2 slices ham steak
1 (20 ounce) can pineapple rings
¼ cup honey, or to taste

Steps:

  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Cook ham on the preheated grill for 3 minutes on one side. Flip and turn heat to low. Cover ham with pineapple slices and fill pineapple slices with honey. Turn off heat and let stand on the grill for 5 minutes.

1 cup dark brown sugar
⅔ cup prepared yellow mustard
1 ½ pounds ham steaks
1 (20 ounce) can pineapple rings in juice, sliced

Steps:

  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Mix dark brown sugar and mustard together in a bowl. Place ham on a broiling pan rack. Spoon mustard mixture over both sides of the ham.
  • Broil in the preheated oven until browned on one side, about 5 minutes. Flip, pour on pineapple juice from the can, and continue to broil for about 5 minutes more, adding pineapple rings on top in the final 2 minutes of cooking. Watch carefully as it cooks fast.

1 tablespoon whole cloves
2 bone-in fully cooked ham steaks (1/2 inch thick and 1 pound each)
1/4 cup packed brown sugar
1/2 teaspoon ground mustard

  • Preheat oven to 350°. Drain pineapple, reserving juice. Insert cloves into edges of ham steaks. Place one ham steak in a greased shallow baking pan. Spread pineapple over ham; top with the second ham steak. Pour reserved pineapple juice over ham. Combine brown sugar and mustard; sprinkle over the top. , Bake, uncovered, 40 minutes or until a thermometer reads 140°, basting occasionally with pan juices. Discard cloves.

4 tuna steaks
peanut oil or vegetable oil, for searing
salt
1/4 cup orange juice
1 tablespoon olive oil
2 teaspoons fresh thyme leaves
1 clove garlic, minced
1 teaspoon orange zest
1 teaspoon lime zest
1/2 teaspoon ground pepper
1 cup chopped fresh pineapple
1 cup chopped yellow bell pepper
1/3 cup rice vinegar
1 tablespoon minced jalapeno chile
1/2 teaspoon curry powder
1/2 teaspoon ground pepper
1 tablespoon olive oil

Steps:

  • Prepare marinade by combining marinade ingredients in shallow dish.
  • Add tuna and coat with marinade.
  • Cover and refrigerate at least 1 hr or more, turning occasionally.
  • Prepare pineapple sauce by puree in blender until smooth.
  • Add bell pepper, vinegar, jalapeno chili, curry powder and ground pepper.
  • process until smooth.
  • Gradually add olive oil.
  • Heat large skillet over high heat.
  • Add small amount of peanut oil to skillet so tuna does not stick.
  • Remove tuna from marinade, season with salt to taste.
  • Add tuna to skillet and cook until brown on each side, about 3 mins per side.
  • Spoon sauce on plate.
  • Place tuna on top of sauce.
  • Serve.

1 red onion , finely chopped
1 tbsp sunflower oil
1 red pepper , deseeded and diced
200g basmati rice
450ml chicken stock
400g can kidney bean , rinsed and drained
4 turkey steaks
2 tsp Cajun seasoning
5 140g fresh pineapple (or 220g can pineapple rings, drained)
½ green chilli , finely chopped
juice 1 lime

Steps:

  • Reserve 2 tbsp of the onion for the salsa. Heat the oil in a saucepan and cook the remaining onion and half the pepper for 4 mins or until softened and coloured. Stir in the rice, then pour in the stock. Add the kidney beans and a pinch of salt. Bring to the boil, stir once, cover the pan, then reduce the heat to a gentle simmer. Cook for 15 mins until the rice is tender and the liquid absorbed.
  • Dust the turkey steaks with the Cajun spice and griddle or fry in a non-stick pan for about 4-6 mins on each side until cooked through. Cut the pineapple into small pieces and mix together with the reserved red onion, pepper, green chilli and lime juice. Spoon some salsa over each steak and serve with the rice.

