4 medium onions, thinly sliced
3 large parsnips, peeled and thinly sliced
1-1/2 cups shredded Gruyere or Swiss cheese, divided
1 tablespoon all-purpose flour
3/4 teaspoon salt
1/4 teaspoon pepper
2 cups heavy whipping cream

Steps:

  • Layer the potatoes, onions, parsnips and 3/4 cup cheese in a greased 13x9-in. baking dish; set aside. In a small saucepan, combine the flour, salt, pepper; gradually whisk in cream. Bring to a gentle boil, stirring occasionally. Remove from the heat; pour over vegetables. Sprinkle with remaining cheese., Cover and bake at 375° for 30 minutes. Uncover; bake 20-25 minutes longer or until vegetables are tender and top is golden brown.

1-1/2 teaspoons minced fresh rosemary
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1 cup half-and-half cream
1/4 cup heavy whipping cream

Steps:

  • Preheat oven to 400°. In a large bowl, combine all ingredients. Transfer to a greased 3-qt. baking dish. Cover and bake until the vegetables are tender, 40-45 minutes. Uncover and bake until cream has thickened and is beginning to turn golden brown, 10-15 minutes longer. Let stand 5-10 minutes before serving.

Despite their unique and delicious flavor and fun-to-pronounce name, parsnips have really never caught on. We're going to hide them in a potato gratin and our friends and family will enjoy them without even knowing it! This is great as a brunch or breakfast potato side dish.

3 Yukon Gold potatoes, peeled
2 parsnips, peeled
2 cloves garlic, minced
1 tablespoon butter, melted
salt and ground black pepper to taste
1 teaspoon fresh thyme leaves, divided
2 ounces finely grated Parmigiano-Reggiano cheese, divided
¾ cup creme fraiche, divided
1 cup chicken broth
1 pinch cayenne pepper, or to taste

Steps:

  • Place potatoes and parsnips in a bowl of cold water.
  • Preheat oven to 375 degrees F (190 degrees C). Place garlic and melted butter into a 2-quart baking dish; brush garlic and butter all over the inside of the dish.
  • Slice potatoes very thin using a mandoline slicer.
  • Layer 1/3 potato slices into the bottom of the prepared baking dish. Season with salt and black pepper. Sprinkle a few thyme leaves onto potato slices and a light dusting of Parmigiano-Reggiano cheese. Spoon about 3 tablespoons creme fraiche over cheese.
  • Thinly slice parsnips using a vegetable peeler; arrange 1/2 the parsnip slices in an even layer over the creme fraiche and season with salt and black pepper. Repeat potato and parsnip layering process: 1/3 potato slices, salt and black pepper, thyme, Parmigiano-Reggiano cheese, creme fraiche, and remaining 1/2 parsnip slices. Dust with salt. Arrange last 1/3 potato slices on top and season with salt.
  • Pour chicken broth over potato-parsnip layers about 3 tablespoons at a time. Shake dish gently to eliminate air bubbles. Gently spread remaining 2 tablespoons creme fraiche over the potatoes. Sprinkle cayenne and remaining Parmigiano-Reggiano cheese over the top.
  • Bake in the center of the preheated oven until gratin is browned and a knife pierces layers easily, 45 minutes to 1 hour.

800g parsnip , peeled
400ml milk
200ml double cream
200ml vegetable stock
4 tsp wholegrain mustard
4 tbsp grated Twineham Grange cheese (see Know-how, below)
whole nutmeg , for grating

Steps:

  • Slice enough parsnips thinly lengthways to cover the surface of a small ovenproof dish, then slice the rest thinly into rounds. Combine the milk, cream, stock, mustard and half the cheese in a large, lidded saucepan and bring to the boil. Add a good grating of nutmeg and some seasoning - the sweet parsnips can take a bit of salt - then tip in the parsnips. When the cream is simmering again, cover and cook for 6 mins.
  • Using tongs, fish out the long slices of parsnip and set aside. Tip the rest into your dish, then arrange the long slices over the top. Scatter with the rest of the cheese and another grating of nutmeg. Can be chilled for up to 24 hrs.
  • To serve, heat oven to 180C/fan 160C/gas 4 and bake for 1 hr, then turn up to 200C/fan 180C/gas 6 and brown for 15 mins more - you can do this while the pie is resting.

