Salmon Pie image

I introduced this recipe to my family almost 20 years ago and it has been a favorite ever since. When my brothers visit they can't wait to dig in.

Number Of Ingredients 7

1 1/4 cup(s) grated cheddar cheese ( i use old )
2 1/4 cup(s) flour ( i mix half whole wheat )
1/3 cup(s) butter
2 can(s) (213g ea.) red salmon (the good stuff works best, but you can use pink)
2 large eggs
1 cup(s) sour cream ( or plain yogurt )
2 - chopped green onions

Steps:

  • Crust Grate the cheese. Melt butter. Combine these with the flour and set asside almost one full cup for topping. Pour into a large pie plate (to prevent spillage). Spread up the sides evenly and press lightly. Set asside.
  • Filling Drain and debone salmon. Break-up the salmon and spread evenly over the crust. Next mix together the eggs, sour cream, and onions. Pour over crust.
  • Topping Sprinkle reserved 'crust' mixture as evenly as you can, over the top of salmon mixture. Press slightly with the palm of your hand. Bake in 400 oven for 1 hour. Allow to rest about 5-10min. before cutting. I put sour cream on the table because my brothers like to put more on top of their pie.
