For crust
2 1/2 cups finely ground or crushed pecan shortbread cookies (such as Pecan Sandies; about 11 ounces)
1/4 cup (1/2 stick) unsalted butter, melted
For caramel sauce
2 cups sugar
1/2 cup water
1 1/4 cups whipping cream
3/4 teaspoon vanilla extract
2 quarts (or 4 pints) peach ice cream, slightly softened
1 cup pecans, toasted, coarsely chopped (about 4 ounces)
1 cup (about) pecan halves, toasted

Steps:

  • Make crust:
  • Preheat oven to 325°F. Butter 9-inch-diameter springform pan with 2 3/4-inch-high sides. Mix cookie crumbs and melted butter in medium bowl until crumbs are evenly moistened. Press crumb mixture firmly onto bottom and 1 inch up sides of prepared pan. Bake until crust is set and pale golden, about 15 minutes. Cool completely.
  • Make caramel sauce:
  • Combine sugar and 1/2 cup water in heavy medium saucepan. Stir over medium-low heat until sugar dissolves. Increase heat to medium-high; boil without stirring until syrup is deep amber color, occasionally brushing down sides of pan with wet pastry brush and swirling pan, about 8 minutes. Remove from heat. Gradually add cream (mixture will bubble vigorously). Stir over low heat until any caramel bits dissolve and sauce is smooth, about 1 minute. Stir in vanilla. Let stand until cool but still pourable, about 1 hour.
  • Drizzle 1/4 cup cooled caramel sauce over bottom of crust. Freeze until caramel sets, about 10 minutes. Spread 1 quart ice cream over caramel in crust. Sprinkle chopped pecans over ice cream. Drizzle 1/2 cup caramel sauce over ice cream. Freeze until caramel sets, about 10 minutes. Spread remaining ice cream over. Freeze until top of pie is firm, about 1 hour.
  • Arrange pecan halves in 3 concentric circles around top of pie. Drizzle 1/4 cup caramel sauce over pie. Freeze pie until frozen solid, at least 4 hours. (Can be prepared 5 days ahead. Cover tightly with foil; keep frozen. Cover and chill remaining caramel sauce.)
  • Rewarm remaining caramel sauce over low heat, stirring often. Cut around pan sides to loosen pie. Let pie soften slightly at room temperature, about 10 minutes. Remove pan sides. Serve pie with warm caramel sauce.

6 ounces gingersnap cookies
2 tablespoons unsalted butter, melted
1 tablespoon heavy cream
2 cups fresh blueberries, divided
1/3 cup sugar
1/4 cup fresh lemon juice
1 pint peach ice cream, softened in refrigerator for 20 minutes
2 cups whipped cream (made from 1 cup heavy cream)
1/4 cup chopped crystallized ginger

Steps:

  • Finely grind cookies in a food processor (you should have about 1 1/3 cups). Transfer crumbs to a medium bowl. Add butter and cream; stir to coat. Press firmly onto bottom and up sides of a 9" pie dish. Chill until firm, at least 30 minutes.
  • Toss 1 3/4 cups blueberries, sugar, and lemon juice in a medium bowl; let macerate at room temperature for at least 1 hour.
  • Transfer blueberry mixture to a large heavy saucepan and cook over medium heat until berries soften and juices are released, 10-15 minutes. Strain berries through a fine-mesh sieve into a medium bowl. Cover and chill juices and berries separately until cold.
  • Mix softened ice cream with chilled cooked blueberries. Scrape ice cream mixture into crust; smooth top. Freeze until firm, at least 6 hours. DO AHEAD: Pie can be made 2 days ahead. Cover and keep frozen.
  • Soften pie in refrigerator for 10 minutes before serving. Top with whipped cream; scatter remaining 1/4 cup fresh blueberries over. Garnish with ginger. Drizzle each slice with reserved blueberry juices.

1 1/3 cups finely ground amaretti cookies (Italian macaroons) plus 1/2 cup coarsely crushed cookies
1 tablespoon sugar
2 pinches of salt

3 pounds firm but ripe peaches, halved, pitted, cut into 3/4-inch-wide wedges
1 cup (packed) plus 1 tablespoon golden brown sugar, divided
1 1/2 tablespoons fresh lemon juice
2 1/4 quarts vanilla ice cream (9 cups)
2/3 cup chilled heavy whipping cream
Even easier: Use purchased peach ice cream instead of mixing up your own.

Steps:

  • Preheat oven to 350°F. Coat 9-inch glass pie dish with nonstick spray. Mix finely ground cookie crumbs, 1 tablespoon sugar, and pinch of salt in medium bowl. Add lukewarm melted butter; mix to blend. Press crumbs onto bottom and up sides of dish. Bake until golden around edges, about 10 minutes. Cool completely in dish on rack.
  • Preheat broiler. Line rimmed baking sheet with foil. Coat with nonstick spray. Arrange peaches in even layer on sheet. Broil until beginning to brown, watching closely to avoid burning, 3 to 5 minutes. Sprinkle 1/4 cup brown sugar over peaches. Broil until sugar melts and caramelizes, rotating sheet for even cooking, 2 to 3 minutes longer. Transfer peaches and juices to bowl (leave any burned parts behind). Using medium-size ice cream scoop, scoop remaining ice cream in bowl in level coops and arrange in concentric circles top pie. Freeze pie. DO AHEAD: Can be made days ahead. Cover and keep frozen.
  • Using electric mixer, beat cream and remaining 1 tablespoon brown sugar in medium bowl until peaks form. Sprinkle coarsely crushed amaretti cookies over pie. Cut into wedges and serve with dollop of brown sugar whipped cream.

