1 box Betty Crocker™ white angel food cake mix
1 can (8 oz) unsweetened crushed pineapple
8 oz Cool Whip fat-free frozen whipped topping, thawed
1/2 cup (2 oz) toasted coconut

Steps:

  • Heat oven to 350°F. Spray a 13x9-inch baking dish with cooking spray.
  • In large bowl, stir together cake mix and pineapple. Pour into prepared baking dish.
  • Bake 20 minutes or until toothpick inserted in center comes out almost clean. Cool completely on a rack.
  • Spread whipped topping over cake. Sprinkle with coconut. Cover and refrigerate until ready to serve.

This Weight Watchers Pina Cola Cake Angel Food Cake is made with a cake mix and only 4 ingredients is only 2 WW points on the blue plan (without artificial sweetener) and ideal for any occasion. It makes a great celebration cake, a Sunday night dinner cake and it's perfect for bringing along to a potluck or for a summer backyard BBQ!

1 box angel food cake mix (* I use regular but you can use sugar-free to bring down the points)
388 ml -can of crushed pineapple w/the juice
1/2 tsp coconut extract
3 tbsp light coconut milk
pineapple rings
maraschino cherries
unsweetened coconut flakes

Steps:

  • Preheat the oven to 350 degrees F/ 175 degrees C and spray an angel food cake pan with non-stick cooking spray or Wilton Cake Release (https://amzn.to/36l0FEO -affiliate link)
  • Open the can of crushed pineapple and remove 2 tbsp of pineapple liquid. Discard.
  • In a mixing bowl, mix together the Angel Food cake mix (just the mix nothing else!!) and the can of crushed pineapple, including the remaining juice, with 3 tbsp of light coconut milk and the coconut extract.
  • This mixture will become frothy.
  • Pour into the greased angel food cake pan and bake for 30 minutes or until cake tester comes out clean.
  • Remove from oven and place on a pot holder and cool for 5 minutes in the pan.
  • Run spatula along edges and flip onto a cooling rack. * I put the rack on top to flip, then I tap the bottom of the pan with a spatula. ** Don't worry if a little piece of the cake sticks to the bottom of the pan, you can remove it and place it on the cake and it will mostly be covered by garnish.
  • Cool for another 5 minutes.
  • Once it's completely cooled, trim off any brown, if desired. Alternatively, you can just leave it.
  • Then flip it back over onto a serving plate, so the smooth/smaller side is facing up.

1 cup cake flour (Note 1)
1 ½ cups (300g) caster sugar (Note 2)
12 egg whites (Note 3)
1 teaspoon cream of tartar (Note 4)
½ teaspoon salt
2 teaspoons pure vanilla extract
½ cup heavy whipping cream
2-4 tablespoons sugar
1 can (8oz) crushed pineapple
8 oz (225g) cream cheese (Note 5)
¼ cup (55g) unsalted butter
2 cups powdered sugar
1 tablespoon pineapple juice (from the can)
2 teaspoons coconut extract
2 cups sweetened coconut flakes
Maraschino cherries (optional)

Steps:

  • Preheat the oven to 325°F (160°C).
  • Sift together cake flour and ¾ cup of sugar.
  • In a large mixing bowl with whisk attachment, beat the egg whites until foamy on a low speed.
  • Add cream of tartar and salt and continue to beat, gradually increasing the speed to high.
  • When the egg whites get whiter, add remaining ¾ cup of sugar one tablespoon at a time.
  • Add pure vanilla extract and continue to beat on high speed until hard peaks form.
  • Transfer the whipped egg whites into a large bowl.
  • Add flour/sugar mixture and carefully mix everything together. Be careful not to deflate the batter too much.
  • Now transfer the batter to ungreased angel food cake pan. Even out the surface. Run a butter knife through the batter to remove any air bubbles.
  • Bake for about 40-45 minutes. It's ready if the inserted wooden stick comes out clean.
  • Cool the cake completely in the pan upside down for 90-120 minutes. This will make sure the cake stays soft and fluffy while cooling.
  • Whisk the heavy cream with sugar until hard peaks form. (Adjust the sugar to your taste.)
  • Drain the pineapple, reserving the juice for later. Carefully fold in the crushed pineapple into the whipped cream. Refrigerate until ready to use.
  • In a mixing bowl with paddle attachment beat cream cheese and butter on medium high speed.
  • Add powdered sugar, pineapple juice and coconut extract. Continue to beat until nice and smooth. Refrigerate until ready to use.
  • Spread the coconut flakes evenly on a cookie sheet. Bake it for 5-8 minutes at 350°F (177°C), or until nice and golden, stirring every few minutes.
  • Cut the cooled cake horizontally and remove the top layer. Using a small knife, cut out a tunnel in the center of the bottom layer.
  • Evenly soak the cake with a little bit of reserved pineapple juice (mix with rum, if desired).
  • Fill the tunnel with pineapple whipped cream. Place the top layer and frost with cream cheese frosting. Then cover with toasted coconut flakes.
  • If desired, pipe cream cheese frosting on the top and garnish with maraschino cherries.

