Number Of Ingredients 9

1 medium butternut squash
1 small sweet onion, peeled and diced
3 garlic cloves, minced
2 tablespoons olive oil
salt and pepper
1/2 cup fresh sage leaf
1 lb farfalle pasta
3/4 cup pine nuts, toasted
1 cup parmesan cheese

Steps:

  • Heat the oven to 375°.
  • Cut the butternut squash in half and scoop out the strings and seeds the middle cavity.
  • Flip the squash halves upside down and peel them.
  • Cut the squash into 1-inch cubes.
  • Toss with the onion, garlic, a drizzle of olive oil and salt and pepper.
  • Mince about half of the fresh sage leaves and also toss with the squash.
  • Spread the squash mixture in a thin layer on a large baking sheet and roast for about 40 minutes or until the squash is soft.
  • Heat salted pasta water to boiling and cook the farfalle until al dente.
  • Drain and set aside.
  • As the squash finishes roasting, heat about two tablespoons of olive oil in a large high-sided sauté pan.
  • The oil is ready when it pops and sputters. (Don't let it start smoking.)
  • Drop in the rest of the sage leaves and fry for about a minute, or until they begin to just shrivel up.
  • Remove with a slotted spoon and salt lightly.
  • Crush with the back of a spoon.
  • Add half the pasta to the pan, along with half the roasted squash mixture. Crumble in half the sage.

  • Stir in half the cheese and serve.
  • (Repeat the last step with the rest of the ingredients. The originator of the recipe also wrote--We split it into two because none of our pans are big enough to accommodate the entire recipe. It's very important that you not crowd the pan too much - you want the pasta to really pan-fry, not just steam up.).

PAN-FRIED SCALLOPS WITH BUTTERNUT SQUASH TWO WAYS

Pan-fried scallops with butternut squash two ways image

Serve up a restaurant-style starter at home - much of it can be made ahead so you can relax with a glass of wine on the night

Provided by Gordon Ramsay

Categories     Starter

Time 1h10m

Number Of Ingredients 13

6 large scallops , prepared and halved horizontally
2 tbsp olive oil
50g butter
bottom half of 1 small butternut squash , peeled, deseeded and cut into small chunks (save the top half for the dressing)
75ml fresh chicken stock
1 tsp finely grated parmesan
top half of 1 butternut squash , peeled
2 tbsp olive oil
150g piece streaky bacon , cut into small pieces, or pre-cut lardons
1 small red onion , finely chopped
1 tbsp small capers
1 tbsp sherry vinegar
2 tbsp finely chopped chives

Steps:

  • To make the purée, heat the butter in a small saucepan and add the squash. Sweat it over a very low heat for 5 mins, then pour over the stock. Cover and gently simmer for 10-12 mins until the squash is very soft.
  • Take off the heat and add the parmesan. Use a hand blender or food processor to blitz the squash until smooth, then press through a sieve into another saucepan. Season to taste and set aside.
  • To make the warm salad, trim the squash into a neat block, then neatly dice the flesh into cubes no larger than 1cm. Heat half the oil in a non-stick frying pan. Fry the squash for 10 mins, or until tender and coloured, then tip onto a plate.
  • Place the pan back on the heat and gently fry the bacon for 10 mins, or until crisp and brown. Add the onion and cook for 2 mins to soften in the fat, then add the capers and squash, drizzle over the sherry vinegar and toss together for 1 min. Off the heat, stir in the chives and the rest of the oil, then tip everything into a bowl and keep warm.
  • Have the scallops to hand as you will need to work fast when cooking them. Clean out the frying pan and place it back on the heat with a drizzle more oil. When the oil starts to shimmer, carefully lay the scallops in the pan one at a time, like points on a clock face, starting at 6 o'clock, so you remember which one went in first.
  • Scallops take very little time to cook, so by the time the last one is in the pan, the first will be brown and ready to turn over. Flip all the scallops over and give them about 1 min more, then lift onto kitchen paper on a plate to drain the oil. With the salad and the purée still warm, you are now ready to plate up.
  • Spoon half the warm salad down the middle of each plate. Overlap 6 pieces of scallop along the salad. Use a spoon to swipe the purée around the outside of the food. Drizzle everything with a touch more oil, and you are now ready to serve.

FRIED CYMLINGS (PATTY PAN SQUASH) WITH BACON

Fried Cymlings (Patty Pan Squash) With Bacon image

From a reprint of the vintage cookbook the Williamsburg Art of Cookery Or, Accomplifh'd Gentlewoman's Companion originally published in 1742. Cymlings are also known as patty pan squash. (I called them UFOs as a child and still do!) No amounts were given in the recipe therefore measurements and yield are estimated. Original recipe used either bacon ends or "fatback", if I'm understanding the language.

Time 15m

Yield 4-6 serving(s)

Number Of Ingredients 4

1 1/2 lbs pattypan squash, stems removed, washed well and cut into 1/2-inch slices
3 slices bacon

  • In same pan, fry the patty pan squash until golden brown on both sides, stirring often to avoid burning, about 10 minutes.
  • Season with salt and pepper to taste and transfer to serving dish.
  • Here is the recipe in its original text: "FRY some Slices of fat Bacon in a Pan. Remove the Bacon and keep hot. Fry in the Drippings fome Cymlings that have been boiled tender and cut into Slices. While frying, mafh fine with a large Spoon and ad Pepper and Salt. Fry brown and serve with the Bacon".

3 cloves garlic, minced
Olive oil
Salt and pepper
1/2 cup fresh sage leaves
1 pound farfalle pasta
3/4 cup pine nuts, toasted
4 ounces high quality Parmesan, shredded or shaved (about a cup total)

Steps:

  • Heat the oven to 375°. Cut the butternut squash in half and scoop out the strings and seeds the middle cavity. Flip the squash halves upside down and peel them. (Note: The raw squash rind can irritate your hands. If they start to itch or tingle, wear gloves.) Cut the squash into 1-inch cubes. Toss with the onion, garlic, a drizzle of olive oil and salt and pepper. Mince about half of the fresh sage leaves and also toss with the squash. Spread the squash mixture in a thin layer on a large baking sheet and roast for about 40 minutes or until the squash is soft. Heat salted pasta water to boiling and cook the farfalle until al dente. Drain and set aside. As the squash finishes roasting, heat about two tablespoons of olive oil in a large high-sided sauté pan. The oil is ready when it pops and sputters.
