Family favorite and very easy quick dinner.

3 12oz bag cherry tomatoes
2 Tbsp olive oil
5 large garlic cloves (or 5 tablespoons of minced jar garlic)
3/4 tsp dried crushed red peppers
2 c shredded roasted checked without skin (or buy already made roasted chicken)
8 oz penne pasta
1 pkg feta cheese

Steps:

  • 1. Preheat oven 475
  • 2. Cut tomatoes in half. mix tomatoes, oil, garlic and red pepper. Place on rimmed cookie sheet and roast stirring occasionally until tomatoes are soft and slightly beginning to brown in spots.
  • 3. Transfer tomato mixture including juices to large skillet and add chicken, simmer until heated through.
  • 4. Cooked & drain pasta reserving ¼ cup of pasta water.
  • 5. Add tomato and chicken to large pot with cooked pasta and reserved water and toss. Transfer to serving dish and sprinkle with feta cheese, serve.

250 g tomatoes
1/3 cup olive oil
1/4 cup basil leaves
1/4 cup pine nuts (toasted)
1 -2 garlic clove (minced)
2 tablespoons parmesan cheese (grated)
100 g baby arugula leaves
250 g dry penne pasta
1 head broccoli (cut into florets)
200 g feta (crumbled)
lemon zest, to serve

Steps:

  • Preheat oven to 400 F Place tomatoes on a baking tray and drizzle with 2 teaspoons of oil.
  • Season with Salt & Pepper.
  • Roast or 10 minutes until tomatoes start to wilt & remove from oven.
  • Place basil, pine nuts, garlic, parmesan and half the arugula into a food processor. Process until finely chopped. With motor running add the olive oil slowly and season with salt & pepper.
  • Cook pasta as per pkg. directions and add the broccoli the last 2 minutes of cooking and drain well.
  • Return to the pan with the tomatoes, pesto, feta & remaining arugula.
  • Gently toss to combine. Divide among serving bowls.
  • Top with lemon zest and serve immediately.

1 package (16 ounces) penne pasta
4 boneless skinless chicken breast halves (5 ounces each)
2 teaspoons blackened seasoning
2 containers (10 ounces each) refrigerated Alfredo sauce
2 plum tomatoes, chopped
3 green onions, thinly sliced

Steps:

  • Cook pasta according to package directions; drain., Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Sprinkle chicken with blackened seasoning. Grill chicken, covered, over medium heat or broil 4 in. from the heat for 5-8 minutes on each side or until a thermometer reads 170°. Cut into bite-size pieces., In a large skillet, heat Alfredo sauce over medium heat until warm, stirring frequently. Add the tomatoes, onions, pasta and chicken; toss to coat and heat through.

2 cups grated Parmesan cheese
1 (16 ounce) package penne pasta
4 skinless, boneless chicken breast halves
3 egg whites, lightly beaten
2 (16 ounce) jars Alfredo sauce
2 (14.5 ounce) cans Italian-style diced tomatoes
1 (8 ounce) can tomato sauce
¼ teaspoon red pepper flakes, or to taste
1 (8 ounce) package sliced fresh mushrooms
1 (8 ounce) package fresh spinach
1 cup grated Parmesan cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Line a baking sheet with parchment paper.
  • Place 2 cups Parmesan cheese into a shallow bowl.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in penne and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through but is still firm to the bite, about 11 minutes. Drain well in a colander set in the sink.
  • Dip chicken breasts into the beaten egg whites.
  • Press chicken into Parmesan cheese in shallow bowl to coat both sides.
  • Gently toss between your hands so any cheese that hasn't stuck can fall away. Place the chicken on prepared baking sheet.
  • Bake chicken breasts in the preheated oven until no longer pink in the center and the juices run clear, about 18 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Meanwhile, heat Alfredo sauce, diced tomatoes, tomato sauce, and red pepper flakes in a large saucepan over low heat. Allow to simmer while you finish the remaining steps.
  • Heat a large skillet over medium high heat; cook and stir mushrooms and spinach until mushrooms are tender, about 5 minutes.
  • Stir vegetables into the sauce.
  • Place the penne pasta into a serving bowl; slice chicken breasts and arrange over the pasta.
  • Pour sauce over the pasta and chicken, and sprinkle remaining 1 cup Parmesan cheese on top.
