Found this wonderful recipe on a long distance runners blog. Wonderfully creamy and easy to make. Adjust the flour and milk depending on how creamy or thick you want your sauce. Ingredients as is will give you a very thick sauce.

Number Of Ingredients 9

1 lb pasta
2 tablespoons butter, separated
1 onion, finely chopped
4 garlic cloves, minced
1 cup dry white wine
salt & pepper
1/4 cup flour
1 cup milk
1 lb crabmeat

Steps:

  • Cook pasta and set aside.
  • Melt butter in small skillet. Add garlic and onion and cook until tender. Add wine and cook until liquid reduces to half. Add salt and pepper.
  • In large skillet, heat 1 tbs butter and flour. Cook until smooth. Add milk slowly, stirring to smooth out. Add onion mixture, stir, Add crab meat, stir. Add pasta and stir.
  • Serve with grated romano cheese.

PASTA AND HERBED CREAM SAUCE

12 ounces spaghetti, fettuccine or linguine
4 tablespoons unsalted butter
1 tablespoon minced fresh rosemary, or 1 teaspoon dried
1 cup heavy cream
Salt and freshly ground black pepper
Freshly grated nutmeg, to taste
1/2 cup freshly grated Parmesan cheese (or to taste)
2 tablespoons minced fresh parsley

Steps:

  • In a large pot of boiling salted water add the spaghetti and cook until it is al dente. Meanwhile, in a large skillet set over moderately low heat, melt the butter, add the rosemary and cook it, stirring, for 1 to 2 minutes. As soon as the pasta is cooked, drain and add it to the pan. Add the cream, salt, pepper and nutmeg. Toss to coat and let reduce 1 to 2 minutes, gently stirring, or until lightly thickened. Add Parmesan to taste, toss to combine and transfer to serving dish. Sprinkle with parsley.

Creamy Pasta with Imitation Crab image

Creamy pasta sauce with imitation crab that is ready with little prep but ends up with lots of flavor.

2 tablespoons olive oil
1 medium onion, diced
6 cloves garlic, minced
1 pound imitation crabmeat, diced
1 (16 ounce) package rotini pasta
1 cup half-and-half
½ cup chopped fresh parsley
⅓ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil.
  • At the same time, heat oil in a large saucepan over medium heat. Add onion and garlic to the hot oil; cook until translucent, about 5 minutes. Stir in imitation crab and heat for 2 minutes.
  • Begin cooking rotini. Add to the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes.
  • While the pasta is cooking, stir half-and-half and parsley into the crab sauce; bring to a simmer. Continue to simmer crab sauce, adding pasta water as necessary, while pasta is finishing.
  • Drain pasta.
  • Mix Parmesan cheese into crab sauce and heat until melted, about 2 minutes. Serve over pasta.

This is a creation of my own that resulted from too much white sauce when I made another recipe from here. So, I played around with what I had in the house and came up with this tasty meal. It actually uses imitation crabmeat instead of real crab. It's very mild, so feel free to spice it up if you prefer.

8 ounces penne (any pasta may be used)
2 tablespoons butter
1 small onion, finely chopped
2 tablespoons flour
8 ounces clam juice
1 cup half-and-half cream
1/2 teaspoon garlic powder
1 cup imitation crabmeat
cilantro (optional) or parsley, for garnish (optional)

Steps:

  • Cook the pasta as directed on the box.
  • Meanwhile, in a saucepan, melt the butter over medium heat.
  • Add the onion and cook, stirring often until softened, for about 5 minutes.
  • Stir in the flour and cook for about 1 minute.
  • Stir in the clam juice, cream and garlic powder.
  • Bring to a boil, stirring continuously.
  • Drain pasta and return to the pot.
  • Stir in the imitation crab and cream sauce.
  • Toss to combine all the ingredients.
  • Garnish with cilantro or parsley if desired.

1/3 cup extra-virgin olive oil
2 tablespoons slivered or minced garlic
2 dried red chilies, or to taste
1 pound pasta
1/2 pound crab meat, or more
1/4 cup chopped fresh parsley leaves

Steps:

  • Bring a large pot of water to a boil, and salt it. Put oil, garlic, chilies and a pinch of salt in a saucepan large enough to hold cooked pasta and turn heat to medium-low. Cook, shaking pan, until garlic just begins to color; turn off heat.
  • When water boils, cook pasta. When it is just about done, turn heat under oil back to low and add crab; stir once or twice. Drain pasta (reserve a bit of cooking water), and toss it in crab sauce to coat. If mixture seems a bit dry, add reserved cooking water or more olive oil. Stir in parsley, adjust seasoning, and serve.

PASTA WITH NED'S CREAMY CRAB SAUCE

In the minds of many West Coast chefs, the Dungeness crab is the ocean's finest crustacean. Canadian chef Ned Bell, who attended the 2004 Workshop, showcases the sweet meat in this pasta sauce, which gets some of its creamy body from pureed cauliflower. The dish is rich and worthy of the spotlight, so balance it with a simple butter lettuce salad in a tangy vinaigrette.

Yield serves 6 to 8

Number Of Ingredients 13

2 tablespoons unsalted butter
1/2 small yellow onion, diced
2 cloves garlic, minced
2 cups (about 1/2 medium head) chopped raw cauliflower
2 cups whole milk
1/4 teaspoon red chile flakes
Kosher salt
1/2 cup mascarpone
1 tablespoon Dijon mustard
1 pound short dried pasta, such as fusilli or penne
1 cup grated aged white Cheddar cheese
1/2 pound Dungeness crab meat
2 tablespoons thinly sliced fresh chives

Steps:

  • Melt the butter in a medium saucepan over moderate heat. Add the onion and garlic and sauté until the onion softens slightly, about 5 minutes. Add the cauliflower, milk, chile flakes, and 1 teaspoon salt. Bring just to a simmer, then adjust the heat to simmer gently. Cook, uncovered, until the cauliflower is tender, 10 to 15 minutes. Puree in a blender. Transfer to a bowl and whisk in the mascarpone and mustard.
  • Bring a large pot of salted water to a boil over high heat. Add the pasta and boil until al dente. Drain and return the pasta to the warm pot. Add the cauliflower sauce and Cheddar and toss over moderately low heat until the cheese melts. Taste for salt. Add the crab meat and chives and toss again. Serve immediately in warm bowls.
  • Enjoy with Cakebread Cellars Napa Valley Chardonnay or another full-bodied white wine.
