1 1/2 pounds Yukon Gold potatoes, peeled, cut into 2-inch pieces
1 pound parsnips, peeled, cut into 1 1/2-inch pieces
3 ounces trimmed parsley root (about 3 medium), peeled, but into 1-inch pieces (optional)
1 large garlic clove, halved
3 cups (or more) water
1 14 1/2-ounce can low-salt chicken broth
1/4 cup whipping cream
2 tablespoons (1/4 stick) butter
2 tablespoons minced fresh parsley or parsley root tops
Additional minced fresh parsley

Steps:

  • Combine potatoes, parsnips, parsley root, if using, and garlic in heavy large saucepan. Add 3 cups water and broth; if necessary, add additional water to cover by 1 inch. Boil uncovered until vegetables are tender, about 25 minutes. Drain vegetables, reserving liquid.
  • Return vegetables to pot. Add cream and butter. Set over low heat; mash until mixture is smooth; and fluffy, adding enough reserved cooking liquid to thin to desired consistency. Mix in 2 tablespoons parsley. (Can be made 2 hours ahead. Cover; let stand at room temperature. Rewarm over low heat, stirring.) Transfer to bowl. Top with additional parsley.

5 lbs potatoes, peeled and cut into quartered
6 garlic cloves, slightly crushed
4 ounces cream cheese
4 ounces butter
1/2 cup milk, heated
salt
1 teaspoon pepper
1 bunch scallion, 1/3 cup sliced
1 bunch fresh parsley, 1/2 cup minced

Steps:

  • Boil potatoes and garlic in a large pot with salted water till fork tender about 20 minutes.
  • Drain and return to pan; add butter, cream cheese and milk mash with a potato masher until smooth.
  • Stir in scallions and parsley.
  • season to taste with salt and pepper .
  • Use a little more milk if you prefer thinner mashed potatoes.

Mashed White and Sweet Potatoes with Parsley Butter image

3 pounds red or white potatoes, peeled and cut into large dice
Kosher salt
2 bay leaves
3/4 cup heavy cream
1/2 cup sour cream
7 tablespoons salted butter
1/2 teaspoon dried thyme
1/4 teaspoon ground nutmeg
Freshly cracked black pepper
Two 15-ounce cans sweet potato puree, such as Farmer's Market Organic brand
1/4 cup fresh flat-leaf parsley, chopped

Steps:

  • Place the potatoes in a large stockpot and cover with water. Generously season the water with salt. Add the bay leaves and place over high heat. Cover, bring to a boil, lower the heat and simmer until the potatoes are tender enough to smash with a fork, 25 to 35 minutes. Drain the potatoes and discard the bay leaves. Return the potatoes to the pot and add the heavy cream, sour cream and 4 tablespoons of the butter. Smash with a potato masher until smooth. Add the thyme, nutmeg and 1/2 teaspoon each salt and pepper. Stir to combine.
  • Place the sweet potato puree in a pot over medium-high heat. Cover and heat until warmed through, about 4 minutes.
  • When ready to serve, mound a third of the white potatoes in the center of a serving bowl. Next, mound a third of the sweet potatoes on top of the white potatoes. Repeat this process, alternating between the vegetables, to make white and orange circles. Swirl together to create a marbled effect showing both colors.
  • In a small pot, melt the remaining 3 tablespoons butter. Combine the butter and parsley. Pour over the potatoes and serve immediately.

1/3 cup becel buttery taste margarine
2 garlic cloves, finely chopped
1/4 cup skim milk

  • In a medium saucepan, add potatoes and cover with water. Bring to a boil over high heat. Reduce heat to low and simmer 20 minutes or until potatoes are very tender; drain. 3/4 cup chopped fresh flat-leaf parsley
1/2 cup olive oil plus 3 tablespoons olive oil
1/4 teaspoon salt
5 lbs yukon gold potatoes (or other yellow fleshed potatoes)
1 1/2 cups milk
1/2 cup unsalted butter, cut into 1/2-inch pieces
1 1/4 teaspoons salt
3/4 teaspoon vreshly ground black pepper

Steps:

  • Make oil:.
  • Purée chives and parsley with oil and salt in a blender until smooth. Pour herb oil through a fine strainer into a glass cup, pressing on and discarding solids.
  • Prepare potatoes:.
  • Peel and quarter potatoes. Cover potatoes with salted cold water by 1 inch in a 5-quart heavy pot, then simmer, uncovered, until very tender, about 25 minutes.
  • While potatoes are simmering, bring milk, butter, salt, and pepper to a simmer, stirring until butter is melted.
  • Drain potatoes in a colander and return to pot. Add the hot milk mixture and mash with a potato masher until almost smooth, then stir in 4 tablespoons of the herb oil.

