SPICED ORANGE GINGER-SOY DIPPING SAUCE



Spiced Orange Ginger-Soy Dipping Sauce image

Number Of Ingredients 11

2 cups sugar
1 teaspoon freshly grated ginger
1 small shallot, sliced
1 clove garlic, sliced
1 stalk lemon grass, sliced
7 scallions, chopped
1/4 cup (packed) chopped cilantro
1 dried habanero pepper
Juice from 3 makrut limes or other limes
1/2 cup freshly squeezed orange juice
2 tablespoons soy sauce, or to taste

Steps:

  • Place the sugar in a 4-quart heavy-bottomed saucepan over medium heat. Cook, stirring occasionally with a wooden spoon, until sugar is melted and light golden. Remove from heat and carefully add 1/2 cup water, avoiding splatters.
  • Add ginger, shallot, garlic, lemon grass, scallions, cilantro, and habanero pepper. Stir well, and return to medium heat. Simmer until reduced to a thin glaze, about 10 minutes. Remove from heat and add lime juice and orange juice. Add soy sauce to taste. Strain through a fine-meshed sieve, discarding solids. Serve at room temperature; may be refrigerated for up to one week.

  • In small bowl, mix all ingredients with whisk until well blended.

Steps:

  • Place juice in a small nonreactive saucepan over medium-high heat. Gently boil until liquid has reduced to 1/2 cup and is syrupy, about 1 hour. Store reduction in an airtight container, refrigerated, up to 5 days.

4 tablespoons peanut oil, divided
1 1/2 pounds sea scallops, patted dry with paper towels
2 teaspoons ground peppercorn blend, or ground black pepper
2 garlic cloves, finely chopped (about 2 teaspoons)
1/2 cup orange juice
1 tablespoon soy sauce
1/2 teaspoon (packed) grated orange peel

Steps:

  • Heat 3 tablespoons oil in large skillet over high heat. Sprinkle scallops with pepper blend and salt. Working in batches, add scallops to skillet in single layer; sauté until brown on outside and just opaque in center, about 2 minutes per side. Transfer scallops to plate, leaving drippings in pan.
  • Add garlic and remaining oil to drippings in skillet; stir 30 seconds. Add orange juice, soy sauce, and orange peel. Boil until sauce thickens to syrup, stirring frequently, about 2 minutes.
  • Pour sauce over scallops and serve.

¼ cup orange juice
2 tablespoons honey
1 tablespoon soy sauce
1 tablespoon lemon juice
¼ teaspoon ground ginger
1 (1 pound) salmon fillet, cut into 4 pieces
¼ teaspoon salt
ground black pepper to taste
2 teaspoons extra-virgin olive oil
1 lemon, cut into 4 wedges

Steps:

  • Mix orange juice, honey, soy sauce, lemon juice, and ginger together in a small bowl.
  • Place salmon in a shallow dish. Pour all but 3 tablespoons of the orange juice mixture on top. Reserve remaining mixture in the bowl. Let salmon marinate at room temperature for 30 minutes.
  • Preheat oven to 450 degrees F (230 degrees C).
  • Transfer salmon to a baking dish lined with aluminum foil; pat dry with paper towels. Discard marinade. Spoon 1 tablespoon of reserved orange juice mixture over salmon; season with salt and pepper. Drizzle olive oil on top.
  • Bake in the preheated oven until heated through, about 6 minutes. Spoon remaining 2 tablespoons orange juice mixture over salmon. Continue baking until flesh flakes easily with a fork, 6 to 9 minutes more. Serve with lemon wedges.
