Even people who don't like peas love this crunchy recipe, including my own children. I love the fact that it's so easy and makes a refreshing alternative to more traditional salads. A friend gave me the recipe years ago and I've been making it ever since. -Laurinda Nelson, Phoenix, Arizona

2-1/2 cups frozen peas (about 10 ounces), thawed
1 cup dry roasted peanuts
1 cup chopped celery
6 bacon strips, cooked and crumbled
1/4 cup chopped red onion
1/2 cup mayonnaise
1/4 cup prepared zesty Italian salad dressing

Steps:

  • In a large bowl, combine the first five ingredients. In a small bowl, mix mayonnaise and salad dressing; stir into salad. Refrigerate, covered, until serving.

2 tablespoons butter
4 big carrots, cut into small dice
16 ounces frozen peas
Salt and pepper
Fresh basil leaves, chopped

Steps:

  • Melt the butter in a saute pan over medium heat. Add the carrots and saute until they are tender. Add the peas and salt and pepper to taste and saute until they are thawed and cooked through. Stir in the chopped basil before serving.

TOMATO, SCALLION, AND PEANUT PULAO (PILAF)



Tomato, Scallion, and Peanut Pulao (Pilaf) image

Number Of Ingredients 14

1 cup white basmati rice
2 tablespoons canola oil
2 green cardamom pods, crushed
1/2 stick cinnamon
2 whole cloves
2 tablespoons Ginger-Garlic Paste, recipe follows
8 scallions, white and light green parts, chopped (should make 1/2 cup), green ends sliced thinly and kept separate for garnish
1 (14 1/2-ounce) can diced tomatoes (no salt added)
1 cup water
Kosher salt, for seasoning
1 tablespoon peanuts
1/2 cup cloves garlic, whole
1/2 cup fresh ginger, peeled, 1/2-inch slices
1/4 cup canola oil

Steps:

  • Wash the rice. This is one of the most crucial steps in creating a delicate pulao, where each grain of rice is separate from the other. Pour the rice into a large bowl and fill with fresh water. Gently wash the rice, running your hand through the rice without breaking the grains. The water will go smoky. Pour off the water and fill the bowl again. Wash, drain, and repeat 3 or 4 times until the water runs clear. By washing the rice in this way, you've just removed the excess starch from the rice so the grains won't stick together.
  • In a Dutch oven over medium-high heat, warm the canola oil until it's shimmering, but not smoking. Add the cardamom, cinnamon, and cloves - they should sizzle as they hit the oil. Saute gently until their woodsy aromas waft up into your nostrils.
  • Add the Ginger-Garlic Paste and the chopped scallions and saute 1 minute or so until they soften.
  • Add the rice to the pot, season with salt, and saute gently until the grains aren't sticking together anymore and the rice turns translucent, about 2 minutes. You should also start to smell the basmati's gentle aroma. This smell always reminds me of my mum!
  • Add the can of tomatoes and stir. Cook about 2 minutes to get rid of some of the excess liquid.
  • Add the water and salt and turn the heat up so that the contents of the pot come to a boil. Then turn the heat down as low as it can go, put a lid on it, and cook for 15 minutes. Don't take the lid off at all during this process! Once the 15 minutes are over, resist the temptation to take the lid off again. Let it sit 5 minutes off heat. This will steam the rice and give you a nice, fluffy pulao.
  • Finish with a flourish of peanuts and a sprinkling of the scallion greens and serve.
  • Throw the garlic, ginger, and canola oil in a mini-food processor and let it go until it forms a semi-smooth paste. There will still be tiny little pieces in there, but overall, it should resemble a paste.
  • Save what you don't use in a small glass jar. It should last in the fridge for 2 to 3 weeks. It's a delicious addition to marinades, pasta sauces, stir fry sauces, slow-cooker recipes, gravy etc. We always had a jar of this stuff in our fridge growing up.

MULLIGATAWNY AND GREEN RAITA

1 tablespoon EVOO
4 tablespoons butter
4 cloves garlic, grated
2 medium onions, chopped
2 green apples, peeled and grated
One 2-inch piece fresh ginger, peeled and grated
Kosher salt and freshly ground pepper
1 tablespoon ground coriander
1 tablespoon ground cumin
1 tablespoon turmeric
1 teaspoon ground mustard
3 tablespoons all-purpose flour
6 cups chicken stock
4 cups shredded Poached Chicken Breasts, recipe follows
1 cup plain Greek yogurt
1/4 cup fresh cilantro leaves, plus a few more for garnish
1/4 cup fresh mint leaves
1/4 teaspoon ground cardamom
2 limes
1 1/2 cups basmati rice
Plain or regular naan bread
Melted butter, for brushing
4 whole bone-in, skin-on chicken breasts (for all white meat) or 3 whole 4-pound chickens (for a mix of white and dark meat)
1 tablespoon whole black peppercorns
8 cloves garlic, smashed
4 large bay leaves
4 carrots, coarsely chopped
4 stalks celery, coarsely chopped
2 lemons, sliced
2 onions, quartered
Herb bundle of fresh parsley, rosemary and thyme tied with kitchen string
Kosher salt

Steps:

  • Heat the EVOO in a Dutch oven over medium-high heat and melt the butter into the oil. Add the garlic, onions, 1 apple and the ginger and season with salt and pepper. Cook until tender, 7 to 8 minutes. Add the coriander, cumin, turmeric and ground mustard and cook, stirring, until fragrant. Add the flour and cook, stirring, for 1 minute. Add the stock and simmer until thickened to the consistency of a light sauce, about 20 minutes. Stir in the chicken.
  • Put the remaining apple in a food processor with the yogurt, cilantro and mint. Pulse to combine. Add the cardamom and the juice of 1 lime and season with salt and pepper. Whizz to combine. Refrigerate until ready to serve.
  • To serve, prepare the rice according to the package directions. Cut the remaining lime into wedges. Heat a griddle or grill pan over medium-high heat and splash some water on it, then grill the naan and brush with melted butter. Ladle the mulligatawny into shallow bowls and top with the rice and a dollop of raita. Serve the naan and lime wedges on the side.
  • Put the chicken in a very large stockpot or divide between 2 pots if necessary. Add the peppercorns, garlic, bay leaves, carrots, celery, lemons, onions and herb bundle and sprinkle with salt. Add enough water to cover the chicken. Bring to a boil, then reduce the heat to low and cook at a rolling simmer for 1 1/2 hours. Remove the chicken from the liquid and let cool. Strain the stock. (You should have 5 to 6 quarts stock.) Remove the skin and bones from the chicken, and shred the meat using your hands or 2 forks.

3/4 cup low-fat mayonnaise
2 tablespoons minced green onions
1 tablespoon lemon juice
10 ounces frozen peas
10 ounces Spanish peanuts

Steps:

  • Mix the first 3 ingredients together and chill 1-2 hours.
  • Under cook the peas (I just run hot water over them to defrost).
  • Drain well and chill peas until cold.
  • WHEN READY TO SERVE:.
  • Mix the peas and peanuts (you should have an equal volume of both).
  • Stir the dressing in and serve at once (Do NOT mix in the dressing early).
