Steps:
- Using a pestle and mortar, combine the basil, cheeses, pine nuts, garlic, and salt and grind until a paste is formed. Add the olive oil slowly and mix with the mashed basil mixture until well combined.
- Prepare pasta in boiling water and drain. Using a hot skillet, place pasta in skillet and add the pesto to the warm pasta. Stir the pesto into the pasta and serve.
SPICY PASTA WITH TILAPIA

Steps:
- Toss the tilapia, 1 tablespoon olive oil, 1 teaspoon of the garlic and 1/4 teaspoon red pepper flakes in a medium bowl. Cover and refrigerate.
- Heat the remaining 1 tablespoon olive oil in a large skillet over medium heat. Add the remaining garlic and 1/4 to 1/2 teaspoon red pepper flakes and cook, stirring, until the garlic starts to soften, about 30 seconds. Add the wine and simmer until reduced by half, about 3 minutes. Add the tomatoes, 1/4 cup basil and 1/2 cup water. Bring to a boil and cook, stirring occasionally, until the sauce is slightly thickened, about 12 minutes.
- Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook as the label directs.
- When the pasta is almost done, add the tilapia to the skillet with the tomato sauce and simmer, stirring gently, until just cooked through, about 3 minutes. Stir in the parsley and the remaining 1/4 cup basil; season with salt. Drain the pasta and add it to the sauce. Divide among bowls and top with more basil.

TILAPIA WITH ROASTED TOMATO & PESTO SAUCE
I came across this recipe for Tilapia with Pesto and Oven Roasted Tomatoes a while ago an I thought that it sounded nice and fresh and summery. I have made basil pesto many times but I have pretty much only used it with pasta. I really liked the idea of using it in a new way. Add the lemon to the pesto sounded like a good way to brighten it up. To top it all off, some roasted tomatoes which are one of my favorites! I really liked the choice of serving the tilapia with quinoa and asparagus. I cooked the quinoa in chicken stock and lemon juice to add a bit of flavor to it. The meal came together easily and it was really good! The fish was super moist and along with the lemon, pesto and roasted tomatoes it was really tasty. The quinoa helped soak up the extra juices from the fish and roasted tomatoes infusing it with flavor. I enjoyed using the pesto in the dish and I can't wait to try using pesto in other new ways.

Steps:
- Toss the tomatoes and garlic in the olive oil, salt and pepper.
- Roast in a preheated 425°F oven for 10 minutes.
- Mix the lemon juice into the pesto.
- Season the fish with salt and pepper.
- Spread the pesto onto the fish.
- Chop the lemon rinds into slices.
- Add the lemon slices to the tomatoes in the pan and set the fish on top.
- Bake until the fish is white and flaky, about 10 minutes.

PESTO TILAPIA
Simple, fast and SO delicious. This is my favorite fish recipe and I always get requests for the recipe!

Steps:
- Preheat oven to 350 degrees.
- Place foil on a cookie sheet. Place fish on the foil and season to taste with salt and pepper.
- Top with pesto, tomatoes and then cheese (in order).
- Bake for 12-15 minutes or until fish flakes with fork.
- *Note: I don't care for pesto except in this recipe. To prevent wasting the rest of the pesto in the jar, I make one recipe for dinner and freeze the ingredients to have another day. Just place each of the ingredients (except salt & pepper) in its own quart-size freezer bag, then place all in a gallon-size freezer bag along with directions and freeze. When ready to make, just thaw completely and follow the above directions to prepare.
PESTO TILAPIA
Steps:
- pour 1-2 tablespoons white wine in a microwave safe dish. Place tilapia filets in. Spread each filet with approximately 1 tablespoon pesto. (I use homemade but could use store bought) Cover dish with cling film and microwave on high for 6-8 minutes, depending on thickness of fish. Serve with salad, veggies (steamed squash with onion or asparagus goes nicely) rice and wine. Yumm
PAN SEARED LEMON TILAPIA WITH PARMESAN PASTA
Steps:
- Bring a saucepan of lightly salted water to a boil over medium heat, stir in the macaroni, and return to a boil. Cook the macaroni uncovered, stirring occasionally, until it is cooked through but still firm to the bite, about 8 minutes. Drain well.
- Meanwhile, heat 2 tablespoons of olive oil in a skillet over medium heat. Sprinkle both sides of the tilapia fillets with lemon juice, oregano, basil, cilantro, salt, and pepper, and lay the fillets in the heated skillet, making sure they don't touch. Sear the fillets for 2 to 4 minutes on each side, until the fish is golden brown on the outside, and opaque and flaky inside.
- Return the hot, cooked macaroni to the saucepan, and stir in 1 tablespoon of olive oil to coat the pasta. Sprinkle on the Parmesan cheese, stir to mix, and stir in 1 teaspoon of lemon juice, the garlic powder, basil, oregano, cilantro, salt, and pepper. Divide the pasta between two plates, and top each with a tilapia fillet.
