Steps:
- Pre-heat oven to 425F for at least 10 minutes. Line a large sheet pan with foil and set aside.
- Place veggies in a large bowl and sprinkle with half the seasoning mix and 1 tablespoon oil. In another bowl combine the shrimp, the remaining seasoning mix (half) and 1 tablespoon oil; set shrimp aside.
- Pour the veggies into the sheet pan and bake for 12-15 minutes or until lightly charred. Add the shrimp and bake for 5 minutes or until pink and tender. Remove from oven and enjoy hot with rice, pasta, or salad!
EASY PASTA PRIMAVERA RECIPE
Simple pasta primavera with roasted vegetables and dressed in a light sauce using the pasta cooking water, extra virgin olive oil, lemon zest and a little Parmesan cheese. I use a medley of vegetables, and you can feel free to change them up depending on what is in season! This is a great way to keep your primavera exciting and delicious. If you want to add some extra protein, throw in some quick lemon chicken or grilled shrimp skewers.

- Heat oven to 450 degrees F.
- Place the vegetables in a large mixing bowl. Add garlic, oregano, and thyme. Season with a big pinch of kosher salt and black pepper. Drizzle a good amount of extra virgin olive oil. Toss to coat.
- Transfer the vegetables to a large sheet pan (or two if needed). Spread them out well. Roast in heated oven for about 20 minutes (stirring half-way through).
- While the vegetables are roasting, cook the pasta in salted boiling water according to package (about 10 to 12 minutes). Reserve some of the pasta cooking water. Drain pasta.
- Transfer pasta to a large bowl and season with salt and pepper, and if you like, a little oregano and fresh thyme. Add the vegetables in. Add the tomatoes and lemon zest. Add a bit of the pasta cooking water, a bit of extra virgin olive oil. Toss to combine.
- Sprinkle Parmesan cheese and serve immediately.

SHEET PAN LEMON GARLIC SHRIMP AND VEGETABLE LINGUINE
Steps:
- Preheat oven to 375F. Line a large baking sheet (or 2 medium baking sheets) with parchment paper.
- Cook the pasta according to package directions. Drain and rinse with cool water, and toss with olive oil if the shrimp and vegetables are not ready when the pasta is cooked. Keep warm. (Prepear and cook the shrimp and vegetables while the pasta is cooking!)
- Pat the shrimp dry with a paper towel.
- Slice the zucchini. Clean out the bell pepper and slice into thin slices. Chop or slice the red onion. Slice the lemon into thin slices, and reserve the ends.
- Arrange the shrimp, sliced zucchini, grape tomatoes, and sliced bell peppers on the parchment-lined baking sheet. Season with salt, pepper, and dried oregano. Arrange the 4 whole garlic cloves and sliced lemons on top (take note of where you put the garlic cloves so you can easily find them later!). Thinly slice the butter and arrange is over the baking sheet.
- Bake at 375F for 15 minutes, or until the shrimp is fully cooked and the vegetables are crisp-tender. Remove the garlic cloves and lemon slices from the sheet pan. Carefully transfer the baked shrimp, vegetables, and all the juices from the sheet pan to the pasta.
- Mash the roasted garlic cloves with a fork. Use a fork the squeeze excess lemon juice from the roasted lemon slices and from the lemon ends into the roasted garlic. Add this lemon-garlic mixture to the pasta and toss. Stir in fresh herbs.
- Serve warm with freshly grated Parmesan cheese and extra lemon wedges.

- Preheat the oven to 450 degrees F.
- On a baking sheet, toss the peppers, zucchini, squash, mushrooms, and onions with olive oil, 1/2 teaspoon salt, 1/2 teaspoon pepper, and dried herbs. Roast until tender, about 15 minutes.
- Meanwhile, bring a large pot of salted water to a boil over high heat. Add the pasta and cook for about 6 minutes. Since you will be cooking the pasta a second time in the oven, you want to make sure the inside is still hard. Drain in a colander.
- In a large bowl, toss the drained pasta with the roasted vegetables, marinara sauce, cheeses, peas, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Using a wooden spoon, gently mix, until all the pasta is coated with the sauce and the ingredients are combined.
- Pour the pasta into a greased 9 by 13-inch pan. Top with the remaining 1/3 cup Parmesan and butter pieces. Bake until top is golden and cheese melts, about 25 minutes.
GARLIC & HERB ROASTED SHRIMP

- Preheat the oven to 400 degrees.
- Melt the butter over low heat in a medium (10-inch) saute pan. Add the olive oil, garlic, rosemary, red pepper flakes, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper and cook over low heat for one minute. Off the heat, zest one of the lemons directly into the butter mixture.
- Meanwhile, arrange the shrimp snugly in one layer in a large (12-inch) round ovenproof sauté pan (or 10 × 13-inch baking dish) with only the tails overlapping. Pour the butter mixture over the shrimp. Sprinkle with the sea salt and 1/2 teaspoon black pepper. Slice the ends off the zested lemon, cut five (1/4-inch-thick) slices, and tuck them among the shrimp. Roast for 12 to 15 minutes, just until the shrimp are firm, pink, and cooked through. Cut the remaining lemon in half and squeeze the juice onto the shrimp. Serve hot with the toasted bread for dipping into the garlic butter.
