1/2 lb. fettuccine, uncooked
1 Tbsp. butter or margarine
1 cup coarsely chopped leeks
1/4 cup coarsely chopped pecans
1-1/2 cups OSCAR MAYER Smoked Ham strips
1/4 cup Madeira wine
1 clove garlic, minced
1 tub (8 oz.) PHILADELPHIA Cream Cheese Spread
2 Tbsp. milk
1/2 cup ATHENOS Crumbled Blue Cheese

Steps:

  • Cook pasta as directed on package, omitting salt. Meanwhile, melt butter in skillet on medium heat. Add leeks and nuts; cook and stir 5 min. or until leeks are tender. Add ham; cook 3 min. or until heated through, stirring occasionally. Set aside.
  • Cook wine and garlic in medium saucepan on low heat 1 min. Add cream cheese spread and milk; cook until cream cheese spread is melted and mixture is blended, stirring occasionally. Remove from heat; stir in blue cheese.
  • Drain pasta; place in large serving bowl. Add ham mixture and cheese sauce; mix lightly.

1 (16 ounce) box tagliatelle pasta
2 tablespoons olive oil
1 cup heavy cream
3 ½ ounces crumbled blue cheese
⅔ teaspoon garlic powder
1 teaspoon lemon juice
1 pinch salt
1 pinch ground black pepper
1 pinch ground white pepper
1 pinch ground nutmeg
1 pinch dried oregano
1 pinch dried basil
1 tablespoon toasted walnuts, chopped

Steps:

  • Bring a large pot of lightly salted water to a boil. Boil the tagliatelle until cooked through yet slightly firm, 8 to 10 minutes; drain.
  • Drizzle olive oil over the cooked pasta and toss gently to coat.
  • Heat the cream in a saucepan over low heat until warm; stir in the blue cheese, garlic powder, lemon juice, salt, black pepper, white pepper, nutmeg, oregano, and basil. Cook very gently until the blue cheese has melted and the sauce is hot, but don't let the sauce boil.

When creamy Gorgonzola dolce hits a pot full of hot pasta, it melts into a rich and complex sauce without your having to do much more than stir. Here, the pasta and sauce are tossed with roasted cauliflower and caramelized, browned leeks. It's comfort food, but with a blue-cheese bite.

1 head cauliflower, cut into 3/4-inch florets
1/4 cup extra-virgin olive oil
3/4 teaspoon kosher salt, more as needed
1 teaspoon freshly ground black pepper
1 large or 2 small leeks, halved and thinly sliced
2 cloves garlic, thinly sliced
1 tablespoon thyme leaves, more for serving
8 ounces short pasta such as campanelle, orecchiette, conchiglie, farfalle or fusilli
3 tablespoons unsalted butter, cubed, at room temperature
6 ounces Gorgonzola dolce, crumbled, at room temperature
Fresh lemon juice, to taste
2 tablespoons chopped chives, for serving

Steps:

  • Heat oven to 425 degrees. In a large bowl, toss cauliflower with olive oil, salt and 1/4 teaspoon pepper. Spread onto a rimmed baking sheet in an even layer, and bake for 20 minutes.
  • Add leeks, garlic and thyme to the cauliflower on the sheet pan, then roast another 20 minutes, tossing the vegetables halfway through, until they are very tender and deeply caramelized.
  • Meanwhile, bring a large pot of heavily salted water to a boil. Cook pasta until it is 1 minute shy of being al dente. (It will continue to cook in the residual heat of the pot.) Scoop out about 1 cup pasta water (a coffee mug is good for this), then drain pasta. Return the pasta to the empty pot, along with butter, Gorgonzola, remaining 3/4 teaspoon pepper and 1/2 cup pasta water, stirring to melt cheese.
  • Toss roasted vegetables into pasta, then stir in lemon juice and salt and pepper to taste. Add more pasta water if mixture looks dry. To serve, spoon into bowls and top with chives and sprinkle of thyme leaves.

4 tablespoons butter
1 head garlic, chopped
1 small onion, chopped
1/3-1/2 cup crumbled blue cheese
1/3-1/2 cup parmesan cheese
salt and pepper
1 lb pasta (I use penne)

Steps:

  • While the pasta is boiling: Melt butter in sauce pan over med-low.
  • Add onion and garlic saute about 5 minutes.
  • Pour in half& half, let heat through.
  • Wisk in blue and parmesan cheeses.
  • Salt and pepper to taste.
  • Sauce will thicken a bit upon standing.
  • Toss with cooked pasta.

This fall pasta combines the robust taste of blue cheese with seasonal beets.

2 pounds small red or golden beets, scrubbed well
1 clove garlic, minced
1/4 cup fresh orange juice
2 tablespoons olive oil
1/2 teaspoon ground coriander
Coarse salt and ground pepper
1 pound gemelli, or other short tubular pasta
6 ounces blue cheese, crumbled (1 cup)

Steps:

  • Preheat oven to 400 degrees. Place beets in a 9-by-13-inch baking dish; add 1/2 cup water. Seal dish tightly with foil. Bake beets until tender when pierced with the tip of a sharp paring knife, 45 minutes to 1 hour. Let cool 10 minutes. Using a paper towel, rub off skins. Slice beets into wedges.
  • In a large bowl, toss beets with garlic, orange juice, oil, and coriander; season with salt and pepper.
  • Cook pasta in a large pot of boiling salted water until al dente, according to package instructions. Drain pasta, reserving 1 cup of cooking water. Return the pasta to the pot; toss with half of the blue cheese and enough reserved pasta water to coat pasta. Season with salt and pepper.
  • Divide the pasta mixture among plates; top with beets and remaining blue cheese. Serve immediately.