1 pound parsnips
1 pound potatoes
Enough hot cream to come about 3/4 of the way up the vegetable layers
1 to 1 1/2 cups of grated Gruyere
A sprinkling of salt
A sprinkling of pepper
A sprinkling of thyme

Steps:

  • Heat oven to 375.
  • Put 2 or 3 cups of cream in a pot and heat until it's hot.
  • Peel and slice 1 pound each of parsnips and potatoes, and grate 1 to 1 .5 cups Gruyere
  • Layer the parsnips, potatoes and cheese in an ovenproof dish, sprinkling every other layer with salt, pepper and thyme.
  • Pour in enough hot cream to come about 3/4 of the way up the vegetable layers.
  • Cook in the oven, undisturbed, until the vegetables are tender and easily pierced with a fork, 45 to 50 minutes. The top should be nicely brown.
  • Let stand for a few minutes, then serve.

2 pounds parsnips
1 cup freshly grated Parmigiano-Reggiano cheese
2 ribs celery, chopped
2 leeks, chopped and divided
3 cloves garlic, crushed and divided
2 slices fresh ginger root
sea salt and freshly ground black pepper to taste
½ teaspoon freshly grated nutmeg, or to taste
3 cups water
2 bay leaves
2 sprigs fresh rosemary leaves, divided
1 (3 ounce) piece of Parmigiano-Reggiano rind
2 cups heavy whipping cream, or as needed

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Butter a 2-quart baking dish liberally.
  • Peel parsnips, reserving peelings for broth. Slice into 1/8-inch rounds. Arrange 1/3 of the parsnip slices in a single, overlapping layer in the prepared baking dish. Sprinkle 1/3 of the Parmigiano cheese over the top. Repeat with remaining parsnips and Parmigiano cheese.
  • Heat 1 tablespoon butter in a large skillet over medium heat. Add celery, 1/2 of the leeks, 1 clove garlic, and ginger pieces. Cook until softened, about 5 minutes. Add parsnip peelings; season with salt, pepper, and nutmeg. Add 2 tablespoons water; cook and stir until water is completely absorbed and mixture turns pale brown, about 5 minutes more. Continue to cook and stir, adding water as needed, until well-browned, 8 to 10 minutes more.
  • Pour remaining water over celery mixture; add bay leaves, 1 sprig rosemary, and Parmigiano rind to skillet. Increase heat to high; bring liquid to a boil. Lower heat, cover, and simmer until reduced to about 1 cup broth, 20 to 30 minutes. Season with salt, pepper, and nutmeg. Strain broth through a fine sieve, pressing solids to extract as much liquid as possible.
  • Heat remaining butter in a saucepan over medium heat; add remaining leeks, remaining garlic, and several rosemary leaves. Cook until softened, about 5 minutes. Add reserved broth; cook and stir until most liquid has evaporated and mixture is pale brown, 10 to 12 minutes. Stir in cream, salt, pepper, and nutmeg to taste; cook and stir until hot, about 3 minutes. Pour into prepared baking dish to 3/4 of the way up parsnip layers.
  • Bake in preheated oven until parsnips are soft, cream mixture is thickened and bubbly, and top is golden brown, 45 to 60 minutes. Cool until gratin is set, about 10 minutes. Garnish with more nutmeg and rosemary leaves.

3 large parsnips
4 large potatoes
4 onions , finely sliced
175g Irish St Gall cheese , mature cheddar or gruyere, grated
600ml double cream

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Use a Japanese mandolin or sharp knife to slice the parsnips and potatoes very thinly. Layer the parsnips and potatoes in a shallow gratin dish, sprinkling some cheese and onion and a little drizzle of the cream over each layer, seasoning with salt and pepper as you go. The top layer should be potatoes and parsnips with a final sprinkling of cheese and drizzling of cream.
  • Cover with foil and bake in the oven for 2 hrs, alongside the pork. Remove the foil and continue to bake for 20 mins until golden. For a really golden brown top, finish under a hot grill if you like.

