GARLIC PARMESAN ORANGE ROUGHY

This is a quick, flavorful dish that looks gourmet. The spread works well with other mild white fish. Serve with your favorite vegetable and couscous for an easy weeknight meal.

4 (4 ounce) fillets orange roughy
½ lemon
½ cup grated Parmesan cheese
¼ cup butter, softened
¼ cup prepared Dijon mustard mayonnaise blend
1 large clove garlic, pressed
¼ pinch salt
paprika

Steps:

  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
  • Place the orange roughy filets on the broiler pan and squeeze the lemon over the top of the fish. Broil the filets in the preheated oven for about 6 to 8 minutes.
  • Combine parmesan, butter, dijionnaise, garlic, and salt in a small bowl. Remove the fish from the oven and spread the cheese mixture on top of the filets. Sprinkle with paprika. Broil until the topping is lightly browned and the fish flakes easily with a fork, about 3 minutes.

I made this up one night when I had some fresh fish, and not too much in the fridge that I could add to it. I served it with garlic & parmesan couscous, peas, and a salad.

Number Of Ingredients 6

1/2 lb orange roughy, cut into fillets
3 tablespoons butter
4 cloves garlic, minced
1 tablespoon white wine
1/4 cup onion, cut into rings
salt and pepper

Steps:

  • Preheat oven to 450.
  • Rinse filets in water, pat dry with paper towels.
  • Set aside.
  • Melt butter in a small saucepan.
  • Add garlic, and white wine, stirring until all is mixed together.
  • Spray a small square glass baking dish with cooking spray.
  • Sprinkle both sides of fish with salt and pepper, and lay fish filets in the dish.
  • Lay onion rings on top of fish, and pour garlic butter mixture over everything.
  • Bake at 450 for 12-15 minutes, until fish flakes when you pick at it with a fork.
  • This is super easy, low in calories, and also tastes great.

BRAISED ORANGE ROUGHY WITH LEEKS



Braised Orange Roughy with Leeks image

2 tablespoons (1/4 stick) butter
3 large leeks (white and pale green parts only), halved lengthwise, sliced
2 teaspoons sugar
1/2 teaspoon dried thyme, crumbled
4 6- to 8-ounce orange roughy fillets
1/2 cup whipping cream
1/4 cup dry vermouth
Fresh chives or green onion tops cut into 1-inch lengths

Steps:

  • Melt butter in heavy large skillet over medium heat. Add leeks and sprinkle with sugar and thyme. Season with salt and pepper. Sauté 5 minutes. Reduce heat and cover and cook until very soft, stirring occasionally, about 10 minutes. Season fish with salt and pepper. Arrange atop leeks. Add cream and vermouth. Cover and cook until fish is opaque, about 8 minutes. Transfer fish to plates and keep warm.
  • Boil sauce until slightly thickened, about 3 minutes. Season to taste with salt and pepper. Top fish with sauce and leeks. Garnish with chives.

Orange roughy tastes really good with just butter and garlic. This is a very basic and flavorful recipe. It goes really well with grilled asparagus and pine nuts.

2 orange roughy fillets
2 garlic cloves, chopped finely
2 tablespoons butter
1 tablespoon olive oil
salt and pepper

Steps:

  • Preheat your oven to 375 degrees.
  • Wash the fillets and pat them dry.
  • Place the fillets in a baking pan and top with the garlic, olive oil and about a tablespoon of butter on each filet. Salt and pepper to taste, then put it in the oven.
  • Bake for about 15-20 minutes, or until it flakes with a fork and is opaque all the way through.

This recipe is adapted from a recipe I found in an old Bon Appétit magazine by Chef Candida Sportiello. The modifications I made to this recipe were a reduction of the red pepper flakes eliminating some of the heat, and adding capers and white wine at the end of the saute period! It is such a fabulous and tasty dish I didn't feel it needed much in the way of change at all.. She is quite the chef and restaurateur!

1/4 cup olive oil
2 orange roughy fillets
1/2 cup chopped fresh parsley
1/4 teaspoon dry crushed red pepper
4 cups cherry tomatoes, halved
1 cup kalamata olives or 1 cup other brine-cured black olives, whole
1/8 cup capers
6 garlic cloves, minced
3 tablespoons sauvignon blanc wine

Steps:

  • Heat olive oil in heavy large skillet over medium-high heat. Sprinkle fish with salt and pepper. Add half of fish to skillet and sauté until just opaque in center, about 3 minutes per side. Transfer fish to platter. Repeat with remaining fish. Add parsley and crushed red pepper to same skillet; sauté 1 minute. Add tomatoes, olives, capers and garlic; sauté until tomatoes are soft and juicy, about 2 minutes. Spash a few tablespoons of wine and season with salt and pepper as needed; spoon over fish.
