ORANGE PRALINE YAMS (TNT)

I make these every Thanksgiving. So far,it's the best yam casserole I've ever tasted.

Number Of Ingredients 15

two cans (2 lbs, 8 oz. each) yams, drained, or 4 pounds cooked, peeled and sliced fresh yams or sweet potatoes
2/3 cup orange juice
1 tbsp. grated orange rind
5 tbsp. brandy
2 t. salt
freshly ground pepper to taste
1 t. ground ginger
4 tbsp. butter or margarine, melted (1/2 stick)
1/3 cup light or golden brown sugar, packed
3 egg yolks
PRALINE TOPPING:
2/3 cup light or golden brown sugar, packed
1/4 lb. (1 stick) butter or margarine, melted
1 cup chopped pecans, about 4 oz
1 t. ground cinnamon

Steps:

  • 1. In mixing bowl, with mixer, beat yams or sweet potatoes until smooth. Mix in remaining yam casserole ingredients, beating until mixture is light and fluffy. Butter a 12 inch porcelain quiche dish or a shallow 2 quart casserole (7 x 11 inches). Pour in yam mixture, smoothing top evenly. Make praline topping by mixing all ingredients together in small bowl. Spread evenly over yams. May be refrigerated covered overnight at this point. Bake at 350 for 45 to 50 minutes or until golden brown and bubbly. Remove from oven and let stand 10 minutes before serving. If you want more of this delectable casserole, double the recipe but make it in two separate casseroles so that the proportions of the filling to the topping remains correct. I lost my recipe for a while and tried serveral others, but no comparison to this one. My dh favorite. A must a Thanksgiving.

40 ounces large can yams
1/2 cup brown sugar
1/4 cup flour
1/4 cup butter
0.5 (10 ounce) bag miniature marshmallows

Steps:

  • Preheat oven to 350. Drain yams.
  • Place in ungreased 2 quart casserole dish.
  • Mix togehter brown sugar, flour, and butter. Sprinkle on top of yams.
  • Top with marshmellows.
  • Bake at 350 for 35-40 minutes.

I found this recipe on the back of a can of sweet potatoes. Everyone seemed to really like them... even those who don't usually like Yams.

Number Of Ingredients 6

1 (29 ounce) can cut sweet potatoes in light syrup, drained
1/3 cup chopped pecans
1/3 cup coconut
1/3 cup firmly packed brown sugar
3 tablespoons flour
3 tablespoons margarine or 3 tablespoons butter, melted

Steps:

  • Heat oven to 350 degrees.
  • Place drained yams in an ungreased 1/2 quart casserole or baking dish.
  • In a small bowl, combine remaining ingredients; blend well. Sprinkle over yams.
  • Bake at 350 for 35 to 40 minutes or until bubbly.

Orange Pralines image

Pralines with just a subtle hint of orange -a different twist to a timeless classic. I lay a piece of waxed paper on top of a kitchen towel on my table and drop the pralines by the spoonful on top of the waxed paper. I find it's easier to pick them up this way and less likely to break.

Number Of Ingredients 8

2 1/4 cups pecan halves
2 cups sugar
3/4 cup half-and-half
1/4 teaspoon salt
3 tablespoons light corn syrup (Karo)
1 orange, juice and zest of, grated
4 tablespoons butter
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees.
  • Spread pecans on baking sheet and lightly toast for about 7-10 minutes.
  • Remove from oven and set aside.
  • In large saucepan combine sugar, half and half, salt, butter and corn syrup.
  • Cook over medium heat stirring constantly until mixture reaches 235 degrees on candy thermometer.
  • Add orange juice and zest and cook until it again reaches 235 degrees.
  • Remove from heat, add vanilla and stir for 1 minute.
  • Add pecans and stir briefly.
  • Working rather quickly drop by spoonfuls onto waxed paper.
  • Store in covered container.

4 medium yams
2 eggs
1/4 cup dark brown sugar, firmly packed
2 tablespoons butter, melted
1 teaspoon salt
20 pecan halves
1/3 cup sugar
1 tablespoon cornstarch
1/8 teaspoon salt
1/8 teaspoon orange peel, grated
1/4 cup dark brown sugar, firmly packed
1 cup orange juice
1 tablespoon lemon juice
2 tablespoons butter
3/8 teaspoon Angostura bitters

Steps:

  • Cook yams until tender.
  • Peel and quarter yams and mash in a large bowl.
  • Beat in butter, brown sugar,salt and eggs.
  • Turn into a 1-qt casserole dish
  • Arrange pecan halves in a pattern on top of casserole.
  • Sprinkle top with 1/4 cuo dark brown sugar.
  • Drizzle top with 1/4 C melted butter.
  • Bake at 375* for 20 minute.
  • ********************************.
  • Combine sugar, cornstarch, salt, orange peel, orange juice , and lemon juice in a sauce pan.
  • Bring to a boil over medium heat.
  • Cook until thickened, stirring constantly.
  • Remove from heat.
  • Stir in butter and bitters.
  • Serve warm orange sauce over casserole.
