CREAMY PARMESAN AND SPINACH SHRIMP



Creamy Parmesan and Spinach Shrimp image

Protein rich shrimp are pan seared then tossed with a creamy spinach sauce that's perfectly flavored with fresh garlic and rich parmesan. Then finish it off with a bed of pasta and steamed or roasted asparagus or broccoli to complete the meal.

1 1/4 lbs extra large shrimp (21/25), (peeled and deveined)
1 tsp dried basil
Salt and freshly ground black pepper
2 Tbsp butter, (divided)
1 Tbsp minced garlic ((3 cloves))
3/4 cup low-sodium chicken broth
1/2 cup heavy cream
2 tsp cornstarch mixed with 1 Tbsp chicken broth
3 oz baby spinach, (chopped (2 packed cups))
1/2 cup (1.5 oz) shredded parmesan cheese

Steps:

  • Sprinkle shrimp with basil, season lightly with salt and pepper and toss.
  • Melt 1 Tbsp butter in a 12-inch non-stick skillet over medium-high heat.
  • Add shrimp in a single layer and cook until bottom is pink, then flip and cook opposite side of shrimp until cooked through and pink, about 3 minutes total.
  • Transfer shrimp to a plate then melt remaining 1 Tbsp butter in same skillet over medium heat.
  • Add garlic and saute until just lightly golden brown, about 30 seconds then pour in chicken broth.
  • Add spinach and stir and cook until it starts to wilt, about 1 minute.
  • Stir in cream and cornstarch mixture and cook, stirring constantly, until mixture starts to simmer and thicken slightly, about 2 minutes.
  • Stir in parmesan cheese and cook until cheese has melted, season lightly with salt if needed.
  • Remove from heat and toss in shrimp. Serve over spaghetti or spaghetti squash if desired.

1/2 cup parmesan cheese, grated
1/4 cup butter
1/4 cup oil
1 cup lettuce
1/4 cup cherry tomatoes
4 lemon wedges
1/3 cup olive oil
1 tablespoon white vinegar
1/2 teaspoon sugar
1/4 cup finely chopped basil
1 tablespoon parmesan cheese, grated

Steps:

  • Shell shrimp, leaving tails intact.
  • Remove back vein, flatten with rolling pin. (butterfly them).
  • Toss shrimp in Parmesan cheese. Heat butter and oil in pan, add shrimp, cook quickly on both side until light golden brown.
  • Do not overcook or shrimp will toughen.
  • Drain on paper towels immediately.
  • Serve with lettuce (I use romaine), cherry tomatoes and lemon wedges.
  • Top with Basil Dressing.

1 cup dry bread crumbs
1 cup shredded Parmesan cheese
2 tablespoons dried parsley
1 ½ teaspoons garlic powder
1 pound large shrimp, peeled and deveined
2 tablespoons butter, melted, or more to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch glass casserole dish with nonstick cooking spray.
  • Combine bread crumbs, Parmesan cheese, parsley, and garlic powder in a large resealable plastic bag. Seal and shake to mix ingredients together. Add shrimp and shake to coat.
  • Lay shrimp flat in the prepared baking dish. Sprinkle with any bread crumb mixture remaining in the bag. Drizzle melted butter over the top.
  • Bake in the preheated oven until starting to crisp, 15 to 20 minutes. Switch to broil setting until topping is light brown, 2 to 3 minutes.

2 fresh lemons
1/3 cup apple cider vinegar
3 garlic cloves, minced
1 teaspoon Dijon mustard
3 tablespoons chopped chives
1/2 packed cup fresh basil leaves, chopped
1/2 cup grated Parmesan
2 1/4 cups extra-virgin olive oil
Freshly ground black pepper
1 (16-ounce) can dark red kidney beans
1 (16-ounce) can chick peas (garbanzo beans)
1 pound fresh green beans, trimmed and cut into 1-inch lengths, and steamed until just tender and allowed to cool
1 (16-ounce) can artichoke hearts, quartered
1 (16-ounce) can pitted black olives, drained
1 pound tri-color rotini pasta, boiled until al dente and allowed to cool
1 pound bay scallops, steamed until opaque and allowed to cool
3 (6-ounce) cans rock shrimp, drained
3 (6-ounce) cans albacore tuna, drained and separated into chunks
1 (8-ounce) bag fresh frozen peas, blanched, drained and cooled
1 pint grape tomatoes, halved
12 basil sprigs, for garnish
Shaved Parmesan, for garnish

Steps:

  • Prepare the vinaigrette, just before use. Place the lemons in a small microwave-safe bowl and microwave until the essential oils in the skin are released. Since these will be hot coming from the microwave, you will need to set them aside briefly, until they cool just enough to handle. Pour vinegar into a blender, turn it on, and then squeeze in 1emon juice from the micro-waved lemons. Leaving the blender running, add 1 at a time through the feed opening: garlic, mustard, chives, basil, Parmesan, and pepper and blend until smooth. While keeping the blender running, add oil through the feed opening in a slow stream. Set aside until needed.
  • In a large mixing bowl combine kidney beans, chick peas, green beans, artichoke hearts, and black olives. Dress with enough vinaigrette to coat well, then gently fold in pasta, scallops, shrimp, tuna, peas, and grape tomatoes. Taste and adjust dressing as needed. Do not feel compelled to use all of the dressing. You want enough to complement the ingredients of the salad without overcoming their flavors. (You can always serve dressing on the side, or add more to the salad if you wish. The pasta will absorb some of the vinaigrette.)
  • Transfer to serving bowls or serve family style. Garnish with basil sprigs and shaved Parmesan.

