2 pork tenderloins (3/4 pound each), cubed
1 teaspoon salt, divided
1/2 teaspoon pepper
1 tablespoon olive oil
1 cup sliced fresh carrots
1 medium onion, chopped
2 garlic cloves, minced
1 can (14-1/2 ounces) diced tomatoes, drained
1 cup chicken broth
1 cup cream of coconut or coconut milk
1/2 cup creamy peanut butter
3 teaspoons curry powder
1/4 teaspoon cayenne pepper
Cooked brown rice

Steps:

  • Sprinkle pork with 1/2 teaspoon salt and pepper. In a large nonstick skillet, heat oil over medium-high heat. Add pork; cook and stir until no longer pink, 4-6 minutes. Remove., In same skillet, cook carrots and onion until softened, 4-6 minutes. Add garlic; cook 2 minutes. Return pork to skillet. Add tomatoes and broth. Reduce heat; simmer, covered, 6-8 minutes., Stir in cream of coconut, peanut butter, curry and cayenne and remaining salt until smooth. Simmer, uncovered, until thickened slightly, about 2 minutes. Serve with brown rice.

1 1/2 lbs pork tenderloin
fresh ground black pepper
2 tablespoons soy sauce
2 tablespoons peanut butter
1/4 teaspoon ground red pepper
3 garlic cloves, minced
1/2 cup pineapple preserves

Steps:

  • Preheat oven to 375 degrees Fahrenheit.
  • Trim fat from tenderloin.
  • Sprinkle with fresh ground black pepper to taste.
  • Line a baking dish with parchment paper or aluminim foil.
  • Mix the soy sauce, peanut butter, red pepper and minced garlic together.
  • Spread mixture over pork loin.
  • Bake uncovered for 30 minutes.
  • Remove from oven.
  • Carefully spread pineapple preserves on top of pork loin.
  • Bake another 10 mintes or until meat reaches 150 degrees Fahrenheit.
  • Let stand for 5 minutes before serving.

6 -8 butterfly pork chops
1 medium yellow sweet onion (cut into rings)
1 green bell pepper (remove seeds & cut into rings)
1 (1 5/8 ounce) package brown gravy mix
1/2 cup creamy peanut butter
salt & pepper

Steps:

  • Lightly brown pork chops and remove from skillet.
  • Mix brown gravy as called for on pkg less a bit of the water and add the peanut butter to the gravy.
  • Stir gently while it thickens and add the pork back into the pan, salt & pepper,
  • add the onion and bell pepper rings cover and simmer over low heat for about 45 minutes.

1 1/2 lb. thick pork loin chops, fat trimmed and cut into pieces about 1 inch by 2 inches
Marinade Ingredients:
1/4 cup red wine vinegar
2 T soy sauce
2 T vegetable oil (I used canola oil)
1 1/2 tsp. sesame oil
1 T lime juice
2 T smooth peanut butter (use natural peanut butter without added sugar for South Beach Diet)
2 tsp. finely minced garlic
1/2 tsp. red pepper flakes (use more or less to taste)

Steps:

  • Trim visible fat from pork chops and cut into strips about 1 inch by 2 inches. (I cut each trimmed pork chop into about 4 crosswise strips.) Combine red wine vinegar, soy sauce, vegetable oil, sesame oil, lime juice, and peanut butter, then whisk until peanut butter is mixed into the other liquids. (This will take a little stirring to get it smooth.) When the mixture is well-combined, whisk in the finely minced garlic and red pepper flakes. Put pork cubes into Ziploc bag or plastic container with a snap-on lid, then pour in marinade. Let the pork strips marinate 6-8 hours in the refrigerator, turning it a few times if you're home. When you're ready to cook, remove the pork strips from the refrigerator and drain the marinade. (I used a colander placed in the sink to drain the pork pieces.) Thread kabobs onto skewers, folding each piece over so they won't spin when they're cooking. Let the pork pieces come to room temperature while you oil the grill with olive oil or non-stick grilling spray and preheat grill to medium-high. (You can only hold your hand there 2-3 seconds at that heat.) Grill kabobs, turning several times with tongs so you get nice grill marks on each side. Kabobs are done when the pork feels firm, but not hard to the touch or when meat reaches a temperature of 160F/70C on an instant-read meat thermometer. We cooked our kabobs about 15 minutes, but actual cooking time will depend on the temperature of your grill and temperature of the meat when it's put on the grill. Serve hot.

