I did some experimenting to come up with this recipe. It's quick and easy enough to prepare for the family after coming home from work, and tasty enough for company.

1/2 cup mayonnaise
1/4 cup sour cream
1/4 cup sweet pickle relish
1 tablespoon Dijon mustard
1 cup finely crushed cornflakes
1/4 cup grated Parmesan cheese
1 teaspoon dried basil
1 teaspoon dill weed
1 teaspoon paprika
1/8 teaspoon pepper
1/2 cup milk
1-1/2 pounds orange roughy fillets
Lemon wedges

Steps:

  • For tartar sauce, in a small bowl, combine the mayonnaise, sour cream, pickle relish and mustard in a small bowl. Cover and refrigerate., In a large resealable plastic bag, combine the cornflake crumbs, Parmesan cheese and seasonings. Place the milk in a shallow bowl. Dip fillets in milk, then place in bag and shake to coat. , Arrange in a greased 15x10x1-in. baking pan. Bake at 450° for 10-15 minutes or until fish flakes easily with a fork. Serve with tartar sauce and lemon.

This is the first thing my husband cooked for me back when we were dating. Very simple but really delicious. I was hooked.

1 1/4 lbs orange roughy fillets
1 teaspoon seasoning salt (or to taste)
pepper
paprika
3 tablespoons butter or 3 tablespoons margarine, melted

Steps:

  • Put fish fillets in a greased 11x7 inch baking dish.
  • Sprinkle with seasoned salt, pepper, and paprika.
  • Drizzle with melted butter.
  • Cover and bake at 400 degrees for 15 to 20 minutes or until fish flakes easily.

8 orange roughy fillets, washed in water (5 oz each)
salt, pepper, and paprika
1/4 cup lemon juice
1/4 cup butter melted
1/4 cup parsley chopped
1 lemon sliced

Steps:

  • Place fillets on nonstick baking sheet coated with nonstick cooking spray. Sprinkle with salt, pepper, and paprika. Mix lemon juice and butter and drip over fish. Broil about 6 inches away from heat for about 10 minutes, basting once with lemon butter. Remove from broiler when fish is firm and flaky. Baste again and top with parsley and lemon slices. Serve immediately with tartar sauce. *Butter is high in "naturally" saturated fat and is used very sparingly in this delicious "A- " recipe. This nutritious fish is high in fatty acids that can reduce LDL (bad) cholesterol. It fits nicely into a day that contains an overall fat percentage of less than 20 percent.

1 large orange roughy fillet (mine was a little over 1/2 pound)
pepper
1 cup orange juice
2 tablespoons dried lavender
2 carrots, peeled and cut into julienne stripes
3 scallions, sliced into julienne strips
1 teaspoon peanut oil
1 cup white wine
2 tablespoons orange liqueur (I skipped the liqueur) (optional)

Steps:

  • Pepper both sides of the fish.
  • Pour orange juice in a measuring cup (I used ready-made but imagine freshly squeezed from 2 oranges will be so much better), stir in lavender and white wine and set aside.
  • Heat peanut oil (or use unsalted butter) in small skillet, stirring to coat until tender (5 minutes).
  • Meanwhile in a large skillet, suitable for poaching fish, add orange juice mixture and bring to a boil over medium high heat. Add fish and lower heat to a simmer until fish is tender and flakes with a fork (10 - 15 minutes). Remove fish to a platter and keep warm.
  • Add orange liqueur, if using, to pan and turn up heat and reduce by half. Return fish to pan until heated through.
  • Place fish on plates and top with vegetables, spooning sauce over fish.
