1 two-and-a-quarter-pound cantaloupe, peeled and seeded
2 one-pound red papayas, peeled and seeded
3/4 cups Simple Syrup
1/2 cup freshly squeezed orange juice (2 oranges)
1/2 cup freshly squeezed lemon juice (2 lemons)

Steps:

  • Place cantaloupe in a juice extractor; process, extracting 2 cups juice.
  • Place papayas in extractor; process, extracting 1 3/4 cups juice.
  • Transfer juices to a large pitcher; stir in remaining ingredients. Fill with ice, and serve.

1/4 teaspoon ground ginger
2 medium Solo papayas (14 ounces each), halved lengthwise and seeded
1/4 teaspoon cayenne pepper
1 lime, cut into 4 wedges

Steps:

  • Preheat oven to 450 degrees. Stir together sugar and ginger in a small bowl. Arrange papaya halves, cut sides up, in a 10-by-13-inch baking dish. Sprinkle sugar mixture evenly over halves.
  • Bake, brushing papaya edges with melted sugar mixture (it will collect in well of fruit) 2 or 3 times, until mixture is bubbling and papaya edges are beginning to darken, 35 to 40 minutes.
  • Sprinkle each serving with a pinch of cayenne. Serve with lime wedges.

1/2 tablespoon Dijon mustard
5 tablespoons extra-virgin olive oil
5 teaspoons freshly squeezed lemon juice
5 teaspoons freshly squeezed orange juice
1 teaspoon white-wine vinegar
1/2 tablespoon honey
1/2 teaspoon salt
Pinch of freshly ground pepper
Seeds from 1 small red papaya

Steps:

  • In a medium mixing bowl, whisk together Dijon mustard and 1 tablespoon olive oil. Whisk in lemon juice. Whisk in another tablespoon olive oil. Whisk in orange juice and another tablespoon olive oil. Whisk in vinegar, honey, salt, pepper, and remaining 2 tablespoons olive oil.
  • Gently stir reserved papaya seeds into salad dressing. Use immediately, or store in an airtight container in the refrigerator for up to 1 day.

1 cup Ginger Syrup

Steps:

  • Remove rind and any loose seeds from watermelon. Place the flesh in a juice extractor, and process, extracting 3 cups watermelon juice.
  • Transfer juice to a large pitcher. Add the remaining ingredients, and stir to combine. Fill pitcher with ice. Garnish with watermelon and lime wedges. Serve.
