FILET MIGNON WITH GREEN PEPPERCORN CREAM SAUCE
An easy Filet Mignon recipe with Green Peppercorn Cream Sauce

Steps:
- Boil stock in small saucepan until reduced to 3/4 cup, about 7 minutes. Meanwhile, melt butter in large skillet over medium-high heat. Season steaks with salt and pepper. Cook steaks to desired doneness, about 4 minutes per side for medium-rare. Transfer steaks to plate (do not clean skillet).
- Add chopped shallots to same skillet and sauté 2 minutes. Remove from heat. Add reduced beef stock, 1 cup whipping cream, 3 tablespoons Cognac and green peppercorns. Boil until mixture thickens to sauce consistency, about 6 minutes. Season sauce to taste with pepper. Spoon sauce over steaks and serve.
FILET MIGNON WITH PEPPERCORN-COGNAC-CREAM SAUCE
Originally I found his beautiful picture in a really old "Best of Cooking Light" magazine and made it according to the recipe one year as a holiday dinner for just my husband and I. I made it a few more times, evolving it, and it is pretty yummy....particularly good served with a creamy sour cream & chive mashed potato side dish.

Steps:
- Spread each side of the steaks with a thin layer of the mustard -- using about half of the mustard in the recipe. Sprinkle with salt and pepper to coat well.
- Heat oil and butter in a 9-inch skillet over medium-high heat. Add steaks. Cook about 5- minutes on each side or until at your desired doneness.
- Remove steaks from the pan and allow to rest.
- Reduce heat to medium and add shallots to the pan. Saute for about 1 minute. Add cognac and cook for about 30 seconds. Add broth, cream, and remaining mustard. Reduce heat and whisk continuously. Cook for about 3 minutes, or until sauce begins to thicken. Season with salt and pepper to your taste but remember that the steaks are heavily seasoned.
- Serve steaks with the sauce.

- Preheat the oven to 425 degrees F and line a baking sheet with foil.
- Place the peppercorns in a small bag and using a meat mallet, crush the peppercorns coarsely and set aside.
- In a small skillet, melt the butter over medium heat.
- Add the shallots, garlic and parsley and saute for 3 minutes or until softened; let cool slightly.
- Stir in the breadcrumbs and peppercorns.
- Place the pork tenderloins on the baking sheet and press the shallot mixture along the top and sides of each tenderloin.
- Roast in the oven about 20 minutes or until a meat thermometer inserted in reaches 155 degrees F.
- Let stand for 5 minutes before slicing.
- To make the sauce, whisk together the cream, stock, vinegar, sugar, flour and thyme.
- Bring to a boil over medium heat, stirring occasionally.
- Reduce the heat and simmer, stirring occasionally, for about 10 minutes or until reduced to about 1-1/2 cups.
- Spoon the sauce onto the individual plates and serve the sliced pork tenderloin on top.

- To prepare mint sauce, combine water, sugar, and creme de menthe in a saucepan, and heat to dissolve sugar.
- Add fresh mint and jalapenos, and bring to a boil.
- In a seperate saucepan, mix gelatin with cold water, and heat to dissolve gelatin.
- Combine mint mixture with gelatin mixture, and mix thoroughly.
- Refrigerate mixture overnight to set.
- Have your butcher French Trim the lamb (take the fat caps off the racks and scrape the silverskin from the bones).
- Preheat oven to 350°F.
- Brush each rack with dijon mustard, and roll in bread crumbs to coat top and bottom.
- Arrange on a baking sheet and sprinkle with melted butter.
- Bake until medium rare (20-30 minutes).
- To make peppercorn sauce, boil beef stock until reduced to 1 cup.
- In a seperate saucepan, combine wine, brandy, shallots, and boil mixture until reduced by half.
- Add reduced beef stock to mixture; continue to boil until only 1 cup is left of the mixture.
- Season sauce with rosemary and salt.
- Add cream and cook over medium heat until thick.
- Stir mint sauce before serving.
- Slice racks into chops and serve on a bed of peppercorn cream sauce, with jalapeno mint sauce served to the side for a dipping sauce.
SEAR-ROASTED BEEF TENDERLOIN WITH COGNAC-PEPPERCORN CREAM SAUCE

- Sear-roast the beef Fold the thinner end of the tenderloin under to create an evenly thick roast; secure with twine. Rub the beef all over with 1 Tbs. salt. Wrap it in butcher paper or plastic wrap, put it on a platter or rimmed baking sheet, and refrigerate for at least 2 hours. Remove the beef from the refrigerator and let sit for about an hour before roasting. Meanwhile, position a rack in the center of the oven and heat the oven to 475°F. In a small bowl, combine the mustard, Worcestershire sauce, garlic, honey, soy sauce, thyme, and a few grinds of pepper; set aside. Heat a flame-proof roasting pan over medium-high heat, using 2 burners if necessary. Add the oil, swirling the pan to coat, and then add the beef. Cook, turning with tongs, until well browned on all sides, about 12 minutes total. Transfer to a cutting board; wipe out the pan. Brush the glaze over all of the beef, return it to the roasting pan, and roast to an internal temperature of 120°F for rare, 16 to 20 minutes, or 125°F for medium rare, 22 to 26 minutes. Transfer to a cutting board, tent with foil, and let rest for 15 minutes. Make the sauce Melt the butter in a 3-quart saucepan over medium-low heat. Add the shallot and cook, stirring occasionally, until tender, about 3 minutes. Add the Cognac, turn the heat up to high, and boil until reduced by half, 2 to 3 minutes. Add the stock and thyme and boil until the mixture has reduced to just over 1 cup, 15 to 20 minutes. Discard the thyme sprigs. Stir in the cream and black pepper and lower the heat to maintain a gentle boil. Cook, stirring occasionally, until the sauce is reduced to 2 cups and is a bit thicker than heavy cream, about 20 minutes. Remove from the heat and whisk in the Parmigiano, mustard, lemon juice, and Worcestershire sauce. Once the cheese has melted, season to taste with more salt, pepper, or lemon juice. Slice the tenderloin 1/2 inch thick and pour any juice that has accumulated over the sliced beef.
PEPPERCORN CREAM SAUCE
Steps:
- Heat 1 tablespoon of the butter over medium heat. When the foaming subsides, add the shallot and cook, stirring occaisionally, until softened, about 2 minutes. Add the beef and chicken broths, increase the heat to high and boil untyil reduced to about 1/2 cup, about 8 minutes.