Gratin of Sweet Potato, Parsnip & Gruyere Cheese image

1 Garlic head
1 tablespoon Olive oil
2-1/2 cups Whipping Cream
2 teaspoons Rosemary, chopped
2 teaspoons Thyme
2 teaspoons salt
3/4 teaspoon ground black pepper
2 pounds sweet potatoes, peeled, cut into 1/4" thick rounds
1 pound parsnips, peeled and cut into 1/4" thick strips
2 cups Gruyere cheese, shredded (can use Parmesan or Romano)

Steps:

  • Preheat oven to 375 degrees. Butter a 13x9x2" glass baking dish. Spray generously.
  • Cut 1/2" off the garlic head, so that all of the cloves are exposed. Drizzle with a little olive and place in a garlic baker. Roast the garlic in the oven for 25 minutes, or until the cloves are tender and golden brown. Remove the garlic head from the baker and squeeze all of the cloves out. Mash/chop the cloves on a cutting board with the back of your knife.
  • In a medium size bowl, whisk together the cream, garlic, rosemary, thyme, salt and pepper to blend.
  • Place half of the potatoes and parsnips in prepared baking dish, overlapping slightly. Sprinkle with 3/4 cup cheese. Top with second layer of potatoes and parsnips. Pour cream mixture over potatoes and parsnips in dish. Sprinkle with remaining cheese. Cover gratin with foil that has been sprayed with cooking spray and bake 1 hour. Uncover and bake until top is golden brown and potatoes and parsnips are tender, about 45 minutes longer. Let gratin cool 10 minutes before serving.

CAULIFLOWER AND PARSNIP GRATIN

1 large head cauliflower (about 2 1/4 pounds), trimmed into small bite-size florets
1 large parsnip, sliced into 1-inch chunks
Kosher salt
4 tablespoons butter, plus more for greasing the pan
1 shallot, finely chopped
Freshly ground black pepper
1/4 cup all-purpose flour
2 to 2 1/2 cups whole milk, warmed
1 cup grated extra-sharp aged Cheddar (4 ounces)
Dash of hot sauce, such as Tabasco
1/4 cup panko breadcrumbs
2 tablespoons grated Parmesan
1 tablespoon olive oil
1 tablespoon chopped fresh parsley

Steps:

  • Preheat the oven to 350 degrees F.
  • Add the cauliflower and parsnips to a large pot of salted boiling water. Cook to soften, 4 minutes. Drain and rinse under cold water in the sink.
  • Add the butter to a large saucepan or braising pan over medium-high heat. Once the butter is foaming, add the shallots and saute until tender, about 3 minutes. Sprinkle with salt and pepper. Stir in the flour and cook until pale blonde and pasty, 2 to 3 minutes. Slowly whisk in the warm milk, making sure no lumps from the flour remain. The sauce should begin to thicken up as it begins to simmer. Once the sauce becomes thick, turn the heat to low, and add the Cheddar in handfuls. Stir until melted and season with hot sauce. Add the drained cauliflower and parsnips into the cheese sauce and stir to coat.
  • Mix together the breadcrumbs, Parmesan, olive oil, parsley and some salt and pepper in a small bowl. Top the casserole with the breadcrumb mixture. Bake until bubbling and golden, 20 minutes. Let rest 5 minutes before serving.

4 leeks, white part thinly sliced
2 garlic cloves, crushed
800 g potatoes, peeled and thinly sliced
400 g parsnips, peeled and thinly sliced
125 g cream cheese, cubed and softened
1/3 cup cream
3/4 cup chicken stock
2 tablespoons thyme leaves
1 cup grated cheddar cheese
salt and pepper, to taste

Steps:

  • Heat the butter in a non-stick frying pan over medium-low heat. Add the leeks and garlic and cook 10 minutes or until softened.
  • Whisk together thecream cheese and cream until smooth. Whisk in the stock, thyme and seasonings.

1 lb parsnip, peeled
2 tablespoons flour
1 cup grated parmesan cheese, divided

1/4 cup flour
2 cups full-fat milk
1/2 cup whipping cream, unwhipped
2 eggs
1 tablespoon seasoning salt (or to taste or use white salt)
black pepper
1 pinch cayenne pepper (optional or to taste)

Steps:

  • Set oven to 350 degrees.
  • Butter a 13 x 9-inch baking dish.
  • Grate the peeled carrots and parsnips on a large-sided grater (or use a food processor).
  • Measure out 3 cups each of grated carrots and parsnips, then place in a large bowl.