1 c flour
1 c corn meal
1 egg, beaten
enough water to make it a egg type batter

2 cups peanut shells, from roasted peanuts
2 pork loins, trimmed, about 1/2 pounds each
Kosher salt and freshly ground black pepper
Steak seasoning (recommended: Montreal) or other quality steak seasoning
Carrot pickled onion salad, recipe follows
2 cups ketchup
3/4 cup apple cider vinegar
1/4 cup tomato paste
3/4 cup peanut butter
2 tablespoons Dijon mustard
4 tablespoons ancho chili powder
4 tablespoons prepared barbecue sauce
3 ounces bourbon
1 small red onion, sliced thin
2 cups apple cider vinegar
3 tablespoons sugar
3 tablespoons kosher salt, plus more for seasoning
3 carrots, peeled and julienned
3 tablespoons chopped fresh parsley leaves
3 tablespoons chopped roasted peanuts
1 orange, zested and juiced
2 tablespoons peanut oil
Freshly ground black pepper

Steps:

  • Preheat the grill. Soak the peanut shells in water for 45 minutes.
  • Season the pork well with salt, pepper, and steak seasoning. Smoke the pork on the grill for 45 minutes.
  • Preheat the oven to 400 degrees F.
  • Transfer the pork to a roasting pan, drain the peanuts and add them to the pan. Roast the pork in the oven until it reaches 135 degrees F on an instant-read thermometer, about 20 to 30 minutes. Remove from the oven to a cutting board.
  • Peanut Butter BBQ Sauce: Combine all the sauce ingredients in a large saucepot and bring it to a simmer over low heat. Let simmer for at least 1 hour. Taste and season with salt and pepper, if needed.
  • Slice the pork and arrange it on a serving platter. Spoon the warm BBQ sauce over the top and serve with the Carrot and Pickled Onion Salad.
  • Put the red onions in a shallow baking pan. In a saucepan, add the vinegar, sugar, and salt and bring to a boil over medium heat. Pour the hot liquid over the onions and cover immediately. Let sit covered for at least 1 hour. Strain the onions and reserve.
  • To assemble the salad: In a medium-sized serving bowl, combine the carrots, parsley, peanuts, orange zest and juice, peanut oil and pickled onions and toss to combine well. Season with salt and pepper, to taste.

6 Boneless PORK CHOPS
1 lg. ONION, cut into 6 slices
1/2 C. Smooth PEANUT BUTTER
1 can Cream of MUSHROOM Soup
1/2 can MILK
2 T. WORCESTERSHIRE Sauce
BLACK PEPPER to taste

Steps:

  • Brown PORK CHOPS on both sides in lidded skillet, Cooking at least 4 minutes each side. Place a slice of ONION on top of each chop. Mix the rest of the ingredients together and pour over the chops. Bring to a bubble. Cover the pan and simmer on low for 30 to 35 minutes. When removing the chops from the pan give the gravy a good stirring. Serve with mashed potatoes and a vegetable of your choosing

3 lbs. boneless pork shoulder, cut into 1x1 inch cubes.
1/2 cup chunky peanut butter
1/4 soy sauce
juice of one lime plus zest
1/2 cup coconut milk
1/2 onion, grated
1/2 cup cilantro, chopped
1 tsp. sambal or chili sauce similar. Dried chili flakes work also.

Steps:

  • put all ingredients besides pork into food processor and mix until peanut butter is incorporated. Put pork in large freezer bag and add marinade. Let rest in fridge at least 1 1/2 hours or overnight is better. Soak 8 inch bamboo skewers in water one hour. This is messy, but string 4 pieces pork on each skewer with about 1/4 inch separating pork squares. Heat grill to HIGH and fold about a 3 inch strip of foil onto grill at the front to guard your exposed skewers. This should keep them from burning off. Grill kabobs 3 minutes on each side, check for doneness. If the meat is still a bit mushy, it should cook just a bit more. Let it stay on the grill another minute or two. With remaining marinade, add 1 tsp soy, and one more tsp sambal or to taste(optional). Heat up to 145 degress on side burner at low temp. This makes an excellent dipping sauce with a little added spice

Thread meat on metal or soaked wooden skewers, leaving a small space between pieces. Grill, covered, on an oiled rack over medium heat for 10-15 minutes or until meat is no longer pink, turning several times. Serve with sauce.

I started hoping to copy cat a Chinese restaurants Peanut butter Chicken and pork. A dish we love when we go there. It didn't look the same but tasted similar. Will be making it again.

1 cup(s) peanut butter 1/2 cup at a time
- pork, loin or roast cut into strips
1/3 cup(s) white corn meal
1/3 cup(s) bread crumbs, seasoned
1/3 cup(s) extra crispy shake and bake
- oil to fry in or spray a baking pan and bake

Steps:

  • Cut loin or boneless chops into strips. In a dish or bowl mix the corn meal, bread crumbs and shake and bake. Set a side. In another bowl - Using 1/2 cup of peanut butter at a time melt in microwave until liquid, about 30-45 seconds. Take strips and dredge through peanut butter and then the dry mix and place on plate, continue until all done using all the peanut butter. Then pan fry or bake until done. Warning: Both will leave a mess. We tried both last night. Liked the pan fry best but then who doesn't. The baked seemed dryer and the fried wasn't dry. Both make a mess in the pan though.