2 cups vanilla wafer cookies
3 teaspoons butter
2 tablespoons light brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 cup canned peaches
1 pint vanilla ice cream
1/3 cup seedless raspberry jam
1/2 pint fresh raspberry

Steps:

  • Heat oven to 325. Lightly butter a 9-inch pie pan. Put cookie crumbs, butter, sugar, cinnamon and nutmeg in medium bwl. Toss with fork to moisten. Press into pie pan. Bake just until crust is set and golden, about 10 minutes. Remove. Cool on wire rack.
  • Strain peaches over bowl. Reserve juice. Coarsely chop peaches.
  • Put ice cream in large bowl. Using wooden spoon, mix in drained peaches and 1/4 cup of the reserved juice.
  • Spoon into pie shell. Lightly cover with plastic wrap. Freeeze until firm.
  • Remove from freezer. Spoon melted jam over top. Arrange raspberries in concentric circles in decorative pattenr to cover top. Return to freezer. Freeze until firm, several hour, or up to one week.
  • To serve, remover from freezer 15 minutes before slicing. Cut with knife that has been dipped in hot water.

3/4 cup (packed) light brown sugar, divided
2 tablespoons cornstarch
1/2 teaspoon salt
3 1/4 teaspoons cinnamon
3/4 teaspoon nutmeg
Pinch of black pepper
2 pounds peaches, peeled, pitted and cut into wedges (about 3 cups)
1/2 cup flour
1 cup ground pecan pieces
1/2 stick butter, cut into small pieces
1 unbaked 9-inch pie crust
Vanilla Ice Cream, recipe follows
1 quart of heavy cream
2 cups sugar
8 egg yolks
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 350 degrees F.
  • In a saucepan, combine the water, 1/2 cup brown sugar, cornstarch, salt, 1 teaspoon of cinnamon, 1/2 teaspoon of grated nutmeg, and pepper, whisk until smooth. Place the pan over high heat and bring to a boil. Reduce the heat to medium and simmer for 2 minutes. Remove from the heat. Place the peaches in a mixing bowl and pour the syrup over the peaches. Toss well and cool for 10 minutes.
  • In a mixing bowl, combine the 1/4 teaspoon cinnamon, remaining nutmeg, 1/4 cup brown sugar, flour, pecans, and butter. Using your fingers, work the mixture together until it resembles a coarse crumb-like mixture.
  • Pour the peaches into the prepared pie shell. Sprinkle the topping over the top of the peaches. Bake for 1 hour, or until the crust is golden.
  • Remove the pie from the oven and cool for 15 minutes before slicing. Serve each slice, warm, with a scoop of Vanilla Ice Cream.
  • In a saucepan, combine the cream and sugar. Whisk until smooth. Place the pan over medium heat and bring to a gentle boil. In small mixing bowl, whisk the eggs, vanilla, and remaining 2 teaspoons of cinnamon together. Add 1 cup of the hot liquid to egg yolks. Whisk until smooth. Whisk the egg mixture back into the hot cream. Continue to cook for 4 minutes. Remove from the heat and cool completely. Strain the liquid. Pour the liquid into the electric ice cream container and process according to manufacturer's directions.

2 cups chopped ripe peaches
2 cups blackberries (fresh or frozen)
1 1/2 cups sugar, divided
2 tablespoons lemon juice
1 teaspoon ground cinnamon
2 large eggs
2 cups heavy cream or 2 cups whipping cream
1 cup milk

Steps:

  • Combine the peaches, blackberries, lemon juice and 3/4 c sugar in a bowl.
  • Cover and refrigerate for 1 hour, stirring every 15 minutes.
  • Whisk the eggs in a mixing bowl until light and fluffy, 1 to 2 minutes.
  • Slowly whisk in 3/4 cup of sugar until completely blended.
  • Remove the fruit mixture from the fridge, drain the juice into another bowl and set aside. Return fruit to the fridge.
  • Add the juice mixture, cream, milk and cinnamon to eggs and whisk to blend completely.
  • Pour into your ice cream maker and freeze according to the ice maker's directions.
  • When the ice cream is almost frozen (about 2 minutes before it is done) add the fruit and continue freezing until it is ready.