1 1/2 cups cake flour
1/2 teaspoon salt
12 egg whites, at room temperature
1 teaspoon cream of tartar
1 1/2 cups granulated sugar
1 tablespoon coconut extract
1 cup confectioners' sugar
2 tablespoons confectioners' sugar
1 tablespoon pineapple juice
1 teaspoon rum extract (or vanilla extract if you don't have rum extract)
1/4 cup unsweetened coconut, shredded, toasted

Steps:

  • Place an oven rack in the lower third of the oven; preheat the oven to 375 degrees.
  • Sift the flour and salt in a bowl. With an electric mixer on medium speed, beat the egg whites and cream of tartar until soft peaks form. Beat in the granulated sugar, 2 tablespoons at a time, until stiff peaks form. Beat in the coconut extract.
  • Sift one third of the flour mixture over the egg-white mixture and, with a large rubber spatula, gently fold in just until blended. Repeat with the remaining flour mixture, one third at a time, being careful not to overmix the batter.
  • Scrape the batter into an angel food cake pan; spread evenly. Immediately place in the oven and bake until the cake springs back when touched lightly, 35-40 minutes. Invert the pan on the neck of a funnel or bottle and let cool completely. To loosen, run a thin-bladed knife around the sides of the pan and around the center tube. Unmold the cake on a serving plate. If making ahead, wrap and let stand at room temperature overnight.
  • To make the glaze: whisk the confectioners sugar, pineapple juice and rum extract in a bowl until smooth. Drizzle evenly over the top of the cake and sprinkle with the shredded coconut.

Basic Vanilla Cake, baked and cooled, recipe follows
1/4 cup pineapple juice
1 1/4 cups chopped dried pineapple
1/2 cup pineapple juice
1/4 cup cream of coconut
2 1/2 sticks unsalted butter, at room temperature
Pinch of salt
2 1/4 cups confectioners' sugar
1/3 cup cream of coconut
1/2 cup coconut flakes, toasted
1/4 cup chopped dried pineapple
2 sticks unsalted butter, at room temperature, plus more for the pans
3 cups all-purpose flour, plus more for the pans
1 tablespoon baking powder
1/2 teaspoon salt
1 1/2 cups sugar
4 large eggs, at room temperature
1 tablespoon vanilla extract
3/4 cup heavy cream

Steps:

  • Prepare the cake: Poke holes all over the tops of the 2 cake layers using a toothpick. Brush the cakes with the pineapple juice, letting it soak into the holes; set aside.
  • Make the filling: Bring the dried pineapple, pineapple juice, cream of coconut and 1/2 cup water to a simmer in a medium saucepan over medium heat. Cook, stirring occasionally, until the dried pineapple is soft and the liquid is reduced to a thick syrup, about 20 minutes. Let cool, then mash with a potato masher to make a chunky jam.
  • Make the frosting: Beat the butter and salt in a large bowl with a mixer on medium speed until smooth and fluffy, 1 to 2 minutes. Gradually beat in the confectioners' sugar until smooth. Add the cream of coconut, increase the mixer speed to medium high and beat until thick, 2 to 3 more minutes. Assemble the cake: Place 1 cake layer on a platter; spread the pineapple filling on top, stopping about 1/2 inch from the edge. Top with the second cake layer and press down gently. Cover the whole cake with the coconut frosting. Top with the toasted coconut and dried pineapple.
  • Preheat the oven to 350 degrees F. Butter two 9-inch-round cake pans and line the bottoms with parchment paper; butter the parchment and dust the pans with flour, tapping out the excess.
  • Whisk 3 cups flour, the baking powder and salt in a bowl until combined. Beat 2 sticks butter and the sugar in a large bowl with a mixer on medium-high speed until light and fluffy, about 3 minutes. Reduce the mixer speed to medium; beat in the eggs, one at a time, scraping down the bowl as needed. Beat in the vanilla. (The mixture may look separated at this point.)
  • Mix 1/2 cup water with the cream in a liquid measuring cup or bowl. Beat the flour mixture into the butter mixture in 3 batches, alternating with the cream mixture, beginning and ending with flour, until just smooth.
  • Divide the batter between the prepared pans. Bake until the cakes are lightly golden on top and the centers spring back when pressed, 25 to 30 minutes. Transfer to racks and let cool 10 minutes, then run a knife around the edge of the pans and turn the cakes out onto the racks to cool completely. Remove the parchment. Trim the tops of the cakes with a long serrated knife to make them level, if desired.

This cake is so light & moist and has so much flavor. It's really delightful. I got it from a cookbook back in 1985 that was comprised of everybodies favorites. This was my mom's all time favorite cake. You may have trouble finding coconut cream pudding, so you can sub with vanilla pudding.

1/3 cup rum
1 (9 ounce) container Cool Whip
1 cup flaked coconut

  • Beat 4 minutes at med.

1 cup water
3 large egg whites
⅓ cup vegetable oil
1 (10 ounce) can pina colada mix
1 (14 ounce) can sweetened condensed milk
1 (12 ounce) container frozen whipped topping, thawed
½ cup sweetened flaked coconut

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking pan with cooking spray.
  • Blend cake mix, water, egg whites, and oil in a bowl using an electric mixer until moistened. Pour batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, 23 to 28 minutes.
