SAUSAGES WITH TANGY, GINGERY PINEAPPLE

Debate ham and pineapple pizza all you want. There's no denying the goodness of caramelized pineapple paired with crisp-edged sausages. In this easy weeknight meal, a tangy lime- and ginger-spiked dressing cuts the richness of the meat and tempers the sweetness of the fruit. Serve this with some crusty bread to mop up the drippings.

2 cups pineapple chunks, in 1-inch pieces
2 tablespoons dark brown sugar
2 tablespoons extra-virgin olive oil
4 teaspoons finely grated fresh ginger (from 1 1/2-inch piece)
4 teaspoons finely grated lime zest (from 1 to 2 limes)
Kosher salt and black pepper
1/2 teaspoon ground allspice
1/8 teaspoon ground cayenne
1 large red onion, halved and thinly sliced into half-moons
1 pound sweet or spicy Italian sausage
1/2 cup cilantro leaves and tender stems, roughly chopped
1 tablespoon lime juice, plus more to taste
1 small garlic clove, finely grated or minced
1/2 teaspoon fresh ginger, finely grated or minced
Kosher salt and black pepper
3 tablespoons extra-virgin olive oil

Steps:

  • Heat oven to 450 degrees and, if you like, line a sheet pan with parchment paper.
  • In a medium bowl, toss together pineapple, sugar, oil, ginger, lime zest, 1 teaspoon salt, 1/2 teaspoon pepper, allspice and cayenne until well combined. Stir in three-quarters of the onions. (Reserve remaining onions for serving.)
  • Spread pineapple mixture onto the sheet pan in one layer. Nestle sausages among the pineapple mixture. Roast until fruit is caramelized and sausages are browned and cooked through, about 30 minutes. Halfway through baking, flip the sausages and toss the pineapple mixture.
  • Meanwhile, make the vinaigrette: In a small bowl, combine lime juice, garlic, ginger and a big pinch each of salt and pepper. Slowly whisk in oil. Taste and season with more salt and lime juice if you'd like.
  • Pull the pan out of the oven, drizzle vinaigrette over sausages and pineapple, and toss gently to combine. Garnish with reserved onion and cilantro, and serve.

This recipe came from imagination... I love to create my own new recipes & test them out on my family and friends and sometimes they are just so so but this one is definitely "a keeper." (everyone came back for 2nds & 3rds!)

1 1/2 - 2 pound(s) 1-1/2 to 2 lbs. sweet sausage - thinly sliced
1 large red onion - sliced
2 clove(s) garlic - sliced lengthwise
1/2 medium pineapple (i used fresh) - sliced & cut into 1/4 pieces
1 jar(s) 24 oz. mario batali tomato basil pasta sauce
- water, as needed

Steps:

  • In large saucepan (I use an electric skillet) fry sausage & onions until browned stirring frequently add sliced garlic to pan, stir
  • add water as needed to keep from sticking while stirring add pineapple pieces, stir until browning on both sides continue adding some water to moisten while scraping the bottom pan sediments stir in sauce
  • *Make pasta as directed -- I used Barilla tubini & pipette macaroni (half of each) and added to the sauce when done... Monja - Salude' - bon apetit' -- Enjoy!

I found a recipe for a sausage kebab that I modified into a stir fry. It turned out really tasty. I hope you'll give it a try! The chutney & the pinepple give it a nice flavor. Although sausage is not usually a favorite of mine, I love this dish.

1 tablespoon olive oil
1 small onion, cut into strips
1 red pepper, cut into strips (or similar amount of mixed color baby peppers, if available)
1 clove garlic, minced
13 ounces cooked sausage, sliced about 3/4 inch thick (I used smoked chicken & mango from aidells)
1 (13 ounce) can pineapple chunks in juice
1/3 cup mango chutney, any large pieces chopped

Steps:

  • Saute onion for 2-3 minutes, then add peppers and garlic.
  • Cook, stirring frequently, another 2-3 minutes, then add sausage.
  • Stir fry on medium heat about 5 minutes, till sausage is browned, then add pineapple & cook another 2-3 minutes till sauce bubbles and reduces.
  • Stir in mango chutney and cook another minute.
  • Serve over rice.
  • Or you could put the vegetables, pineapple& sausage on skewers, brush with the chutney& broil or grill.
  • Note: I have also tried this with a chicken & apple sausage with good results.

1 pound smoked sausage, cut into 1/2-inch slices
1 medium onion, chopped
1 medium green pepper, cut into 1-inch chunks
1 can (14-1/2 ounces) diced tomatoes, undrained
1/2 cup beef broth
1 tablespoon brown sugar
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1 can (20 ounces) unsweetened pineapple chunks
2 tablespoons cornstarch
Hot cooked rice

Steps:

  • In a large skillet, cook the sausage, onion and green pepper until the vegetables are tender., Add the tomatoes, broth, brown sugar, garlic powder and pepper. Drain pineapple, reserving juice. Stir pineapple into sausage mixture. Bring to a boil; cook, uncovered, for 5 minutes., Combine cornstarch and reserved pineapple juice until smooth; gradually add to sausage mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with rice.
