ONE-PAN PASTA WITH WILD MUSHROOMS, ZUCCHINI AND BASIL



One-Pan Pasta with Wild Mushrooms, Zucchini and Basil image

Number Of Ingredients 13

2 to 3 tablespoons extra-virgin olive oil
8 ounces cremini mushrooms, stemmed and thinly sliced
6 ounces oyster mushrooms, torn into 2-inch pieces
6 ounces shiitake mushrooms, trimmed of woody ends and quartered
2 cloves garlic, finely minced or grated
Kosher salt and freshly ground black pepper
1/4 to 1/2 teaspoon crushed red pepper flakes
One 13.5-ounce can coconut milk, such as Chaokoh
3 cups water
2 tablespoons nutritional yeast
10 ounces orecchiette pasta
3 medium zucchini, cut into 1-inch dice (about 4 1/2 cups)
1/2 cup packed basil leaves, finely chopped, plus more leaves for garnish

Steps:

  • Heat a 13-inch nonstick skillet over medium heat. Add the oil. Add the mushrooms in batches and cook, stirring occasionally until golden brown before adding more mushrooms, 10 to 12 minutes total. Reduce the heat to medium-low and add the garlic, 1 1/2 teaspoons salt, 1/2 teaspoon black pepper and the crushed red pepper flakes. Stir together.
  • Add the coconut milk, water and nutritional yeast to the skillet. Stir together and taste for seasoning and add more salt or black pepper, if needed. Add the pasta and zucchini and stir, making sure the pasta is submerged in the liquid.
  • Cover with the lid and simmer for 12 minutes, stirring every 3 to 4 minutes. Uncover and add the basil. Stir and simmer uncovered until the sauce has thickened and the pasta is al dente, 5 to 6 minutes.
  • Scoop into small shallow bowls and top with more basil and black pepper.

I bought some zucchini at a farmers' market today. In the fridge, I had fresh mushrooms and decided on this recipe. It's a great way to enjoy garden vegetables of the summer season. This can easily be expanded for more servings.

2 tablespoons olive oil
1/2 tablespoon minced garlic
1/2 cup fresh mushrooms, sliced
1/2 cup zucchini, diced
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon red pepper flakes
1 cup cooked angel hair pasta (or pasta of choice)
salt and pepper

Steps:

  • -Saute minced garlic in 2 Tbsp olive oil for 2-3 min over med-high heat.
  • -Add mushrooms and zucchini, and saute for 5 minute.
  • -Add seasonings.
  • -Cook angel hair pasta according to package directions.
  • -Using tongs, add pasta to the vegetable mixture, and toss gently.
  • -Enjoy with fresh rolls or garlic bread.

1/2 cup chopped onion
1 cup diced trimmed zucchini (1 1/2 inch dice)
1 cup diced mushroom
2 garlic cloves, minced
1 cup chopped fresh tomato
1/2 teaspoon salt
1/4 cup chopped fresh Italian parsley
2 tablespoons chopped fresh basil
1 lb penne, cooked al dente and drained

Steps:

  • Heat the oil in a wide saucepan; add in onion; stir/saute 5 minutes.
