1 1/2 pounds medium shrimp, deveined (tail on or peeled)
3/4 teaspoon kosher salt
3/4 teaspoon smoked paprika (or substitute standard paprika)
3/4 teaspoon garlic powder
3/4 teaspoon onion powder
3/4 teaspoon cumin
3 tablespoons butter or olive oil
3 lemon wedges
Fresh cilantro or parsley, for garnish

Steps:

  • Thaw the shrimp, if frozen. Pat the shrimp dry. In a medium bowl, mix the shrimp with the salt, smoked paprika, garlic powder, onion powder, and cumin.
  • In a large skillet, heat the butter on medium high heat. Add the shrimp and cook for 1 to 2 minutes per side until just opaque and cooked through, turning them with tongs.
  • Spritz with juice of the lemon wedges and serve immediately.

This easy garlic butter shrimp with lemon and wine is cooked in a skillet in just 20 minutes. Great with pasta, baguette, grits, or rice!

1 pound uncooked large shrimp (peeled and deveined )
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/8 teaspoon cayenne pepper
3 tablespoons unsalted butter (divided)
1 small shallot (minced)
1/2 cup dry white wine (or low-sodium chicken stock or broth)
4 cloves garlic (minced)
1 small lemon
1 tablespoon chopped fresh rosemary or thyme (optional but definitely worthwhile!)
1/4 cup chopped fresh parsley
cooked rice, (or pasta, grits, or toasted bread (for serving))

Steps:

  • Pat the shrimp dry with paper towels and place in a large bowl.
  • Sprinkle with salt, black pepper, and cayenne pepper. Toss to coat.
  • Heat 2 tablespoons of butter in a large skillet over medium heat until it melts. Add the shallot and let cook for 1 to 2 minutes, until it just begins to soften. Add the shrimp in a single layer and let cook undisturbed for 1 minute. With tongs or a wide spatula, turn over the shrimp.
  • Add the wine and garlic. Cook until the shrimp are no longer translucent and the wine has reduced by half, about 2 to 3 minutes more.
  • Remove the skillet from the heat. Stir in the remaining 1 tablespoon of butter. Zest the lemon directly over the skillet, then cut the lemon in half. Juice half of the lemon over the top and slice the other half into wedges for serving. Add the rosemary and parsley, then toss to combine. Serve immediately with lemon wedges.

3 tablespoons butter, softened
1 medium garlic clove, minced
1 tablespoon lemon juice
2 tablespoons fresh parsley leaves, chopped
1/8 teaspoon salt
2 tablespoons vegetable oil
1 1/2 lbs shrimp, peeled and deveined (21/25 count)
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon sugar

Steps:

  • Beat butter with a fork in a small bowl until light and fluffy. Stir in garlic, lemon juice, parsley and 1/8 tsp salt until combined. Set aside.
  • Heat 1 tbs oil in a 12-inch skillet over high heat until smoking. Meanwhile toss shrimp, salt, pepper and sugar in a medium bowl. Add half of shrimp to pan in a single layer and cook until spotty brown and edges turn pink, about 1 minute. Remove pan from heat; using tongs, flip each shrimp and let stand until all but very center is opaque, about 30 seconds. Transfer shrimp to a large plate.
  • Repeat with remaining oil and shrimp; after second batch has stood off heat, return first batch to skillet along with flavored butter and toss to combine. Cover skillet and let stand until shrimp are cooked through, 1 to 2 minutes. Serve with lemon wedges if desired.

1 ½ tablespoons olive oil
1 pound shrimp, peeled and deveined
salt to taste
6 cloves garlic, finely minced
¼ teaspoon red pepper flakes
3 tablespoons lemon juice
1 tablespoon caper brine
1 ½ teaspoons cold butter
⅓ cup chopped Italian flat leaf parsley, divided
1 ½ tablespoons cold butter
water, as needed

Steps:

  • Heat olive oil in a heavy skillet over high heat until it just begins to smoke. Place shrimp in an even layer on the bottom of the pan and cook for 1 minute without stirring.
  • Season shrimp with salt; cook and stir until shrimp begin to turn pink, about 1 minute.
  • Stir in garlic and red pepper flakes; cook and stir 1 minute. Stir in lemon juice, caper brine, 1 1/2 teaspoon cold butter, and half the parsley.
  • Cook until butter has melted, about 1 minute, then turn heat to low and stir in 1 1/2 tablespoon cold butter. Cook and stir until all butter has melted to form a thick sauce and shrimp are pink and opaque, about 2 to 3 minutes.
  • Remove shrimp with a slotted spoon and transfer to a bowl; continue to cook butter sauce, adding water 1 teaspoon at a time if too thick, about 2 minutes. Season with salt to taste.
  • Serve shrimp topped with the pan sauce. Garnish with remaining flat-leaf parsley.
