PASTA AND LENTILS (PASTA E LENTICCHIE)



Pasta and Lentils (Pasta e Lenticchie) image

This classic Neapolitan dish's heartiness comes from cooking pasta with lentils so that the starches thicken the liquid into something creamier and richer than a basic lentil soup. There are many versions of this peasant food, including ones with pancetta, carrots, parsley or Parmesan rinds; some also use a hodgepodge of pasta shapes from half-empty boxes - it's a true pantry meal. Brown lentils will fall apart more quickly than green, but they'll create a luscious sauce either way. Stir the pasta often, especially towards the end of cooking, and add more water if the pot is dry (the sauce will thicken as it cools). Leftovers will keep for up to 3 days refrigerated; warm over low heat and add water to loosen.

3 tablespoons extra-virgin olive oil, plus more for serving
1 yellow onion, coarsely chopped
8 garlic cloves, smashed and peeled
Kosher salt (Diamond Crystal) and black pepper
1 cup brown or green lentils
3 thyme sprigs (optional)
3 fresh or dried bay leaves (optional)
1 (28-ounce) can whole peeled tomatoes, cut in the can with scissors
10 ounces tubular or ridged pasta, like penne or radiatore (or use long noodles broken into pieces)
1/2 cup freshly grated Parmesan, plus more for serving

Steps:

  • In a large pot or Dutch oven, heat the oil over medium-high. Add the onion and garlic, season with salt and pepper, and cook, stirring occasionally, until golden brown and tender, 5 to 7 minutes. Add 5 cups of water, the lentils, the thyme and bay leaves (if using). Partially cover, bring to a boil, then reduce heat and simmer, partially covered, until the lentils are al dente, 25 to 30 minutes.
  • Add the tomatoes and 1 teaspoon salt, and bring to a boil over high. Add the pasta and cook, stirring often to keep the pasta from sticking to the pot, until the pasta is al dente, 10 to 20 minutes. (It may take longer than the cook time on the package.) If the pot starts to look dry at any point, add more water, 1/4 cup at a time.
  • Turn off the heat, discard the thyme and bay leaves, then stir in the Parmesan. Cover and let sit for 3 minutes so the flavors meld and the sauce thickens. Season to taste with salt and pepper. Eat with more Parmesan and a drizzle of olive oil.

1/2 cup French (small) green lentils
2 cups water
3/4 teaspoon salt
6 tablespoons extra-virgin olive oil
1 large onion, finely chopped (2 cups)
1/4 teaspoon black pepper
3/4 pound kale (preferably Tuscan; sometimes labeled "lacinato")
3/4 pound dried short pasta
Accompaniments: toasted bread-crumb topping and/or grated Parmigiano-Reggiano

Steps:

  • Simmer lentils in water (2 cups) with 1/4 teaspoon salt in a 1- to 1 1/2-quart saucepan, uncovered, adding more water if necessary to keep lentils barely covered, until tender but not falling apart, 20 to 25 minutes. Remove from heat and season with salt.
  • While lentils simmer, heat 1/4 cup oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté onion with pepper and remaining 1/2 teaspoon salt, stirring, 1 minute. Reduce heat to low and cook, covered, stirring occasionally, until onions are soft and golden (stir more frequently toward end of cooking), about 20 minutes. Remove lid and increase heat to moderate, then cook, stirring frequently, until onion is golden brown, 5 to 10 minutes more.
  • While onion cooks, cut out and discard stems and center ribs from kale. Cook kale in a 6- to 8-quart pot of boiling salted water , uncovered, stirring occasionally, until just tender, 5 to 8 minutes. Transfer kale with tongs to a colander to drain, pressing lightly. Keep pot of water at a boil, covered.
  • Coarsely chop kale and add to onion along with lentils (including lentil-cooking liquid), then simmer, stirring, 1 minute. Season with salt and pepper.
  • Add pasta to kale-cooking liquid and boil, uncovered, until al dente. Reserve about 1 cup pasta-cooking liquid, then drain pasta in a colander. Add pasta to lentil mixture along with about 1/3 cup of pasta-cooking liquid (or enough to keep pasta moist) and cook over high heat, tossing, 1 minute. Season with salt and pepper and drizzle with remaining 2 tablespoons oil.

