4 1/2 ounces penne pasta
1 1/2 tablespoons olive oil
1/2 cup chopped onion
2 garlic cloves, chopped
6 large plum tomatoes, peeled and coarsely chopped
1 sprig fresh thyme or 1/4 teaspoon dried thyme
1 cup julienne-cut fresh basil
salt
fresh ground pepper
2 tablespoons pine nuts, toasted

Steps:

  • In large pot boil pasta until al dente. Drain.
  • In heavy skillet, over medium heat, heat oil. Add onion and garlic; saute until tender. Add tomatoes and thyme; cook stirring frequently, until tomatoes are hot, yet still retain their shape and most of the liquid has evaporated, about 5 minutes.
  • Remove and discard fresh thyme sprig, if used. Add basil and drained pasta; toss until heated.
  • Transfer to serving bowl; season to taste with salt and pepper and sprinkle evenly with pine nuts.

2 medium tomatoes, diced
1 garlic clove, minced
2 tablespoons olive oil
8 ounces angel-hair pasta
2 tablespoons pine nuts, toasted if desired

Steps:

  • Bring a large pot of salted water to a boil. Meanwhile, combine tomatoes, garlic, and oil in a medium bowl. Season with salt and pepper. Let stand at least 10 minutes.
  • Cook pasta in boiling water until al dente; drain, and return to pot. Add tomato mixture, and toss to combine. Serve sprinkled with pine nuts.

1 lb bow tie pasta
1/4 cup olive oil
3 tablespoons pine nuts, toasted
1 tablespoon garlic, minced
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
4 plum tomatoes, diced
1/2 cup kalamata olive, pitted and chopped
1 cup feta cheese, crumbled

Steps:

  • Heat water and cook pasta according to package directions.
  • Heat olive oil in a medium skillet, over medium heat.
  • Add garlic and saute, but do not let brown.
  • Add toasted pine nuts.
  • Add spices and stir.
  • Add tomatoes and olives and saute for about 3 minutes, until heated through and softened.

2 cups fresh basil, firmly packed
1/2 cup fresh parsley
1/2 cup parmesan cheese
3 large garlic cloves
1 teaspoon salt
1/4 cup pine nuts
1/2 cup extra virgin olive oil
1 tablespoon white vinegar
1 lb pasta, cooked and kept warm
6 plum tomatoes, seeded and chopped
salt & pepper
3 tablespoons pine nuts, toasted

Steps:

  • For the pesto, in a food processor or blender, finely chop basil,parsley, parmesan cheese, garlic ,salt and the 1/4 Cup of pine nuts.
  • Add the olive oil and vinegar.
  • Blend until it's the consistency of creamed butter.
  • Toss warm pasta with pesto using as much or as little pesto as you prefer, but make sure to coat the pasta.
  • Add chopped tomatoes, tossing well.
  • Salt & pepper to taste.
  • Serve in your favorite pasta bowl with toasted pine nuts.
  • To toast the pine nuts, lightly brown them in your toaster oven or in a little olive oil until golden.
