OPTION 1: Peaches in Brown Sugar & Thyme
3 medium ripe peaches, pitted and sliced, diced or cut into wedges.
1/3 cup light brown sugar, packed
1/3 cup sweet white wine
3 tablespoons white balsamic vinegar
Pinch of salt
1 1/2 teaspoon fresh thyme leaves
OPTION 2: Peaches in Sherry Vinegar and Rosemary
3 medium ripe peaches, pitted and sliced, diced or cut into wedges
1/3 cup olive oil
2 tablespoons sherry vinegar
1/2 teaspoons rosemary or 1 1/2 teaspoons fresh rosemary
Pinch salt
Pinch sugar
2 1/2 tablespoons dark spiced rum (optional)

Steps:

  • For both option 1 & 2: Combine all ingredients in medium bowel and let marinate at room temperature for 20 minutes to 24 hours. Then refrigerate. Keeps well for 2-3 days.

1 cup vodka

6 fresh peaches ((about 4 cups chopped))
2 tablespoon lemon juice or apple cider vinegar ( (about 1/2 large lemon))
1/3 cup white sugar ((or brown sugar))
2 teaspoon Dijon mustard
2 cloves garlic, minced - about 2 teaspoons ((or 2 frozen cubes or 1/4 tsp garlic powder))
3 tablespoon green onion, finely chopped
1/4 teaspoon red pepper flakes (or more)
2 tablespoon fresh thyme (or 1 tsp dried)
1/2 teaspoon each, salt and black pepper

Steps:

  • PEEL AND CUT THE PEACHES (Note 1): For easy peeling, carefully drop peaches into a medium pot of boiling water. Boil for 1 minute. Lift out peaches with a slotted spoon and slip off the skins. Cut peaches in half and remove pits. Chop into small chunks, about 1/2-3/4 inch (1.28-1.9 cm).
  • MAKE THE SAUCE: In a medium saucepan (I use the same one as above), put in all ingredients. Heat to Medium-high heat to bring to gentle boil (lower heat to medium heat if boiling too rapidly). Gently boil for about 6-8 minutes uncovered, stirring frequently, or until you reach the desired consistency. The more you cook it, the thicker it will get. Taste and adjust seasonings, adding more lemon, sugar, chili flakes, thyme as needed. Serve hot or cold with chicken, fish, pork or grains.

4 pounds pork spareribs
1 can (15-1/4 ounces) sliced peaches, undrained
1/2 cup packed brown sugar
1/4 cup ketchup
1/4 cup white vinegar
2 tablespoons soy sauce
1 garlic clove, minced

1 teaspoon pepper
2 tablespoons cornstarch
2 tablespoons cold water
Hot cooked rice

Steps:

  • Cut ribs into serving-size pieces. In a large skillet, brown ribs on all sides; drain. , Transfer to a 5-qt. slow cooker. Combine the peaches, brown sugar, ketchup, vinegar, soy sauce, garlic salt and pepper; pour over ribs. Cover and cook on low for 5-1/2 to 6 hours or until meat is tender. , Remove pork and peaches to a serving platter; keep warm. Skim fat from cooking juices; transfer to a small saucepan. Bring liquid to a boil. Combine cornstarch and water until smooth. Gradually stir into the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with pork and rice.

1 cup fresh peach, mashed
1/2 cup balsamic vinegar
1 tablespoon Dijon mustard
1 teaspoon honey
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1/2 teaspoon garlic, crushed
1 tablespoon fresh thyme
1/2 cup olive oil

Steps:

  • Combine vinegar, mustard, honey, salt, pepper, garlic, and thyme. Whisk until well blended, then add olive oil and mix.
  • Just before you are ready to marinate chicken, stir in peaches.