3 tablespoons finely chopped fresh Italian parsley
Additional extra-virgin olive oil
Additional grated pecorino Romano cheese

Steps:

  • Cook lentils in small saucepan of boiling water until tender, stirring occasionally, about 20 minutes. Drain well; set aside.
  • Heat 2 tablespoons oil in heavy large skillet over medium-high heat. Add onion and sausage; sauté until sausage is light brown, about 8 minutes. Add wine and cook until almost all liquid evaporates, about 2 minutes. Stir in cooked lentils and cook until mixture is heated through, about 3 minutes. Season to taste with salt and pepper.
  • Meanwhile, cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain well, reserving 1cup pasta cooking water. Return cooked pasta to pot. Add sausage-lentil mixture, 3/4 cup cheese, and parsley and toss to coat. Add enough reserved pasta cooking water to moisten. Season to taste with salt and pepper. Serve, passing additional olive oil and grated cheese.

2 garlic cloves
1 dried bay leaf
1 pound small whole-wheat chiocciole or other small tubular pasta

4 leeks (about 1 3/4 pounds), white and light-green parts only, sliced into 1/8-inch rounds, washed well and drained
1 teaspoon chopped fresh thyme
1 1/2 teaspoons coarse salt

8 ounces baby spinach, washed

Steps:

  • In a medium saucepan, combine lentils, 1 garlic clove, and the bay leaf. Add enough cold water to cover by 2 inches. Bring to a boil over medium-high heat. Reduce heat to medium-low, and simmer until lentils are tender, 20 to 25 minutes. Drain, and discard garlic clove and bay leaf; set the lentils aside.
  • Bring a large pot of water to a boil. Add pasta; cook until al dente according to package instructions, about 7 minutes. Drain pasta, reserving 1 cup cooking liquid. Place pasta in a large bowl.
  • Meanwhile, mince remaining garlic clove. In a large saute pan, heat oil over medium heat. Add minced garlic, leeks, and thyme; cook, stirring occasionally, until leeks are soft but not browned, about 5 minutes. Add cooked lentils and salt; season with pepper.

1 large onion, cut in half and sliced
6-7 tablespoons extra-virgin olive oil
1/2 cup large green or brown lentils
4 ounces dry tagliatelle nests
Salt and black pepper
Large handful of chopped flat-leaf pars

Steps:

  • Sauté the onion in 2 tablespoons of the oil in a skillet over low heat, until brown and caramelized, stirring often. Cook with the lid on for 5 minutes, then turn heat to medium low, remove lid and cook another 10 to 15 minutes.
  • Rinse the lentils and boil them in plenty of water until they are only just tender. Some lentils take as little as 10 minutes, others much longer. You should watch them.
  • Break the tagliatelle into pieces by crushing the nests in your hand, and drop them into the pan with the lentils - there should be enough water to cover them. Add salt, stir and boil vigorously until the pasta is cooked al dente. Drain quickly, and toss gently with the remaining olive oil, the fried onions, a little salt and pepper and the parsley.

Steps:

  • Heat oil in a large skillet over medium-low heat. Add onions and 1/2 teaspoon salt; cover, and cook until onions wilt, about 20 minutes. Uncover; raise heat to medium. Cook, stirring often, until onions are dark brown, 20 to 25 minutes more.
  • Add 1/4 cup water; stir to loosen any browned bits from pan. Stir in tomatoes; remove from heat.

1 lb whole wheat pasta shells
1/2 cup fresh parsley, finely minced

Steps:

  • Cook lentils, carrot, and celery leaves in 1 quart water for 15-20 minutes or until lentils are almost tender. Drain the lentils, and reserve the cooking water.
  • Meanwhile, heat olive oil in large skillet. Add onions and thyme, and sautee for 10-12 minutes.
  • Add the lentils to the skillet along with 1 cup of the reserved broth. Squeeze excess moisture from the spinach before adding to the skillet. Season with salt and pepper to taste. Simmer over low heat while pasta cooks.
  • Cook pasta according to package directions. Drain and toss with lentil sauce. Add more lentil broth if too dry. Add parsley and serve with grated Parmesan (or nutritional yeast) if desired.

2 cups water, or more if needed
1/2 teaspoon salt, plus more to taste

Steps:

  • Heat the broth with the additional 2 cups of water to a boil. Stir in the salt, several grinds of pepper, and the rinsed lentils. Return to a gentle boil, and cook, covered, for 35 to 40 minutes, until the lentils are tender-add more hot water as needed.
  • Taste, and add more salt to balance the pasta: stir in the ditalini and cook for 12 minutes or more, until the pasta is to your liking. Add hot water to thin the soup too, if necessary. Adjust the seasoning one last time, and serve right away in warm bowls, with freshly grated cheese, extra-virgin olive oil, and other garnishes (see page 60).