1/4 cup white vinegar
3 tablespoons brown sugar
2 tablespoons ketchup
1 tablespoon less sodium soy sauce
1 tablespoon cornstarch
2 tablespoons water
leftover ham slices

Steps:

  • Combine pineapple, vinegar, brown sugar, ketchup and soy sauce in a saucepan and heat to boiling.
  • Stir cornstarch with water. Stir into sauce and boil 1 minute.
  • Spoon over warmed slices of leftover ham. Serve extra sauce on the side.

1 dash vegetable oil (for stir frying)
1 small onion, finely chopped
1 (400 g) can pineapple chunks (and juice)
1 vegetable stock cubes or 1 teaspoon vegetable stock
125 g dry rice (I use 1 bag of Uncle Bens boil in bag rice)
1/2-1 cup frozen peas
1 red pepper, sliced
soy sauce (to flavour)
salt and pepper
1 cup water

Steps:

  • Cut ham into cubes.
  • Put oil into non stick fry pan and gently fry ham cubes and onion.
  • Add the pineapple and the juice, the stock, rice and the water.
  • Bring to boil.
  • Cover and cook for about 15 minutes or until rice is tender and most of the liquid is absorbed.
  • Add more boiling water during cooking if necessary.
  • Stir in peas, red pepper and soy sauce and season to taste.
  • Heat through and serve immediately.

2 ham steaks (1/2-inch thick)
4 tablespoons butter
1 tablespoon whole-grain mustard
3 cans (8 ounce size) pineapple chunks, reserving liquid
1/4 cup orange juice
1 tablespoon Dijon mustard
salt and freshly ground black pepper

Steps:

  • DIRECTIONS: From ham steak, remove rind and trim off all but 1/4-inch of outer fat. Cut ham into serving pieces. In a large saute pan set over moderately high heat, melt half of butter. Add ham steaks and saute for 3 minutes on each side, until steaks are lightly browned. Transfer ham steaks to plate. Blot the pineapples as dry as possible. Add remaining butter to saucepan. Add pineapple and saute until the edges begin to caramelize, about 4 to 5 minutes. Remove the pineapple and reserve. Add orange and pineapple juices to the pan and reduce by half, for about 5 to 6 minutes. Whisk in Dijon and whole-grain mustards. Transfer ham steaks back into saute pan. 1/4 c pineapple juice
1/4 c soy sauce

  • 1. Mix all ingredients in 1 cup glass measure, microwave on high 2 1/2 to 3 min. or until thickened, stirring once. Place steaks on grid over med. ash covered coals, grill, uncovered 11 to 14 min. for med. rare to med. doneness, turning occassionaly. Brush both sides with some of the glaze during last 5 min. Carve steaks, drizzle with remaining glaze.

2 tablespoons Asian fish sauce
1 talespoon soy sauce
1 tablespoon begetable oil
1 tespoon sugar
1/4 teaspoon black pepper
1 1/4 pounds tuna steaks
pineapple chile sauce (see recipe)

Steps:

  • combine fish suace through pepper in medium bowl. Stir well to dissolve sugar. Place fish steaks in bowl turning to coat well. Let marinate 20-30 minutes. turning once Cover and rfrigerate up to 1 day. While fish marinates prepare pineapple chili sauce. Grill steaks about 5 min/side or oven bake for about 15 minutes. Transfer to serving platter, add bowl of pineapple-chili sauce adn serve hot or warm.

So I came up with this recipe to give us the fresh pineapple flavor we love without the acid issues. Great made outside on the grill. Great made inside in a skillet. Just plain great.

1 fresh pineapple, as ripe as can be gotten
1/4 cup soy sauce
2 tablespoons canola oil (optional)

Steps:

  • Remove top and bottom of pineapple.
  • Peel. It is not possible to get all the eyes off without wasting a good deal of the pineapple so compromise on how many eyes you can stand to pick out at the table. Some pineapples have seeds in their eyes, just pop them out with the tip of a paring knife.
  • Slice crosswise into rounds about 3/4" thick.
  • Brush pineapple slices with soy sauce.
  • Heat grill medium hot, brush grill with oil if necessary to prevent sticking.
  • OR, heat lightly-greased skillet medium hot.
  • Cook pineapple steaks about 5 minutes on each side or until lightly browned, brushing with soy sauce before turning.
  • Some people eat the core, some do not.