1 1/3 c finely ground amaretti cookies(italian macaroons)
1 Tbsp granulated sugar
1 pinch salt
1/4 c unsalted butter, melted
FILLING:
3 lb firm but ripe peaches, halved, pitted, cut into 3/4 inch wide wedges
1 c packed golden brown sugar, divided
1 1/2 Tbsp fresh lemon juice
2 1/4 qt vanilla ice cream( 9 cups)
TOPPING:
1/2 c coarsely chopped amaretti cookies, for garnish
2/3 c chilled heavy whipping cream
1 Tbsp golden brown sugar, packed

  • 1. Amaretti cookies are available at supermarkets and Italian markets. For easy application of this recipe use purchased peach ice cream instead of mixing up you own. But let me tell you the roasted peaches are the best.
  • 2. Crust: Preheat oven to 350^ Coat a 9-inch glass pie dish with nonstick spray. Mix the finely ground crumbs, 1 Tablespoon of sugar. and pinch of salt in medium bowl. Add lukewarm melted butter; mix to blend. Press crumbs onto bottom and up sides of dish to form a crust. Bake in oven for 10 minutes.Cool completely on wire rack.
  • 3. Preparing peaches: (if making your own mixture- skip if using store bought peach ice cream). --- Preheat broiler. Line a jelly roll pan with foil. Coat with non stick spray. Arrange peach slices in single layer on sheet. Broil until they begin to brown about 3 to 4 minutes. Sprinkle 1/4 cup of brown sugar over peaches. Broil until sugar melts and caramelizes, rotating sheet for even cooking, 2 to 3 minutes longer. Place peaches and juices to a large bowl- do not use any burnt parts. Add 3/4 cup of brown sugar, lemon juice and salt to peaches; stir until sugar dissolves. Cover; chill until cold , about 2 hours. (I make the peaches the night before to save time.)
  • 4. Next: Slightly soften the vanilla ice cream in microwave on low power in 20 second intervals. Stir to smooth but not soup. Place ice cream in a large bowl. Fold in the yummy peach mixture. They will break apart- that's good. Spoon about 2/3 of the ice cream into the cooled crust; smooth the top. Cover and freeze pie about 4 hours.
  • 5. With the remaining ice cream - make level scoops and arrange in a circle on top of pie. (This pie can be made 2 days ahead. Cover and keep frozen). -- With your electric mixer, beat the whipping cream and the remaining 1 Tablespoon of brown sugar in a medium bowl until stiff peaks form . Sprinkle Coarsely crushed coolie crumbs over pie. Cut into wedges and serve with a dollop of brown sugar whipped cream. Eat Enjoy! This is heaven.

1 (12-ounce) package frozen unsweetened red raspberries, thawed
2/3 cup red currant jelly
2 tablespoons water
1 tablespoon cornstarch
1 quart peach ice cream, softened
1 Keebler® Ready Crust® shortbread pie shell
1 1/2 cups peeled, pitted and sliced fresh peaches

Steps:

  • 1. In medium saucepan cook and stir raspberries and jelly over low heat until combined. Stir togther water and cornstarch. Stir into mixture in saucepan. Cook and stir until mixture thickens and boils. Cook and stir for 1 minute more. Strain, if desired. Refrigerate at least 1 hour or until cooled.2. Spoon half of ice cream into crust. Spread half of raspberry mixture over ice cream in crust. Freeze at least 2 hours or until firm. Layer remaining ice cream on top. Freeze at least 2 hours or until firm.3. Let stand at room temperature for 15 minutes before cutting. Serve topped with peach slices and remaining raspberry mixture. Store pie in freezer and raspberry mixture in refrigerator.

1/4 cup brown sugar
2 ounces unsweetened baking chocolate
1/2 cup semi-sweet chocolate chips
3 cups corn flakes

3 ripe fresh peaches

Steps:

  • Melt butter in medium saucepan.

Add lukewarm melted butter; mix to blend. Press crumbs onto bottom and up sides of dish. Bake until golden around edges, about 10 minutes. Cool completely in dish on rack.
  • Preheat broiler. Line rimmed baking sheet with foil. Coat with nonstick spray. Arrange peaches in even layer on sheet. Broil until beginning to brown, watching closely to avoid burning, 3 to 5 minutes. Sprinkle 1/4 cup brown sugar over peaches. Broil until sugar melts and caramelizes, rotating sheet for even cooking, 2 to 3 minutes longer. Transfer peaches and juices to bowl (leave any burned parts behind). Add 3/4 cup brown sugar, lemon juice, and pinch of salt to peaches; stir until sugar dissolves. Cover; chill until cold, about 2 hours.
  • Slightly soften ice cream in microwave on low power in 20-second intervals. Transfer to large bowl. Add broiled-peach mixture. Fold to incorporate peaches (peaches will break apart). Spoon about 2/3 of ice cream into cooled crust; smooth top. Cover and freeze pie and remaining peach ice cream separately until firm, about 4 hours. Using medium-size ice cream scoop, scoop remaining ice cream in bowl in level scoops and arrange in concentric circles atop pie. Freeze pie. DO AHEAD Can be made 2 days ahead. Cover and keep frozen.
  • Using electric mixer, beat cream and remaining 1 tablespoon brown sugar in medium bowl until peaks form. Sprinkle coarsely crushed amaretti cookies over pie.