1 medium onion, finely chopped

1/2 tablespoon olive oil
1/2 tablespoon chopped garlic
1 (16 ounce) can tomato sauce
1/2 cup water
1/4 cup white vinegar
1 large onion, thinly sliced
3/8 lb dried brown lentils
1/2 lb elbow macaroni (or any other compact pasta shape) or 1/2 lb ditalini (or any other compact pasta shape)
2 cups long-grain rice
3 cups water
2 cinnamon sticks
3 cardamom pods
1/2 teaspoon whole cumin seed
1/2 teaspoon whole coriander seed
4 1/2 tablespoons olive oil
salt
ground black pepper

Steps:

  • For the Tomato and Garlic sauce: Pour olive oil into a medium-sized saucepan set over medium heat. Add garlic and cook until fragrant, about 30 seconds. Add the tomato sauce. Simmer until slightly thickened, about 10 minutes. Add the water and vinegar, and turn the heat to high. When it starts to boil, immediately turn off the heat. Transfer to a medium-sized bowl, season with salt to taste, and set aside.
  • For the Koshary: Pour one tablespoon of olive oil into a large, heavy skillet set over medium-high heat. When shimmering, add onion and stir well. Once coated in the oil, reduce heat to low and cook until heavily caramelized, about 45 minutes to an hour. Stir often.
  • Meanwhile, preheat the oven to 350°F Also, fill a medium-sized pot with water, salt heavily and bring to a boil over high heat. Cook the pasta until al dente, then remove to a bowl with a strainer. Toss with 1 tbsp olive oil.
  • Bring water back to the boil. Add the lentils, and then reduce heat to medium-low. Simmer until cooked, but still al dente, about 15 minutes. Drain lentils and set aside to cool.
  • Pour two tablespoons of olive oil into a dutch oven set over medium heat. Add the cinnamon sticks and stir until fragrant. Add the cardamom, cumin, and rice. Stir well; cook until the spices are aromatic and the rice is mostly opaque. Add water. Bring to a boil, stir well and cover. Place in the oven and cook for 13 minutes. If done, fluff with a fork, and season with salt to taste.
  • Place a skillet over medium-high heat. Add 1/2 tablespoon of oil. When shimmering, add the pasta. Let it cook undisturbed for about a minute, or until it begins to get brown and a little crusty on the bottom. Toss well, and cook until it is toasty and slightly chewy. Transfer pasta to a bowl.
  • Add another 1/2 tablspoon of oil to the pan. When shimmering, add the lentils and cook them until they are slightly toasted, about 30 seconds a side. Transfer them to another bowl.
  • Scoop out some rice onto a plate. Top with a scoop of pasta, lentils, tomato sauce, and some of the caramelized onions.

PASTA WITH LENTILS AND ARUGULA



Pasta with Lentils and Arugula image

Orecchiette are small ear-shaped pasta shells; fusilli or farfalle can be used instead. You can also replace the arugula with two cups whole fresh flat-leaf parsley leaves.

2 tablespoons olive oil
2 large onions, halved and thinly sliced (4 cups)
Coarse salt and fresh ground pepper
12 ounces plum tomatoes, cored and diced (about 2 cups)
3/4 cup lentils, picked over and rinsed
12 ounces orecchiette pasta
1 bunch (8 ounces) arugula, stemmed and coarsely chopped
1/2 cup finely grated Parmesan cheese, plus more for serving (optional)

Steps:

  • Heat the oil in a large skillet over medium-low heat. Add the onions and 1/2 teaspoon salt; cover, and cook until the onions wilt, about 20 minutes. Uncover; raise the heat to medium. Cook, stirring often, until the onions are dark brown, 20 to 25 minutes more.
  • Add 1/4 cup water; stir to loosen any browned bits from the pan. Stir in the tomatoes; remove from the heat.
  • Meanwhile, in a medium saucepan, cover the lentils with water by 1 inch. Bring to a simmer. Cover; cook until the lentils are tender but still holding their shape, 15 to 20 minutes. Drain; stir into the onion mixture. Season with salt and pepper.
  • In a pot of salted water, cook the pasta until al dente according to the package instructions. Reserve 1 cup of the pasta water; drain the pasta, and return it to the pot.
  • Add the lentil mixture, arugula, cheese, and reserved pasta water; toss. Season with salt and pepper. Serve with more cheese, if desired.
  • Before using, always wash arugula well in several changes of cold water, until you no longer see any grit in the bottom of the bowl.

