BAKED BUTTER HERB PERCH FILLETS

My son Steve made this for us, and I was blown away by how easy it is and how awesome it tasted!

½ cup butter, melted
⅔ cup crushed saltine crackers
¼ cup grated Parmesan cheese
½ teaspoon dried basil
½ teaspoon dried oregano
½ teaspoon salt
¼ teaspoon garlic powder
1 pound yellow perch fillets

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Pour butter into a shallow dish. Combine cracker crumbs, Parmesan cheese, basil, oregano, salt, and garlic powder in a separate shallow bowl.
  • Dip perch fillets into melted butter and press into the seasoned cracker crumbs to coat. Arrange coated fillets on a baking sheet.
  • Bake in the preheated oven until the coating is browned and fish flakes easily with a fork, 25 to 30 minutes.

1 1/2 cups all-purpose flour
2 tablespoons paprika
1/2 teaspoon salt
1 egg
1 cup milk
1/2 cup butter
4 fresh lake perch fillets

Steps:

  • Mix flour, paprika, and salt together and set aside.
  • In a small bowl, blend the egg and the milk.
  • Heat butter in a large frying pan.
  • Dip perch fillets in egg wash first and then into the flour mixture.
  • Carefully place them into the hot butter in the frying pan and brown on both sides.
  • Remove from the butter and drain on a paper towel to absorb excess butter.
  • Serve immediately.

1 lb ocean perch fillets,(or fish of your choice)
2 large eggs, room temperature
11/2 Tbsp lemon juice
1 1/2 c panko bread crumbs
1 tsp dill weed
1/2 tsp kosher salt
1 tsp white pepper
2 tsp each garlic powder, paprika, & old bay seasoning

Steps:

  • 1. Preheat oven to 400 degrees F. Some of the ingredients used to season the fish.
  • 2. In a small bowl add eggs salt, pepper & lemon juice, then beat till blended together. The fillets were rather small, no wonder they were on sale.
  • 3. In a large zip lock bag or bowl, add the panko bread crumbs, paprika, old bay seasoning, dill & garlic powder, shake or stir to blend together.
  • 4. Add a wire baking rack to a large shallow pan then spray with non stick cooking spray, and set aside till needed.
  • 5. Dip fish into egg batter then coat both sides of fish with panko bread crumbs mixture. Place on prepared wire rack, leaving a little space between each piece for even heat distribution. Spray lightly with non stick cooking spray.
  • 6. Bake in preheated 400 degree F. oven for 10 to 12 minutes or until fish flakes easily with fork. Serve with lemon wedge & tartar or Hot Sauce as desired. 2 cups pancake mix
1/4 teaspoon pepper
Oil for frying

Steps:

  • Pour soda into a shallow bowl; add fish fillets and let stand for 15 minutes. In another shallow bowl, combine pancake mix and pepper. Remove fish from soda and coat with pancake mix., In a large skillet, heat 1/4 in. of oil over medium-high heat. Fry fish for 2-3 minutes on each side or until fish flakes with a fork. Drain on paper towels.

1 cup frozen peas
1/2 cup chicken broth
1 garlic clove, halved
1 tablespoon heavy whipping cream
2 tablespoons plus 1/3 cup olive oil, divided

1 egg, beaten
1/2 cup panko bread crumbs
1 tablespoon dried basil
1 tablespoon snipped fresh dill
1 tablespoon minced fresh thyme
8 perch fillets (about 3/4 pound)
1/4 teaspoon salt
1/8 teaspoon white pepper

Steps:

  • In a small saucepan, combine the peas, broth and garlic. Bring to a boil. Reduce heat; simmer, uncovered, for 4-5 minutes or until peas are tender; cool slightly. Drain peas and garlic; transfer to a food processor. Add cream and 2 tablespoons oil. Cover and process until pureed; set aside., Place flour and egg in separate shallow bowls. In another shallow bowl, combine the bread crumbs, basil, dill and thyme. Sprinkle fillets with salt and pepper. Perch is a delicate freshwater fish found in most lakes in Switzerland. Called Egli in German-speaking regions and perche in French-speaking regions, perch is served with a variety of herb sauces. Found this recipe in Easy Menu Cooking the Swiss Way, by Helga Hughes.

4 cups water
1 whole leek, washed, greens chopped and white bulb sliced
1 teaspoon pickling spices
1/2 teaspoon salt
4 pieces perch fillets, fresh (about 1 pound) or 4 pieces perch fillets, frozen and thawed (about 1 pound)
2 tablespoons butter or 2 tablespoons margarine
1 1/2 tablespoons white flour
1/8 teaspoon dill weed
1 dash white pepper
2 tablespoons sour cream

Steps:

  • To make poaching liquid, combine water, leek greens, pickling spice, and salt in a medium-sized pan.
  • Bring to a boil over high heat.
  • Turn heat to medium low and simmer for 30 minutes.
  • Rinse fish fillets under cold water and pat dry with paper towels.
  • Place fillets in a large frying pan, top with cooked leek greens, and pour 1 cup of poaching liquid over fish.
  • Cover and allow to simmer over medium heat for 15 minutes.
  • Scrape leek mixture from fish, remove fillets using a slotted spoon, and place them on a large serving platter.
  • Keep platter of fish in a warm oven until ready to serve.
  • Pour liquid from the pan through a fine sieve and reserve clear stock only.
  • Place butter in a medium-sized pan over medium-high heat.
  • Add white parts of leek and saute, stirring constantly until leeks are golden.
  • Add flour and stir until flour is light brown.
  • Add 1 cup of reserved fish stock, dill weed, and pepper.
  • Stir to blend well.
  • Remove from heat, add sour cream, and blend.
  • Pour sauce over fish fillets.
  • Optional: Sprinkle with chopped tomato pieces.

2 lbs. frozen perch or sole
1/2 c. salad oil
2 tbsp. capers & juice (found in most grocery stores)
2 tbsp. catsup
4 crushed bay leaves
2 tsp. Worcestershire sauce
1/3 c. lemon juice
1/4 c. chopped onion
2 tsp. sugar
1 tbsp. salt
Paprika
2 cloves garlic, chopped

Steps:

  • Thaw fillets. Cut into serving size portions. Place in shallow baking pan. Combine remaining ingredients, except paprika. Pour sauce over fish and let stand for 30 minutes. Pour off sauce (save for basting). Sprinkle fish with paprika and bake in a preheated 350 degree oven for 35 to 40 minutes, basting occasionally with remaining sauce. Fish will flake easily with a fork when done.

300ml water
300mls white wine vinegar
300ml white wine
¼ teaspoon Australian groundwater salt
3-4 teaspoons Wild Lime Confit*
½ teaspoon Lemon Myrtle*

Steps:

  • 1. In a shallow, poaching pan combine water, wine and vinegar and bring to a boil. 2. Add the fish to the boiling stock; it will take about 6-7 minutes to cook so after 2 minutes from adding the fish, turn down the heat to a gentle boil. 3. Remove the fish and place on paper toweling to absorb the excess moisture. 4. Dust with the Lemon Myrtle.
