Steps:
- Preheat an oven to 425 degrees F (220 degrees C). Grease a 13x9 glass baking dish with the oil, and set aside.
- Rinse the catfish fillets, and pat dry. In a shallow bowl, combine the cornmeal, creole seasoning, paprika, sugar, and black pepper. Combine the eggs and hot sauce or water in a another bowl. Dip the fillets in the egg mixture, dredge in the cornmeal mixture, and arrange in the baking pan.
- Bake for 15 minutes, or until cooked through and golden brown. Turn once during cooking. Place catfish on a paper-towel lined plate, and serve immediately with additional hot sauce.

- Make fish:
- Preheat oven to 500°F with rack in middle.
- Brush a baking pan with 2 tablespoons oil.
- Combine bread crumbs, cornmeal, and 1 teaspoon salt in a large sealable plastic bag and shake to mix.
- Season fish with salt and pepper on both sides. Working with 1 piece at a time, dip fish in eggs, letting excess drip off, then put in bag and shake to coat well with crumbs.

- Preheat oven to 450°F.
- Heavily spray a large non-stick baking pan with non-stick cooking spray.
- Pour egg substitute in large shallow bowl.
- Sprinkle with some Emeril's essence; also some salt and pepper, if you prefer.
- Place fish coating on a large plate.
- Add some Essence to this also, if you wish.
- Rinse fish fillets.
- Squeeze lemon wedges over fish.
- Sprinkle with Essence, salt and pepper on both side of fish.

- Pre-heat oven to 425 degrees. Coat a baking sheet with cooking spray.
- In a shallow bowl combine the cornmeal with all the powdered spices listed. In a second bowl add the milk and hot sauce (if desired).
- Dredge the cleaned catfish fillets in the milk, then dip into the cornmeal coating on both sides. You may need to press down a bit to make sure the cornmeal adheres to the fish.
- Place the coated fillets on the baking sheet and give the tops a light shot of cooking spray for crispness.

- 1. Cut catfish filets into 4 pieces or use cafish nuggets. Rinse and dry with power towels.
- 2. Beat egg and mix with milk. Add hot sauce to taste.
- 3. In a second dish, combine flour, cornmeal and creole seasoning.
- 4. Put catfish into milk mixture, then cover with cornmeal mixture.
- 5. Place on pan that has been sprayed with cooking spray.
- 6. Once all catfish is on the pan, spray fish with cooking spray.
- 7. Place in a 450 degree oven for 6-10 minutes or until fish flakes and outside crust is crunchy.
- 8. Serve with tarter sauce or cocktail sauce or you can make crispy fish tacos.

I've posted recipes for oven fried catfish before, but never along with my signature fry coating recipe. Use them together or separately as you wish. I like it on fried fish too, but one can't be naughty all the time, right?

- 1. Soak the fish in warm milk with salt if it has an odor (MILD fishy odor, not "throw it in the trash because it smells like walking death" odor) but try to buy nice fresh ones, right? It's a French technique I picked up awhile back. Drain the fish after.
- 2. Preheat the oven to 450F and line a baking sheet with nonstick foil. If you don't and the fish sticks to the pan, don't come griping to me. K?
- 3. Dip fish in milk then in coating, then in beaten egg then in the coating again.
- 4. Place fish on the pan, drizzle lightly with olive oil to help browning, bake for 10-15 minutes, then turn it over and bake for 5-10 minutes more or until it is browned nicely.

- Place oven rack in the top 1/3 of the oven and preheat it to 425 degrees F.
- Set a wire rack in a baling pan and coat the rack lightly with non-stick cooking spray and set aside.
- In a food processor, fitted with the metal blade, or in a blender, combine the cornflakes, chili powder, thyme and garlic powder.
- Use the on/off pulses until the mixture resembles coarse crumbs.
- Transfer the mixture to a shallow bowl or plate.
- If the fillets are large, cut them into serving-size pieces.
