APPLE GRANOLA STACKERS

Number Of Ingredients 7

1 Granny Smith apple, skin on, cored and sliced crosswise
1 red apple skin on, cored and sliced crosswise (see Cook's Note)
1/4 cup crunchy peanut butter
1/2 cup granola
1 tablespoon Cinnamon Sugar, recipe follows
1/2 cup sugar
1 teaspoon ground cinnamon

Steps:

  • Spread all the apple slices except the top slice with peanut butter.
  • Sprinkle granola and cinnamon sugar over the peanut butter.
  • Stack the apples, alternating between red and green slices.
  • Wrap tightly in plastic wrap and refrigerate until ready to eat.
  • Mix sugar and cinnamon together until blended.

We made these last night for a quick snack and they were great. Loved the tartness of the apple with the crunch of the granola Cereal. The amounts of all the ingredients can be adjusted for personal preference.

4 (7 -8 inch) flour tortillas
1/3 cup peanut butter
1 cup chopped granny smith apple
1/4 cup oats & honey granola cereal

Steps:

  • Spread peanut butter over each tortilla.
  • Warm in the microwave for 10-15 seconds(optional).
  • Sprinkle with chopped apple and granola.
  • Roll up tortillas and cut in half.
  • Enjoy.

My sister Linda made these for our Valentine's party a few years ago. We decided to have tea sandwiches/small finger foods. Each lady brought something different and these little yummy wraps were a hit. I've been meaning to post them, so here they are. Super fun for kids to munch on too. They disappeared very quickly.

4 - 5 large tortilla wraps, 8 or 9 inch
1/2 c peanut butter, almond or cashew butter
1 Tbsp honey
1/2 c granola (i use my recipe)
2 medium banana, diced
2 Tbsp lemon juice
4 medium dried apricots or 1/4 cup of cranberries

Steps:

  • 1. Mix your peanut butter and honey together and set aside. Dice your banana in small pieces and pour the lemon juice over them so they will not brown. Chop finely the apricots or cranberries.
  • 2. Assemble your wraps by spreading the peanut butter & honey mixture out on the wrap about 2 1/2 tbsp or so. Then take a tbsp or so of banana and spread over the peanut butter, next your granola 1 1/2 tbsp and some apricots or cranberries. Roll up and then saran wrap till ready to cut them. After cutting them you can wrap a cute ribbon or like my sister did some yarn around each piece or whatever you have on hand. A delicious treat and healthy too.
  • 3. Here is another tray of the different tea sandwiches that were served.
  • 4. Another tray of finger foods. The ladies did a great job on their sandwiches and Valentine boxes they made too.
