1 medium green cabbage head
1 tsp salt
1 tsp pepper
3 Tbsp granulated sugar
1 to 2 oz cider vinegar
several large spoons hellmanns mayonnaise
2 baby carrots, peeled and grated

Steps:

  • 1. Finely slice a head of cabbage into a large bowl or pot. Discard the hard core from the middle. Peel and grate 2 baby carrots into the bowl.
  • 2. Add several large spoonfuls of mayonnaise. Add salt, pepper and sugar. Mix thoroughly. **It's easier to do this with your hands.
  • 3. **BE A TASTER!** Taste the dressing. If it is too tart add more sugar a little bit at a time. If it needs salt, add it now a little at a time. The flavors should all balance together so there is no individual flavor overpowering another. When taste is balanced, cover and refrigerate until chilled through. Enjoy!

1/2 c mayonnaise (fat-free is okay)
3/4 c creamy salad dressing (like miracle whip--fat-free is okay)
2 Tbsp prepared horseradish (more or less to your taste)
1 1/2 Tbsp white vinegar
1 1/2 tsp dried dill weed
3 1/2 Tbsp white granulated sugar (if using splenda, use 2 tbsps)

Steps:

  • 1. Put all ingredients together in a mixing bowl and mix well until smooth and creamy in consistency. Have your Cole Slaw veggies shredded and ready. (Should be about 2 quarts)... Pour dressing over mixed cole slaw veggies and blend together very well, cover and refrigerate. I recommend you refrigerate at least 2 hours before serving, stirring the slaw to blend flavors every 20 minutes or so.. This may look as if it is not enough, but if you keep stirring it often, it will be plenty.
  • 2. Serve chilled. Bon Apetit' Y'all!

MOM'S PERFECT COLE SLAW

This is my mom's recipe for cole slaw, she gets rave reviews everytime she takes it to church suppers and everyone requests it for family dinners. You just have to try if for yourself and see.

1 c mayonnaise or salad dressing
1/2 c vinegar
1 c vegetable oil
3/4 c sugar + 2 t. sugar
1/4 c onions, small white (opt)
1 large cabbage, shredded
1 c carrot, shredded
dash(es) salt and pepper (to taste) optional

Steps:

  • 1. Blend mayo/salad dressing, vinegar, veg. oil, sugar, salt and pepper together.Stir vigerously until a smooth. (this may look like the mayo is seperating but as soon as it is mixed it all comes together.)
  • 2. Pour mixture over finely chopped cabbage and carrot mix. Or use prepackaged cabbage mix. Chill for 1 hour in a sealed container before serving.

1 head shredded cabbage
1 cup best foods mayonnaise
1/2 cup sugar
1/2 cup apple cider vinegar

Steps:

  • Shred the cabbage. I use a Cuisinart with a #2 blade. Combine all 3 ingredients. I use a blender for a smooth dressing. Taste for tartness and sweetness. Adjust accordingly. I lke it best the first few hours when the cabbage is crisp. It will keep 2 days but will be softer.
