After searching high and low for a recipe that is tasty but very crispy, this was created from taking various recipe finds and merging them. The secret is in the cornmeal/flour mixture, as well as the cast-iron skillet.

3 chicken leg quarters, cut into thighs and drumsticks
2 cups buttermilk, or as needed to cover
¾ cup all-purpose flour
¼ cup cornmeal
1 teaspoon granulated onion
1 teaspoon granulated garlic
1 teaspoon ground thyme
1 tablespoon salt
½ teaspoon paprika
¼ teaspoon monosodium glutamate (MSG)
¼ teaspoon baking powder
⅛ teaspoon cayenne pepper
4 egg whites, beaten until foamy
vegetable oil for frying

Steps:

  • Place chicken drumsticks and thighs in a bowl and pour enough buttermilk over chicken to cover. Cover and refrigerate for 12 to 24 hours.
  • Combine flour, cornmeal, granulated onion, granulated garlic, thyme, salt, paprika, monosodium glutamate, baking powder, and cayenne pepper in a large, wide bowl.
  • Remove chicken from buttermilk and shake off excess. Discard buttermilk. Pat chicken dry with paper towels.
  • Dip chicken into egg whites and press into flour mixture. Allow coated chicken to rest on a wire rack for 20 to 30 minutes.
  • Fill a cast-iron skillet or deep fryer with vegetable oil about 1/3 full. Heat to 350 degrees F (175 degrees C).
  • Preheat oven to 250 degrees F (120 degrees C).
  • Fry chicken in hot oil in batches until golden brown and no longer pink in the center, 8 to 10 minutes per side. Thighs may take longer to fry than drumsticks. Transfer fried chicken to a wire rack or a paper towel-lined tray to drain. Keep chicken warm in preheated oven while frying remaining pieces.

6 cups nonfat buttermilk
1/4 cup plus 5 teaspoons coarse salt
1/3 cup hot sauce, such as Tabasco (optional)
2 chickens (2 to 3 pounds each), each cut into 10 pieces for frying
3 cups all-purpose flour
1 tablespoon freshly ground pepper
1 1/2 teaspoons cayenne pepper
2 tablespoons baking powder
2 pounds vegetable shortening
6 tablespoons bacon drippings, (optional)

Steps:

  • Put buttermilk, 1/4 cup salt, and the hot sauce (if desired) in a large, airtight container. Add chicken pieces; turn to coat. Cover; refrigerate 2 hours or overnight.
  • Preheat oven to 200 degrees. Put flour, remaining 5 teaspoons salt, pepper, cayenne, and baking powder in a large resealable plastic bag. Shake vigorously.
  • One at a time, place chicken pieces in bag, and shake to coat. Remove from bag, and shake off any excess. Transfer coated pieces to a wire rack set over a baking sheet. Let stand 30 minutes.
  • Heat shortening (and bacon drippings, if desired) in two 10-inch cast-iron skillets over medium-low heat until it registers 375 degrees on a deep-fry thermometer. (Alternatively, use one skillet and half the shortening and drippings, and cook in batches.) Using tongs, place thighs and drumsticks in skillets. Fry until undersides are dark golden, 10 to 14 minutes. Turn pieces over; cook until dark golden all over and an instantread thermometer inserted into the thigh registers 170 degrees, another 10 to 14 minutes.
  • Transfer to a wire rack (clean the rack that held raw pieces before reusing it) set over a baking sheet. Transfer rack and sheet to oven to keep chicken warm.
  • Remove any bits of coating left in skillets with a slotted spoon; discard. Repeat process to fry breasts and wings, 10 to 14 minutes per side (cook until an instantread thermometer inserted into the breast registers 170 degrees).

3 -4 cubed round steaks (you can always use a better cut of beef if you so choose)
2 cups flour
2 eggs
2 tablespoons milk
1 teaspoon garlic powder

1/2 teaspoon thyme

1/2 large onion, diced
4 tablespoons butter (1/2 stick)
4 tablespoons flour
2 cups beef stock
1/4 cup cream
salt and pepper

Steps:

  • salt and pepper both sides of the meat. mix flour, thyme, garlic powder, onion powder and coat both sides of each steak with flour mixture. now dip each steak in egg wash on both sides. finally put back in flour mixture on both sides again. fry in 350 degree oil browned on each side. you can either pan fry with or deep fry. it's your choice. both methods turn out fantastic! fry until deep golden brown. let rest for a few moments on a paper towel.
  • for the gravy -.
  • brown onion in butter until caramelized. add flour and whisk for a few minutes until rawness is out of flour. now add beef stock and whisk until it starts to thicken up. simmer for 10 minutes. add cream and mix throughout and pour over chicken fried steaks and enjoy. this is an excellent recipe and i think you'll agree.
  • ***if you want to have more of a traditional white pepper gravy, use whole milk instead of beef stock. still add the cream and add more pepper.

2 tablespoons light soy sauce
2 tablespoons brown sugar

1 whole chicken, cut into 10 pieces (2 legs, 2 thighs, 2 wings, 4 breast)
4 cups water
3 teaspoons salt
1 cup buttermilk
2 eggs
1 tablespoon Season-All salt
1 cup flour
2 tablespoons cornmeal
2 teaspoons dried oregano
2 teaspoons Season-All salt
vegetable oil or shortening (for frying)

Steps:

  • Soak chicken in water and salt at least 2 hours in the refrigerator.
  • Mix buttermilk, eggs and Season All and dip chicken pieces in this mixture.
  • Combine 1 cup flour, 2 tbsp corn meal, 2 tsp dried oregano, and 2 tsp Season All in a bag.
  • Drop two pieces of dipped chicken in the bag at one time.
  • Shake to coat.
  • Place on wire rack to rest.
  • (I place wax paper under the rack to catch any flour that falls off.) Heat a shallow layer of oil or shortening to 360 F in a jumbo chicken skillet (cast iron is great for this job) or an electric skillet.
  • Place the chicken in the pan, trying not to crowd the pieces.
  • Cover for the first five minutes.
  • Check the chicken.
  • When golden brown, turn.
  • Cover for the next five minutes.
  • Remove cover and cook uncovered, turning occasionally, as needed for a total of an additional 20 minutes or until cooked through.
  • Watch carefully, and don't allow it to get too dark.
  • If it's frying too fast, reduce heat slightly.
  • NOTE- the key is to cover in the beginning to start the cooking process inside the chicken, but to uncover during the last part of the cooking time to get the outside nice and crispy and golden brown.

I have used this recipe for nearly 30 years. It's always turned out great for me. It's important to dry the chicken pieces after rinsing so that the flour/and or/batter will adhere to the chicken. After frying, it's important to drain the chicken well on brown paper bags, and to salt the chicken when first placed on the paper bags. Note: Peanut oil is the best type of oil to use for frying, as peanut oil has a higher smoking point of any other oils. That allows the chicken to cook at higher temperatures without burning.

2 1/2-3 lbs broiler-fryer chickens, cut into serving size pieces
1/3 cup evaporated milk, undiluted
3/4 cup unsifted all-purpose flour
3/4 cup packaged corn flake crumbs

1 quart water
1 whole chicken, cut up into 8 pieces
2 cups buttermilk
1 teaspoon hot sauce
1 cup flour