Steps:

  • Trim the excess fat from the duck legs. Season them with the thyme leaves, orange zest, and cracked black pepper. Cover, and refrigerate overnight.
  • Preheat the oven to 325°F.
  • Take the duck out of the refrigerator 45 minutes before cooking. After 15 minutes, season the legs on all sides with 1 tablespoon plus 1 teaspoon salt.
  • Heat a large sauté pan over high heat for 2 minutes. Swirl in the olive oil and wait 1 minute. Place the duck legs in the pan, skin side down, and cook 8 to 10 minutes, until the skin is deep golden brown and crispy. (If your pan is too small to fit all of the legs, brown them in batches or in two pans, so you don't crowd them.) Turn the duck legs over, reduce the heat to medium, and cook 2 minutes on the other side. Move the duck, skin side up, to a braising pan. (The duck legs should just fit in the pan.)
  • Discard half the fat, and return the pan to the stove over medium heat. Add the onion, fennel, carrot, thyme sprigs, bay leaf, and a pinch of pepper. Cook about 10 minutes, stirring often with a wooden spoon to scrape up all the crusty bits.
  • When the vegetables are nicely browned and caramelized, add the balsamic vinegar and Banyuls. Turn the heat up to high, bring the liquid to a boil, and cook 6 to 8 minutes, until it has reduced by half. Add 3 cups stock and bring to a boil. Turn the heat down to low and simmer 5 minutes.
  • Pour the broth and vegetables over the duck, then scrape the vegetables that have fallen on top of the duck back into the broth. The liquid should not quite cover the duck (add more stock if necessary). Cover the pan very tightly with aluminum foil and a tight-fitting lid if you have one. Braise in the oven about 2 1/2 hours, until the duck is very tender.
  • To check the duck for doneness, carefully remove the lid and foil, and pierce a piece of the duck with a paring knife. If the meat is done, it will yield easily and be tender but not quite falling off the bone.
  • Turn the oven up to 400°F.
  • Carefully transfer the duck to a baking sheet and return it to the oven to brown for 10 to 15 minutes.
  • Strain the broth into a saucepan, pressing down on the vegetables with a ladle to extract all the juices. Skim the top layer of fat from the sauce. If necessary, reduce the broth over medium-high heat about 5 minutes, to thicken it slightly. Taste the juices for seasoning.
  • Transfer the duck legs to a serving platter. Spoon the juices over the duck, and scatter the parsley leaves over the top. Serve with the turnip-parsnip gratin with prunes.
  • Turnip-Parsnip Gratin with Prunes
  • Preheat the oven to 350°F.
  • Use a mandoline to slice the turnips and parsnips into 1/16-inch-thick rounds, and put them into two separate bowls.
  • Pour 1/2 cup cream onto the bottom of a 9-by-9-inch (or equivalent) gratin dish. Place one layer of turnips on the bottom of the dish. (The turnips should overlap by about half.) Season with 1/4 teaspoon salt and a pinch of pepper. Scatter a third of the prunes on top. Arrange a layer of parsnips over the turnips and prunes. Press the parsnips down with your fingers, letting the cream soak up through the layers. This will ensure that the cream is evenly distributed and coats the vegetables well. Drizzle with 1/2 cup cream and season with 1/4 teaspoon salt, a healthy pinch of pepper, and 1 teaspoon thyme.
  • Arrange another layer of turnips and drizzle another 1/4 cup cream over them. Season with 1/4 teaspoon salt, a pinch of pepper, and 1 teaspoon thyme. Scatter a third of the prunes on top and continue with another layer of parsnips. Drizzle on 1/2 cup cream and season with 1/4 teaspoon salt and a pinch of pepper. Press the vegetables down with your fingers, allowing the cream to come up through the layers and coat the vegetables evenly.
  • Finish the gratin with one more layer, this time of both parsnip and turnip slices, arranging this layer nicely, since it will be the top of your gratin. Scatter the remaining prunes over the top. Drizzle with 1/4 to 1/2 cup cream and season with 1/4 teaspoon salt, freshly ground black pepper, and the remaining teaspoon thyme. Press the gratin down with your fingers again. The cream should cover the potatoes but not be too soupy. Add more cream if the gratin seems dry.
  • Cover tightly with aluminum foil. Bake about 1 1/2 hours, until the vegetables are tender when pierced. Remove from the oven and carefully uncover. Turn the oven to 425°F and return the gratin to the oven. Cook another 15 to 20 minutes, until the top is nice and golden brown (as in "gratinéed").
  • Note
  • You can braise the duck a day ahead, just remember it has to marinate at least 4 hours first. Make the gratin in the morning, then reheat and gratinée just before serving.

