½ cup crushed pecans
1 teaspoon crushed dried rosemary
1 teaspoon salt
black pepper to taste
all-purpose flour, or as needed
4 (4 ounce) fillets trout
1 egg, beaten

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a baking sheet with cooking spray.
  • Mix pecans, rosemary, salt, and black pepper in a shallow bowl. Place flour in a separate shallow bowl. Dip trout fillets in flour and shake off excess; dip fish into beaten egg, then into seasoned pecans, lightly pressing pecan coating onto fish. Arrange fillets on the prepared baking sheet.
  • Bake in preheated oven until fish flakes easily with a fork, 10 to 12 minutes.

1 cup lightly toasted pecans, chopped
1 1/2 cups bread crumbs
4 tablespoons chopped parsley leaves
2 teaspoons kosher salt
1 teaspoon fresh ground black pepper
1 tablespoon chopped rosemary leaves
4 trout fillets
4 ounces unsalted butter, room temperature
Horseradish Cream, recipe follows
1 head watercress lettuce, bottoms removed
1/2 apple, cored and sliced into 1/2 moons
1/4 pound fresh horseradish root, peeled, coarsely grated
4 tablespoons cider vinegar
2 tablespoons lemon juice
1 tablespoon minced shallots
1/2 teaspoon ground fennel seed
1 tablespoon salt
1/4 tablespoon fresh ground black pepper
4 tablespoons apple cider
4 tablespoons olive oil
2 teaspoons toasted walnut oil
1 cup reduced heavy cream, 3 cups reduced to 1 cup
3 tablespoons jarred horseradish, strained
2 tablespoons sour cream
3 lemons, zested
1 tablespoon lemon juice

Steps:

  • To make the pecan crusted trout:
  • Preheat the oven to 450 degrees F. Combine all of the dry ingredients, seasonings, and herbs. Brush each trout fillet with the softened butter. Sprinkle the buttered side of each trout fillet with the pecan crust and press firmly with your hand to completely cover each fillet.
  • Brush a cookie sheet with the remaining butter. Place the un-breaded side of the trout down on the buttered cookie sheet. Bake for 10 to 12 minutes or until the flesh is firm and flaky.
  • To make the watercress salad and apple cider vinaigrette:
  • In a large bowl, toss the lettuce, the apple slices, and the grated horseradish root. In a separate bowl, combine the cider vinegar, lemon juice, minced shallot, ground fennel seed, salt and pepper. Then whisk in the apple cider, olive oil, and walnut oil. Dress salad with the vinaigrette.
  • Using a large spatula, carefully lift the trout onto a plate. Spoon the horseradish cream over the crusted trout. Serve with a watercress salad with apple cider vinaigrette.
  • To make the horseradish cream: Chill the reduced heavy cream until cold and thick. Combine all ingredients and gently mix. Keep cold until it goes on warm fish to keep from breaking.

48 ounces whole trout, about 12 ounces each, cleaned and boned
1/4 teaspoon salt
1 large egg white, lightly beaten
2 tablespoons extra virgin olive oil

Steps:

  • Heat the oven to 400. Line a baking sheet with parchment.
  • In a food processor, pulse pecans, rosemary, garlic, and cayenne until finely chopped.
  • Place each trout, opened and flesh side up on the baking sheet.

1 cup pecan halves, lightly toasted
1 cup dry breadcrumbs, preferably Japanese-style panko*
4 (7 ounce) trout fillets
salt and pepper
1/2 cup buttermilk
2 tablespoons olive oil
2 tablespoons butter
4 sage leaves, chopped
1/2 lemon, juice of
5 tablespoons chicken broth

Steps:

  • To make trout:.
  • Combine pecans and bread crumbs in food processor and process to medium-fine consistency.
  • Season fillets with salt and pepper; brush flesh side of fillet with buttermilk.
  • Press pecan mixture on top of buttermilk coating to make thick crust.
  • Heat oil in skillet over medium heat; cook fillets, crust side down, until golden brown, about 4 to 5 minutes.
  • To make sauce:.
  • In same skillet trout was cooked in,melt butter over medium heat and allow it to foam.
  • Just as butter begins to turn brown, whisk in sage, lemon juice, and broth.
  • Pour over trout and serve.
  • * Japanese-style panko crumbs are found in the Oriental section of supermarkets.

5 medium lake trout (or salmon)
PECAN CRUST
2 c cornmeal
1 c pecans, in pieces (chop fine)
1/4 c parmesan cheese
1 1/2 tsp garlic
1 tsp poultry seasoning
1 stick butter, melted
1/2 c bread crumbs, dry
1 tsp parsley
DIPPING
1 c evaporated milk
TOPPING
2 c monterey jack cheese (shredded)

Steps:

  • 1. Preheat oven to 400* Wash and scale fish. On greased cookie sheet. You may add Salt and Pepper if you like.
  • 2. In mixing bowl: Chopped Pecans, Cornmeal, Parmesan Cheese, garlic, poultry seasoning, parsley, bread crumbs. Mix in melted butter a little at a time till barely moist. Must not stick together, just coated.
  • 3. Dip fish in Milk, coat fish into Pecan Crust mixture. Place on greased cookie sheet. Sprinkle any left over coating on and in fish. Bake for 15 minutes, Pull out and spread Monterey Jack Cheese on top of fish put back in to oven for another 10 minutes. Pull out and serve