3/4 cup lentils
3 cups water
1/2 teaspoon salt
4 cups fresh tomatoes, coarsely chopped (I used one 28-oz can of crushed tomatoes)
2 garlic cloves, minced
1 fresh green chile, chopped
1 tablespoon vegetable oil
1 tablespoon red wine vinegar
1 teaspoon salt
1 cup white basmati rice
1 teaspoon vegetable oil
1 1/2 cups water
1/2 teaspoon salt
vegetable oil
4 cups thinly sliced small onion
1/4 teaspoon salt
1 1/2 quarts salt water
1 1/2 cups elbow macaroni
plain yogurt (for topping)

Steps:

  • in a small covered saucepan, bring the lentils, water and salt to a boil.
  • Reduce the heat and simmer till tender, about 40 minutes, stir occasionally.
  • when the lentils are done, drain them if all the water has not been absorbed.
  • while the lentils cook, puree the tomatoes, garlic, chile, oil, vinegar and salt in a blender.
  • Transfer to a small saucepan and bring to a boil.
  • reduce the heat and simmer briskly, uncovered, until thick, about 20-25 minutes.
  • stir occasionally, as the sauce begins to cook, and more frequently as it begins to thicken.
  • while the lentils and hot sauce simmer, cook the rice. rinse the rice well in a sieve and drain.
  • warm the oil in a saucepan and add the rice, water and salt.
  • Cover and bring to a boil, then reduce the heat and simmer on very low heat, till the water is absorbed and the rice is done, about 15 minutes.
  • meanwhile, pour about 1/2 inch oil inot a medium cast iron or nonstick skillet. on high heat, warm the oil till it is very hot, almost smoking.
  • Add about half of the onions,fry, stirring often until the onions are quite brown, about 10 minutes.
  • remove and drain on paper towels.
  • Sprinkle the onions with 1/8 t of salt.
  • repeat with the rest of the onions.
  • as you begin to fry the second batch of onions, bring a pot of salted water to a boil for the macaroni. by now, the hot sauce has probably finished cooking, so you have a free burner.
  • cook the pasta till al dente and then drain.
  • to serve, mound the lentils, macaroni, and rice in adjoining piles on a large platter.
  • sprinkle with the fried onions and top with some of the hot sauce.
  • serve immediately and serve with more hot sauce.

I came across this recipe on waitrose.com.It is a Lebanese dish called rishta bi.The pasta is usually cooked in the same water as the lentils, giving an earthy colour and flavour. I haven't had a chance to try this yet, but it does sound absolutely delicious and healthy too....

1 large onion, sliced
6 tablespoons extra virgin olive oil
100 g large green lentils or 100 g brown lentils
100 g dried egg tagliatelle pasta noodles
20 g flat leaf parsley, chopped

Steps:

  • Slowly fry the onion in 2 tbsp oil for 15-20 minutes until brown and caramelised, stirring often.
  • Rinse the lentils and boil them in plenty of water until they are just tender.
  • Crush the tagliatelle in your hand and drop the pieces into the pan with the lentils - there should be enough water to cover them.
  • Add salt, stir and boil vigorously for 6-7 minutes,until the pasta is cooked al dente.
  • Drain, adjust the seasoning, and toss with the remaining olive oil, the fried onion and the parsley.
  • Can be eaten hot or at room temperature.

5 cups water
3/4 cup lentils
2 large cloves garlic, crushed
3 tablespoons extra virgin olive oil
1 cup chopped canned plum tomatoes, with some juice
2 teaspoons salt
1/4 teaspoon salt
1/2 pound vermicelli or capellini, or small tubular pasta, or pasta mista
2 rounded tablespoons finely cut or snipped parsley
Optional garnish; extra virgin olive oil and hot red pepper flakes or hot pepper oil

Steps:

  • In a medium saucepan, bring the water to a rolling boil, add the lentils, and cook, covered over a medium high heat, until nearly but not entirely tender, about 20 minutes.
  • Add the garlic, olive oil, tomatoes, salt and pepper. Reduce the heat, cover and continue to simmer briskly for another 10 minutes, stirring a few times, or until the lentil are fully tender.
  • If using capellini, break it into 2 to 4 inch pieces and add them to the lentils. Cook, covered, at a steady simmer, stirring several times and scraping the bottom of the pot when you do. Cook until the pasta is just done, stirring more frequently as it gets closer to that point. If using a small tubular pasta or pasta mista, cook the pasta at least halfway in plenty of salted boiling water. Drain the pasta, add it to the lentils, and simmer to finish cooking the pasta.
  • When either pasta is cooked to taste, remove the pot from the heat, stir in the parsley, cover the pot, and let stand about 5 minutes before serving. Serve hot, passing hot pepper oil all the best quality extra virgin olive oil for drizzling on top.
