PENNE ALLA VODKA

1 pound penne
3 cloves garlic, minced
1 whole medium onion, chopped finely
3 tablespoons butter
2 tablespoons olive oil
1 cup vodka
One 14-ounce can tomato puree or tomato sauce
1 cup heavy cream
1 generous pinch red pepper flakes, plus more if needed
1/4 to 1/2 teaspoon salt
Freshly ground black pepper
Grated Parmesan, for serving

Steps:

  • Cook the pasta according to package directions.
  • Saute the garlic and onions in 2 tablespoons butter and the olive oil in a saucepan over medium heat until soft. Pour in the vodka, being careful if your stove has an open flame (remove the pan from the heat before adding). Cook and reduce for 2 to 3 minutes, then pour in the tomato puree. Stir the mixture until it's thoroughly combined, then reduce the heat to low. Pour in the heavy cream. Stir to combine, then turn heat to the lowest simmer possible. Sprinkle in the red pepper flakes and add salt and pepper to taste. Finally, stir in the remaining 1 tablespoon butter. Pour the drained pasta into the sauce and toss to combine. Sprinkle on the Parmesan, then sprinkle on more red pepper flakes if desired.

2 tablespoons olive oil
2 cloves garlic, minced
1 (28 ounce) can whole peeled tomatoes
½ cup chopped fresh basil
salt and pepper to taste
¼ cup vodka
1 pound penne pasta
1 pint heavy cream

Steps:

  • In a large skillet over medium heat, cook garlic in olive oil until tender, 1 to 2 minutes. Stir in tomatoes, breaking up a bit with fork. Stir in basil, salt and pepper and simmer 15 minutes. Stir in vodka and cook 15 minutes more.
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Stir cream into sauce and cook 10 minutes more. Toss with hot pasta.

1 package (16 ounces) penne pasta
3 tablespoons butter
2 garlic cloves, minced
4 ounces thinly sliced prosciutto, cut into strips
1 can (28 ounces) whole plum tomatoes, drained and chopped
1/4 cup vodka
1/2 teaspoon salt
1/2 teaspoon crushed red pepper flakes
1/2 cup heavy whipping cream
1/2 cup shredded Parmesan cheese

Steps:

  • Cook pasta according to package directions., Meanwhile, in a large skillet, heat butter over medium-high heat. Add garlic; cook and stir 1 minute. Add prosciutto; cook 2 minutes longer. Stir in tomatoes, vodka, salt and pepper flakes. Bring to a boil. Reduce heat; simmer, uncovered, 5 minutes. Stir in cream; cook 2-3 minutes longer, stirring occasionally., Drain pasta. The dirty little secret about Penne alla Vodka is not the vodka but the hefty amount of heavy cream. Vodka is colorless, odorless, and without much flavor-not really attributes of a superstar ingredient. It's the combination of cream and tomato sauce that gives this dish its signature flavor. The traditional cream is swapped here for low-fat Greek yogurt.

8 ounces whole-wheat penne
2 cups Rocco's How Low Can You Go Low-Fat Marinara Sauce (page 206) or store-bought low-fat marinara sauce
Pinch of crushed red pepper
One 7-ounce container 2% Greek yogurt
1 cup chopped fresh basil
Salt and freshly ground black pepper
6 tablespoons grated Parmigiano-Reggiano cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the pasta and cook according to the package directions, about 9 minutes; drain.
  • While the pasta is cooking, bring the marinara sauce and crushed red pepper to a simmer in a large nonstick sauté pan over medium heat. Cook the sauce, stirring it occasionally with a heat-resistant rubber spatula, until it is slightly thickened, about 5 minutes. Remove the sauté pan from the heat.
  • Stir about 1/2 cup of the marinara sauce into the yogurt until smooth (this tempers it and prevents the yogurt from curdling). Then whisk the yogurt mixture back into the marinara sauce.
  • In a large serving bowl, toss the sauce with the drained penne and the basil. Season with salt and pepper to taste. Sprinkle the cheese on top, and serve.
  • Whole-wheat pasta has a dense texture that makes it a little tougher than regular pasta. Some people like that chewiness; some don't. If you're in the latter category, overcook it a bit. Toward the end of the cooking time, keep testing it until it's as tender as you like it.

½ lb dried penne pasta
4 strips bacon, finely diced
2 tablespoons unsalted butter, divided
1 large shallot, finely diced
½ teaspoon red pepper flakes
4 cloves garlic, minced
3 tablespoons vodka
1 can crushed san marzano tomato, pushed through a fine-mesh strainer
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
½ cup heavy cream
1 tablespoon butter
½ cup grated parmesan cheese, and romano cheeses
burrata
olive oil
freshly ground black pepper
fresh basil, chopped

Steps:

  • Bring a large pot of salted water to a boil. Add the penne and cook according to the package instructions until al dente. Reserve 1 cup of the pasta water, then drain the pasta and rinse under cold water.
  • Heat a large saucepan over medium-high heat. Add the bacon and cook until the edges are crisp, 2-3 minutes. If bacon is not particularly fatty, add 1 tablespoon of butter and stir until melted. Add the shallot and cook until softened, 3-4 minutes. Add the garlic and red pepper flakes and cook until fragrant, about 30 seconds.
  • Add the vodka and cook until almost completely evaporated, 1-2 minutes. Add the crushed tomatoes, pepper, and salt. Bring to a simmer, then cook for 4 minutes, or until the sauce the mixture comes to a low boil. Add the cream, reduce the heat to low, and simmer for 5 minutes, until the sauce has thickened.
  • Add the penne and remaining tablespoon of butter and stir until well coated in the sauce. If the sauce is too thick, add a splash of the reserved pasta water.
  • Remove the pan from the heat. Add the Parmesan and Romano cheeses and stir until incorporated.
  • Transfer the pasta to a serving dish and top with torn burrata, a drizzle of olive oil, pepper, and basil.