3/4 cup half and half
2 tablespoons (1/4 stick) butter
1 1/4 cups (packed) grated Fontina cheese (about 6 ounces)

Steps:

  • Preheat oven to 375°F. Using small knife, pierce potatoes in several places. Place potatoes on small baking sheet. Bake until tender when pierced with skewer, about 1 hour. Cool slightly.
  • Bring half and half to simmer in heavy small saucepan. Scrape potatoes from skin into large bowl. Using ricer, food mill or potato masher, mash potatoes. Mix in half and half. Add butter; stir vigorously until butter melts and potatoes are smooth. Stir in 2/3 of cheese and 3 tablespoons parsley. Season with salt and pepper. MASHED POTATOES AND CARROTS WITH PAPRIKA AND PARSLEY



Mashed Potatoes and Carrots With Paprika and Parsley image

This recipe, based on one from Cooks Illustrated, is a nice variation on traditional mashed potatoes. (I've used lower fat ingredients to reduce the calories) The color is just incredible. And the carrots add a sweetness which particularly compliments pork. Like most mashed potato recipes, this freezes well, too.

8 ounces carrots, peeled, cut into 1/4-inch slices
1 1/2 lbs yukon gold potatoes
1/3 cup low-sodium low-fat chicken broth
3/4 cup 2% evaporated milk
3/4 teaspoon salt
3 tablespoons fresh parsley leaves, minced
1 1/2 teaspoons paprika
salt and pepper, to taste

Steps:

  • Prepare potatoes: Peel, quarter lengthwise, and cut crosswise into 1/4-inch-thick slices; rinse well in 3 or 4 changes of cold water and drain.
  • Melt butter in large saucepan over medium heat. When foaming subsides, add carrots and cook, stirring occasionally, until butter is browned and carrots are caramelized, 10 to 12 minutes. (If after 4 minutes vegetables have not started to brown, increase heat to medium-high.).
  • Add potatoes, broth, and 3/4 teaspoon salt and stir to combine. Cook, covered, over low heat (broth should simmer gently; do not boil), stirring occasionally, until potatoes fall apart easily when poked with fork and all liquid has been absorbed, 25 to 30 minutes. (If liquid does not gently simmer after a few minutes, increase heat to medium-low.) Remove pan from heat; remove lid and allow steam to escape for 2 minutes.
  • Gently mash potatoes and root vegetables in saucepan with potato masher (do not mash vigorously). Gently fold in milk, parsley, and paprika. Season with salt and pepper to taste. Serve immediately, or freeze for future use.

  • Cook parsley leaves in medium saucepan of boiling salted water 1 minute. Drain. Immediately transfer parsley leaves to blender. Add 1/3 cup cold water and large pinch of salt. Blend until very smooth.
  • Combine 1 1/2 cups milk and onions in medium saucepan. Bring to boil. Reduce heat to medium; simmer until onions are tender, about 5 minutes.
  • Place potatoes in large pot of salted water. Bring water to boil over high heat. Reduce heat to medium. Cover and cook until potatoes are tender, about 35 minutes. Drain. Return potatoes to pot. 1 cup Italian parsley leaves
2 tablespoons lightly toasted walnuts
2 large cloves garlic
1/3 cup extra-virgin olive oil
3 pounds boiling potatoes, peeled
Salt and freshly ground black pepper
1/2 cup hot skim milk

Steps:

  • Combine parsley, walnuts and garlic in a food processor and process until finely minced. Slowly add one-fourth cup of the oil and process until smooth. Set aside.

Steps:

  • Slice all potatoes in half, place in a large pan, and cover with cool water.