SHRIMP WITH A YUZU DRESSING

Yuzu is an Asian citrus fruit. It resembles an underripe lime and has that same sourness. It has a wonderful light floral note, too. It does great sunken into mayonnaise. This shrimp dish is a knockoff of a Nobu restaurant classic for a reason-it's ethereal. Use rock shrimp or small shrimp for this, so it can be eaten in little bites. A note about substitutions: If yuzu is unavailable, simply sub in lime juice and a few grates of lime zest.

8 ounces beer (preferably a pilsner or lager)
2 ounces vodka
1/4 cup soda water, plus a little extra if needed
1 1/2 cups all-purpose flour, plus a little extra if needed
1 teaspoon hot paprika
1 teaspoon baking soda
1/4 cup mayonnaise
1/4 cup yuzu juice
1 tablespoon Dijon mustard
1/4 teaspoon paprika
A few grates of zest from 1 lemon
1 quart vegetable oil, for frying
2 heads Bibb lettuce, leaves separated
1 large lemon, cut into VERY thin slices with a mandoline, seeds removed
4 to 6 sprigs fresh basil, slightly stemmed
Kosher salt
1 1/2 pounds small shrimp, such as rock shrimp, peeled and deveined

Steps:

  • For the batter: Combine the beer, vodka and soda water in a medium bowl. Slowly whisk in the flour, paprika and baking soda. The batter should be fairly thick but also easy to stir. If a little loose, whisk in a little more flour. If too thick, add a splash of soda water. Do not overmix. Set aside on the counter for 15 to 20 minutes.
  • For the yuzu dressing: In a medium bowl, whisk together the mayonnaise and yuzu juice. Whisk in the mustard, paprika and lemon zest and set aside.
  • For the shrimp: Pour the oil into a heavy-bottomed pot. Heat the oil to 320 degrees F, using a deep-frying thermometer to monitor the temperature. Put a wire rack into a rimmed baking sheet.
  • Arrange the Bibb lettuce in an overlapping circle in a large shallow serving bowl or platter.
  • Once the oil reaches 320 degrees F, add the lemon slices and fry until crispy and lightly browned, 2 to 3 minutes. Transfer to the rack over the baking sheet with a slotted spoon. Fry the basil (take care as it can splatter when it hits the oil) until crispy, 1 to 2 minutes. Transfer to the same rack. Season with salt.
  • Raise the oil temperature to 350 degrees F.
  • Add the shrimp to the batter to coat. Transfer the shrimp to the oil in batches with a slotted spoon, holding the spoon just over the oil and carefully dropping them in one by one to prevent clumping and splashing. Fry each batch until golden brown, 2 to 3 minutes, then transfer them to the rack; raise the oil temperature back to 350 degrees F between batches.
  • Drizzle the shrimp with some of the yuzu sauce and immediately spoon the shrimp into the center of the bowl of lettuce. Sprinkle with the fried lemon and basil leaves. Top with the remaining yuzu dressing to taste.

5 tablespoons fresh lemon juice
2 tablespoons Dijon mustard
1/3 cup plus 2 tablespoons olive oil
2 1/2-ounce packages fresh basil leaves, chopped (about 3/4 cup)
1 1/2 pounds uncooked medium shrimp, peeled, deveined
1 pound gnocchi pasta or orecchiette pasta
4 zucchini, halved lengthwise
Olive oil
Freshly grated Parmesan cheese (optional)

Steps:

  • Prepare barbecue (medium-high heat) or preheat broiler. Combine 4 tablespoons fresh lemon juice and Dijon mustard small bowl. Gradually mix in 1/3 cup olive oil. Mix in chopped fresh basil. Place shrimp in medium bowl. Drizzle with remaining 1 tablespoon fresh lemon juice and 2 tablespoons olive oil. Toss to coat. Season with salt and pepper.
  • Cook pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally.
  • Meanwhile, brush zucchini on both sides with oil. Season with salt and pepper. Grill until charred, about 2 minutes per side. Transfer to plate. Add shrimp to grill and cook until just cooked through, about 2 minutes per side. Transfer to large bowl. Cut zucchini crosswise into 1-inch pieces and add to shrimp.
  • Drain pasta well. Add to bowl with shrimp and zucchini. Add basil vinaigrette and toss to coat. Season to taste with salt and pepper. (Can be prepared up to 1 hour ahead. Let stand at room temperature.) Serve pasta warm or at room temperature, passing grated Parmesan cheese, if desired.

1 pound uncooked medium shrimp, peeled and deveined
salt and ground black pepper to taste
2 tablespoons finely chopped shallots
1 tablespoon crushed garlic
¼ cup chicken broth
1 medium lemon, zested and juiced
½ cup heavy cream
5 large basil leaves, chopped
1 pinch red pepper flakes

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
  • While the pasta is cooking, heat oil in a large skillet over medium heat. Season shrimp with salt and pepper; add to the pan and cook 30 seconds per side. Remove to a plate.
  • Add shallots to the skillet and cook for 2 minutes. Add garlic and cook until fragrant, about 1 minute. Stir in chicken broth, lemon zest, and 1/2 of the lemon juice; heat for 2 minutes. Reserve remaining lemon juice for another use.
