PINEAPPLE GLAZED PORK RIBS

2 pounds baby back pork ribs
2 tablespoons toasted sesame oil
1/4 cup Chinese five-spice powder
Kosher salt and freshly ground black pepper
1 tablespoon toasted sesame seeds, for garnish
Chopped fresh cilantro leaves, for garnish
2 tablespoons unsalted butter
1 whole fresh pineapple, peeled and cubed
1 cup low-sodium soy sauce
1/2 cup dark rum
1/4 cup hoisin sauce
1/4 cup ketchup
3 tablespoons rice vinegar
1/4 cup brown sugar
1 fresh red chile, sliced thin
2 garlic cloves, smashed
1 (2-inch) piece fresh ginger, whacked open with the flat side of a knife

Steps:

  • Preheat the oven to 300 degrees F.
  • Rub the ribs all over with the sesame oil; season generously with five-spice powder, salt, and pepper. Arrange the ribs in a single layer in a shallow roasting pan and roast for 2 to 2 1/2 hours.
  • To prepare the pineapple glaze: In a saucepan over medium heat melt the butter and add the pineapple chunks; saute for 3 minutes. Add the soy sauce, rum, hoisin sauce, ketchup, vinegar, brown sugar, chile, garlic, and ginger. Bring to a slow simmer and cook, stirring, until thickened, about 20 minutes. Pull out the ginger pieces. Pour the glaze into a blender and puree until smooth.
  • In the last 30 minutes of cooking, baste the ribs with some of the glaze. When they are done, the pork will pull away from the bone and you will see about 1/2-inch of bone showing. When you are ready to eat, baste the ribs with more glaze and stick them under the broiler for 5 to 8 minutes to give the ribs a nice crust. (Watch them carefully as they can easily burn.) Separate the ribs with a cleaver or sharp knife, pile them onto a platter, and pour on the remaining sauce. Sprinkle with sesame seeds and chopped cilantro before serving.

sticky pineapple pork ribs
3 racks pork spareribs
marinade
3 cups pineapple juice
1/3 cup brown sugar
1/4 cup honey, warmed
2 tablespoons soy sauce
2 garlic cloves, chopped
1/2 teaspoon cracked pepper
3/4 cup good-quality barbecue sauce, plus more for serving

Steps:

  • Lay each rack on a chopping board upside down. Using a very sharp paring knife, carefully remove the membrane that runs underneath. Using a tea towel, hold one corner of the ribs firmly, and pull the membrane sheet off in one long strip (hopefully!).
  • Place the rib racks in a large non-metallic dish - you may need to split them into two dishes.
  • Whisk all marinade ingredients together and when the marinade is completely cool, pour over the pork ribs.
  • Cover the ribs tightly in cling film and let marinate for a minimum of 4 hours or overnight.
  • If using a charcoal barbecue, organize it for indirect grilling - two small piles of hot charcoal on either side of the barbecue with a drip pan made from aluminum foil in the centre.
  • If you are using a gas grill, set the grill on medium heat.
  • Place the ribs in the middle of the barbecue, away from direct heat.
  • Close the lid of the barbecue and leave the vents open for 1 ½ hours. Turn the ribs after 40 minutes. Baste them every 20 minutes with the remaining marinade.
  • The ribs are ready when the meat has shrunk back away from the end of the bones. Slice between the bones and serve slathered in extra barbecue sauce.

Meat is browned with fat drained. Ribs are cut in 2 or 3 rib pieces The sauce is poured over and the meat is baked . Everything can be made ahead of time, refrigerated and then baked. I like to use pork chops but any type of chop can be used, venison, elk, buffalo or beef round steak cut in serving pieces. Grilled pineapple can be served as a side dish with rice or noodles or mashed potatoes. The recipe started from using pineapple juice thickened with cornstarch and soaked dried apricots; years ago there was not combination preserves to the present recipe posted.Photos show pork chops, steak and maui maui fish. It is delicious with all meats.

2 lbs pork chops (approximately 6 chops) or 2 lbs pork ribs, cut in serving sizes
1 large white onion, sliced
1/4 cup sugar
1 teaspoon salt
1 tablespoon paprika
1 teaspoon celery salt
2 tablespoons lemon juice
1 teaspoon dry mustard
1 cup apricot pineapple preserves
1/2 cup barbecue sauce
2 drops hot sauce (optional)
1/4 teaspoon nutmeg
3 tablespoons vegetable oil

Steps:

  • Mix the rub in a small bowl.
  • Rub it in the meat on both sides and set aside.
  • If the meat used does not have fat, heat two tablespoons of oil in a large fry pan.
  • Lightly brown the meat.
  • Place in a greased overproof dish or pan with lid.
  • Saute the white sliced onions and set aside.
  • Mix the sauce ingredients and add the one remaining tblsp of oil in a saucepan and heat until the sauce starts to simmer. Stir, turn low and taste. Add more hot sauce if desired.
  • Preheat oven 350*.
  • Pour sauce over chops or ribs, turning them to cover with sauce.
  • Pour onions over the meat.
  • Cover.
  • You may use foil for a cover if desired.
  • Cook for 1 hour.

The sauce in this recipe has a real bite... and we loved it!! NOTE: 2 1/2 hrs was not quite enough cooking time for our ribs, so we continued to cook on low for another 4 hours. Keep an eye on your ribs, as cooking time really can vary this much depending on the meat.

4 c ketchup
1 canned chipolte pepper in adobe sauce
15 oz crushed pineapple with juice
2 Tbsp mustard
4 Tbsp brown sugar
8 dash(es) tabasco sauce
2 c water
2 Tbsp worcestershire sauce
2 Tbsp liquid smoke
2 large onions chopped
3-4 lb pork ribs
2 Tbsp oil

Steps:

  • 1. Combine first 9 ingredients in blender and blend until smooth set aside.
  • 2. Chop onions and set aside.
  • 3. Heat oil in skillet and brown ribs until browned on all sides may salt and pepper if desired. When brown place in large roaster and cover with onions. Pour sauce over the top, cook covered at 350 degrees for 2 1/2 hours turning every 30 minutes. Uncover and cook uncovered for the last 30 minutes turning at 15 minutes.

Ingredients:
1-2 pounds of pork ribs. Go with 1 pound if you have a smaller crock pot or slow cooker
1 medium fresh pineapple
1 tsp paprika
2 tbsp sugar-free dijon mustard

Steps:

  • Directions: Slice ribs apart and set aside. Cut off the top of your pineapple Cut the entire pineapple in half lengthwise. Use a paring knife to slice as close to the rhine as you can to slice out as much pineapple as you can. Save the remaining two "boat" halves. Cut the pineapple pieces into 1″ cubes. Mix the dijon mustard with the paprika and rub all over the ribs. Place the ribs into the crock pot first, and then dump the pineapple cubes on top of them. Cook on low for 6-8 hours.
