from over browning. I have changed the recipe below.

1 large pizza dough
2 cups pizza sauce
2 cups mozzarella cheese, shredded
2 cups other pizza toppings (optional)

Steps:

  • Preheat oven to 375°F.
  • Grease 1 12-cup muffin tin with cooking spray. (Have another 6-cup muffin tin available. You may have enough dough to make a few more muffins.).
  • Pinch off a ball of dough slightly larger than a golf ball and flatten in the palm of your hand. Press into a muffin cup. Continue until all dough is used. The pizza dough will not stay up the sides of the cups, this is okay.
  • Put 1-2 tablespoons of sauce into each dough cup. Use the spoon to press downward into the dough to make a cup.
  • Add other toppings to each roll. (Hold off adding the cheese for now).
  • Bake muffins for 15 minutes before adding cheese.
  • Sprinkle 1-2 tablespoons of cheese on top of sauce and any other toppings.
  • Bake for 10 minutes more. Lift one roll out of cup gently to check bottom to make sure it is baked through the bottom.

  • In a large skillet, cook the beef, pepper and onion over medium heat until meat is no longer pink; drain. Add the tomato sauce, tomato paste, water, garlic, sugar, Italian seasoning and salt. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes or until heated through., Cut 1/4 in. off the top of each roll; set aside. Carefully hollow out bottom of roll, leaving a 1/4-in. shell (discard removed bread or save for another use). Fill each roll with 1/2 cup meat mixture. Sprinkle with cheeses. Replace bread tops., Place desired amount of sandwiches on a baking sheet. Bake at 350° for 10-15 minutes or until heated through. Individually wrap remaining sandwiches tightly in foil; freeze for up to 3 months., To use frozen sandwiches: Thaw in the refrigerator overnight. Remove from the refrigerator 30 minutes before baking. Place foil-wrapped sandwiches on baking sheet. Bake at 350° for 30-35 minutes or until heated through.

1 pound bulk Italian sausage
3/4 cup diced green pepper
1 garlic clove, minced
1 can (15 ounces) crushed tomatoes

1/2 teaspoon salt
1/2 teaspoon dried oregano
1/4 teaspoon sugar
1/8 teaspoon dried rosemary, crushed
Dash pepper
8 ounces cubed part-skim mozzarella cheese
13 egg roll wrappers
1 egg, lightly beaten
Oil for frying

Steps:

  • In a large skillet, cook sausage and green pepper over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in the tomatoes, tomato paste and seasonings. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. Uncover and simmer 10 minutes longer. Remove from the heat; cool for 20 minutes.
