Sheet pan pesto salmon with tomatoes is perfect for fast, healthy dinners. The salmon is tender and flaky and the pesto makes it taste fresh!

4 (6-ounce) salmon fillets (skin on)
3/4 teaspoon kosher salt (divided, plus additional for serving)
1/2 teaspoon ground black pepper (divided)
6 tablespoons DeLallo Simply Pesto Traditional Basil (divided)
2 pints cherry or grape tomatoes (left whole)
1 small red onion (thinly sliced)
Squeeze of fresh lemon juice (for serving)
Chopped fresh basil (optional for serving)

Steps:

  • Place a rack in the center of your oven and preheat the oven to 400 degrees F. Generously coat a large rimmed baking sheet with nonstick spray.
  • Place the cherry tomatoes and red onion in a large bowl. Add 2 tablespoons pesto, 1/4 teaspoon kosher salt, and ¼ teaspoon black pepper. Toss to coat, then spread into a single layer on the prepared baking sheet.
  • Bake the tomatoes and onion for 10 minutes, then remove from the oven and with a spatula, stir them around a little to promote even cooking, then return to the oven for 10 additional minutes.
  • Meanwhile, pat the salmon fillets dry. Sprinkle with ½ teaspoon salt and 1/4 teaspoon black pepper. Spread 1 tablespoon of the remaining pesto over each fillet.
  • Rub the pesto on with your fingers or the back of a small spoon as needed. Make sure each fillet is completely covered in pesto.
  • Remove the sheet pan from the oven and move the tomatoes and onions to the outsides to make space for the salmon in the center. Arrange the salmon fillets down the center of the baking sheet, skin-side down.
  • Return the pan to the oven and bake the pesto salmon until the fish flakes easily with a fork and reaches an internal temperature of 145 degrees F, about 16 to 20 minutes.*
  • Sprinkle the salmon with a pinch of additional kosher salt and squeeze lemon over the top. Top with fresh basil as desired. Enjoy!

Homemade or storebought pesto can be used in this 30-minute recipe that's perfect for meatless Monday (or any day for that matter). Just scrape away the gills of the mushroom with a spoon, toss the caps with a little olive oil, salt and pepper and roast gill-side down for about 10 minutes. Remove from the oven, fill with pesto and pop them back into the oven for about 10 more minutes. Serve with a pile of rice or a tangle of noodles slicked with butter. 8 medium (roasting size) portobellos
1 tablespoon extra virgin olive oil

Steps:

  • Preheat the oven to 400 degrees Fahrenheit. Remove the stems of the mushrooms, and carefully scrape away the gills using a spoon. Toss with the olive oil and season with salt and pepper. Place, rounded side down, on a lightly oiled baking sheet. Place in the oven and roast for 8 to 10 minutes, until the mushrooms are beginning to soften and throw off liquid. Remove from the heat and fill with the pesto. Return to the oven and continue to roast until thoroughly softened, about 10 more minutes.

finely grated zest 1 lemon
10 green olives , pitted and roughly chopped
85g fresh breadcrumb
4 white fish fillets, such as cod or haddock

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Mix the pesto, lemon zest and olives together, then stir in the breadcrumbs.
  • Lay the fish fillets on a baking tray, skinside down, then press the crumbs over the surface of each piece. Bake in the oven for 10-12 mins until the fish is cooked through and the crust is crisp and brown.

500 g cod fish fillets (defrost when using frozen fish)
4 tablespoons fresh basil leaves
40 g grated parmesan cheese
2 garlic cloves
3 tablespoons olive oil
40 g walnuts
1 lemon grated plus juice
25 g butter
salt and pepper

Steps:

  • 1. Season the cod with salt and pepper.2. Place the basil, parmesan, walnuts, garlic, grated lemon plus lemon juice and oil in a food processor and process until finely chopped.
  • 3. Spread the marinade over each piece of the fish. Cover and chill for a minimum of 2 hours.
  • (I always leave them overnight in the fridge).
  • 4. Place fish on to a separate tinfoil squares. Cut the butter into small cubes and place over the fish.
  • 5. Loosely fold the foil over the fillets to enclose the fish and to make a parcel.
  • 6. Cook over medium-high heat for about 10-15 minutes.

2 (2-inch thick) tuna steaks (about 1 pound each)
Kosher salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
1 garlic clove, peeled
2 cups fresh basil leaves
1/4 cup toasted pine nuts
Salt and freshly ground black pepper
1/2 cup - 3/4 cup extra-virgin olive oil
1/2 cup grated Parmesan
2 tablespoons lemon juice

Steps:

  • Preheat grill to 400 degrees F.
  • Wash and pat dry the tuna steaks. Season with salt and pepper and brush both sides with olive oil. Place tuna on hot grill and sear each side for 2 minutes for rare. If you prefer well done, cook the tuna an additional 2 to 3 minutes per side. Remove from skillet and let it rest.
  • Into the bowl of a food processor, add the garlic, basil leaves, pine nuts, salt, and pepper. Pulse until finely chopped. With the blender still running, slowly pour 1/2 cup of olive oil. Check for a thick, yet smooth consistency, adding more oil if necessary. Transfer to a bowl and stir in 1/2 cup Parmesan.
  • Slice the tuna across the grain and on a bias into 1/2-inch thick slices. Place the slices on a serving plate and drizzle with lemon juice. Sauce tuna with pesto.

1 tablespoon olive oil
pepper & salt
1 bunch fresh basil
2 garlic cloves
1 tablespoon pine nuts
1 tablespoon grated Parmesan cheese

  • Heat the Philips Airfryer to 180C.

2 teaspoons minced gingerroot
2 cloves garlic, minced
3 tablespoons fresh lime juice
2 tablespoons olive oil
2 tablespoons minced thyme
Salt and pepper
4 swordfish steaks, (about 6 ounces each and 1-inch thick)
1/3 cup olive oil
1/2 cup freshly grated Parmesan cheese
1/3 cup pine nuts
Salt and freshly grated black pepper
2 cups coarsely chopped fresh basil leaves

Steps:

  • In a bowl combine the gingerroot, garlic, lime juice, oil, thyme, salt and pepper. Arrange the swordfish steaks in a shallow glass baking dish and spoon the marinade over them. Let the fish marinate, covered and chilled, turning once, for an hour. Meanwhile, make the pesto. In a food processor combine all the ingredients and transfer to a bowl.
  • Place swordfish steaks on your grill. Cook the steaks 4 inches above the coals for 3 to 4 minutes on each side, or until firm to the touch. Alternatively, broil them under a preheated broiler 4 inches from the heat for 3 to 4 minutes on each side. Serve with pesto.
