This simple Summer salsa is a hybrid of flavors, combining everything you love about pico de gallo & a savory corn salsa into one delicious dip.

6 large Roma tomatoes
1 (15.5 ounccan corn (drained)
½ large red onion (diced)
¼ cup chopped cilantro (about ½ a bunch with large stems removed)
1 tablespoon lemon juice
1 teaspoon salt
½ teaspoon pepper

Steps:

  • Mix all ingredients in a large bowl. Let chill in the refrigerator for 2-3 hours before serving to allow flavors to meld together.

½ red onion, minced
3 tablespoons chopped fresh cilantro
½ jalapeno pepper, seeded and minced
½ lime, juiced
1 clove garlic, minced
1 pinch garlic powder
1 pinch ground cumin, or to taste
salt and ground black pepper to taste