Freshly ground pepper to taste
3 small parsnips, peeled and thinly sliced crosswise
1 1/2 tablespoons chopped fresh thyme
1 1/2 cups chicken broth, homemade or low-sodium canned
1/2 cup apple cider
2 teaspoons chopped Italian parsley

Steps:

  • Preheat the oven to 400 degrees. Layer the onion in a deep pie plate. Layer half the potatoes over the onions and season with 1 teaspoon of salt and pepper to taste. Top with the parsnips and the remaining potatoes. Sprinkle with the remaining salt, pepper and 1 tablespoon of thyme.
  • Combine the chicken broth and cider and pour over the potatoes. Cover with foil and bake for 30 minutes. Uncover and bake for 30 minutes more, basting. Sprinkle with the parsley and the remaining thyme and serve.

1/2 cup finely chopped fresh parsley
3 Tbsp. butter, melted

Steps:

  • Heat oven to 425F.
  • Cook and stir bacon in large saucepan on medium heat until crisp. Remove bacon from pan with slotted spoon; drain on paper towels. Spoon 2 Tbsp. drippings into small bowl; set aside for later use. Add vegetables to remaining drippings in pan; toss to coat. Spoon into 13x9-inch baking dish.
  • Bake 20 min. Meanwhile, return reserved 2 Tbsp. bacon drippings to pan. Stir in flour; cook and stir on medium heat 1 min. Add milk and mustard; bring to boil, stirring frequently. Simmer 1 min or until sauce is slightly thickened. Add Neufchatel; cook 3 min. or until melted, stirring frequently.

1 teaspoon chopped fresh marjoram leaves (substitute fresh thyme if you prefer)

Steps:

  • 3/4 pound each of carrots and parsnips, peeled, halved lengthwise if large, and cut into 1/2 inch slices. 2 ounces coarsely grated sharp Cheddar cheese (about 1/2 cup). Heat the oven to 350F. Butter a shallow, oval-shaped gratin dish. In a 10 inch skillet, heat the olive oil over medium-high heat. Add the onion and a pinch of salt and cook, stirring occasionally, until golden brown, 7-10 minutes. Meanwhile, melt the butter and pour into a small bowl. Add the panko crumbs, parsley, and marjoram and toss well to combine. Whisk the heavy cream, mustard, 1/2 teaspoon salt, and a few grinds of pepper into the onion; then stir in the carrots and parsnips. 1 kg (4.4 lbs) carrots, sliced
1 kg (4.4. lbs) parsnips, sliced
1 kg (4.4 lbs) leeks, sliced
480 ml (16 fl oz) double cream
240ml (8 fl oz) single cream
4 tablespoons brown mustard
4 tablespoons sage chopped
wedge of Parmesan, grated
salt and pepper to taste

Steps:

  • Heat the oven to 400°F/200°C. Put on a pot of salted water to boil for the carrots and parsnips. While water is heating, sauté the leeks in butter until they start to lightly brown (about 10 minutes). Remove from heat. Add the carrots and parsnips to boiling water for about 3 minutes and drain. In a large bowl whisk the cream, mustard, sage, salt and pepper. Taste the mixture and adjust from there. Add all the vegetables to the cream mixture and gently stir to mix thoroughly. Pour the mixture into a 9" x 13" baking dish, top with grated Parmesan and cover with foil. Bake at 400°F/200°C for half an hour.