2 tablespoons olive oil (can sub 1 tablespoon olive oil plus 1 tablespoon butter)
1 onion, chopped
1/2 bunch fresh parsley
1 1/2 cups long-grain rice
2 1/2 cups water
1 1/2 teaspoons salt (to taste)
fresh ground black pepper
3/4 cup pecan pieces
1/4 cup breadcrumbs
2 -3 butterflied whole rainbow trout, 1 1/2 pounds total (filets work well)
2 tablespoons butter, cut into pieces
1 lemon, cut into wedges

Steps:

  • Preheat the oven to 450°.
  • Heat the olive oil in a medium saucepan. Add the onion and saute over medium heat until tender, about 5 minutes. As the onion cooks, finely chop the parsley, then set it aside.
  • Add the rice to the onion and stir until all the grains are coated evenly with the oil, about 1-2 minutes. Add the water, salt and black pepper. Stir to combine and bring to a boil. Reduce the heat to medium and simmer, covered, until the rice is tender, about 18-20 minutes.
  • Stir in the parsley, cover and let the pilaf stand 5 minutes before serving.
  • As the rice cooks, place the pecans in a food processor and pulse until finely ground but not sticky. Combine with the breadcrumbs. Place the trout opened, skin-side down, on a sheet pan lined with aluminum foil. Season the flesh with salt and pepper, sprinkle with the pecan mixture and the butter pieces, then place in the oven. Cook until the edges of the trout skin on the bottom are crisp and the thick part of the flesh is opaque, about 5-8 minutes. Increase the heat to broil and place the pan near the broiler element for a few minutes until the topping is golden brown.
  • Remove from the oven, cut each trout into 2 filets and serve each person 1-2 fillets on a bed of pilaf with the lemon wedges.

3 large egg whites, beaten to blend
For sauce
1 1/2 cups fresh orange juice
1 cup dry wine
2/3 cup chopped shallots
1/4 cup white wine vinegar
8 5-inch-long fresh parsley stems
1 1/2 tablespoons fresh lemon juice
1 large fresh thyme sprig
2 fresh rosemary sprigs
1/4 cup whipping cream
3/4 cup (1 1/2 sticks) unsalted butter, cut into 12 pieces
For assembly
4 tablespoons olive oil
1 carrot, peeled, cut into matchstick-size strips
1 red bell pepper, thinly sliced
6 cups thinly sliced savoy cabbage
2 tablespoons (1/4 stick) unsalted butter
Chopped fresh chives

Steps:

  • Make trout:
  • Combine pecans and 1 tablespoon flour in processor. Grind pecans finely; transfer to plate. Place remaining flour on another plate. Sprinkle fish with salt and pepper. Dip 1 fillet into flour to coat; shake off excess. Using pastry brush, brush flesh side with egg whites. Place fillet, egg white side down, onto pecans; press to coat with nuts. Transfer to waxed paper-lined baking sheet, pecan side down. Repeat with remaining 3 fillets; chill.
  • Make sauce:
  • Combine first 7 ingredients in medium saucepan. Boil 10 minutes; add rosemary. Boil until liquid is reduced to 1/2 cup, about 10 minutes. Strain sauce into another medium saucepan, pressing on solids in sieve. Add cream; bring to boil. Reduce heat to medium-low. Whisk in butter 1 piece at a time (do not boil). Season with salt and pepper. Let stand at room temperature up to 2 hours.
  • To assemble:
  • Heat 2 tablespoons oil in heavy large Dutch oven over high heat. Add carrot and bell pepper; toss 2 minutes. Add cabbage; toss until cabbage wilts, about 4 minutes. Season with salt and pepper. Remove from heat.
  • Melt 1 tablespoon butter with 1 tablespoon oil in heavy large skillet over medium-high heat. Place 2 fillets, pecan side down, into skillet. Cook until crust is golden and crisp, about 2 minutes. Using spatula, turn fillets over. Cook until just opaque in center, about 2 minutes. Transfer to plate. Repeat with remaining butter, oil and fish.
  • Whisk sauce over low heat to rewarm (do not boil). Divide vegetables among plates. Top with fish. Spoon sauce around fish and vegetables. Sprinkle with chopped chives and serve.

4 - trout fillets, 6 oz each, skin-on one side
1/2 teaspoon(s) salt
1/4 teaspoon(s) black pepper, freshly ground
1 tablespoon(s) butter, divided
1 tablespoon(s) olive oil, divided
1 tablespoon(s) fresh parsley, chopped
4 - lemon wedges

Steps:

  • Place flour in a shallow dish.
  • Place buttermilk in a dish.
  • Combine pecans and panko in a dish.
  • Sprinkle fish with salt and pepper. Dredge flesh side of 2 fillets in flour; dip in buttermilk. Dredge in panko mixture.
  • Melt 1 1/2 teaspoons butter in a large nonstick skillet over medium-high heat. Add 1 1/2 teaspoons oil. Add dredged fillets, crust-side down; cook 3 minutes on each side or until done. Remove from pan. Repeat procedure with remaining flour, buttermilk, panko mixture, fillets, butter, and oil. Top with parsley. Serve with lemon.
