ORANGE JELLO SALAD
Steps:
- Mix together 4 cups of water, orange jello mix, and vanilla pudding mix in a sauce pan. Bring to a boil, stirring the whole time to keep clumps from forming. Once it starts to boil, remove from heat. Pour into a heat-resistant container (I usually use a glass baking dish), cover with plastic wrap and place in the fridge for about four hours. Remove from fridge and break up the jello into chunks. Place in a large bowl. Add in the pineapple, mandarin oranges, and whipped cream and mix around until everything is combined. Keep refrigerated until you are ready to serve.

- In a large mixing bowl add the hot water to the jello, stirring till dissolved. Stir in orange juice. Chill until mixture begins to thicken ( I chill it in a sink half full of ice cubes, about 20 minutes ).
- Stir in sour ceam and sherbet, beat until thick and foamy. Fold in pineapple, mandarin orange segments and cherries. Pour into a lightly oiled 2 quart mold.

This is a favorite from my childhood. I always use orange jello, cause it's the way mom made it. But you could easily substitute other flavors. Very low fat if you use fat free coolwhip. - In a saucepan, mix the jello powder with the pineapple and the pineapple juice from the can the juice, add the drained oranges.Heat over medium high heat. When it just comes to a boil remove from the heat and allow to cool 30 minutes.
- In a large bowl, mix the jello mixture with the buttermilk until well incorporated. Fold in the cool whip and pecans. Pour into a jello mold or just a regular glass or tupperware bowl. Chill at least 2 hours or overnight.
- When ready to serve, unmold onto a plate, or just scoop from the bowl.

While there appears to be a huge variety of Orange Delight salads out there, I have yet to run across one made exactly the way we make it in our home. - 1. For jello mixture: Bring water to a boil, add Jell-O, stirring until clear. Remove from heat. Add frozen orange juice concentrate and stir until melted. Stir in mandarin oranges and pineapple. Pour into an 11 x 7 dish and refrigerate overnight or until the jello mixture has completely set.
- 2. For Topping: Mix pudding with milk until it starts to set up. Be sure to use only 1 cup of milk, as listed in the ingredients. You don't want to make actual pudding. Fold in Cool Whip and spread over top of jello mixture.
- 3. Optional: Put mandarin orange slices on top for color. Add crushed pecans for added texture, color, etc.
APRICOT ORANGE JELLO SALAD

- 1. Combine both jello flavors and make according to package directions. (Use orange juice in place of cold water if desired.) Let it set in refrigerator, until of egg white consistency. 2. Soften cream cheese. Beat cream cheese. Add Cool Whip. 3. Fold mixture into Jello. 4. Place mandarin orange pieces in a greased mold or 13 x 9 Pyrex dish. Pour Jello mixture over them. 5. Chill until set.

- 1. In a large bowl, thoroughly combine the cottage cheese with the Jello. Mixture will be a little grainy due to undissolved sugar (you can stir it until it dissolves, but I never do and it comes out fine - sugar will usually dissolve during refrigeration, but if it doesn't, it's no big deal).
- 2. Fold in the whipped topping until evenly incorporated. Don't get too vigorous with this as it's possible to stir out all the loft in the topping.
- 3. Make sure the oranges are well drained (if you're frugal you can use the juice to flavor/sweeten something else). OPTIONAL - Reserve several orange sections for decoration - (I usually pull out 16 well-formed slices). Next, gently stir the remaining fruit into the Jello mixture until well distributed. Remember, don't over-do it or you'll lose too much loft from the whipped topping and the dish will be runny.
- 4. Transfer mixture to serving dish, smooth top and (OPTIONAL) arrange reserved orange sections in attractive design (I put a slice at each of the clock numbers, all facing the same direction, plus a "flower" of 4 in the center, usually facing the opposite direction from the numbered slices). Cover; refrigerate. Serve cold.
- 5. VARIATIONS This can easily be made lower calorie or diabetic friendly by choosing dietetic options for the ingredients. Be forewarned, however, if you use a dietetic product for every option, you will probably be disappointed in the flavor. If you want more of a Dreamsicle flavor, you can add half a teaspoon of vanilla extract.
TRIPLE ORANGE JELLO SALAD
Another one of Mom's recipes. (I know I know, What can I say, I love her cooking!) She wouldn't give me the recipe for years but then I managed to work it out of her... and then I ran right here to share! Ok, so I've had it a long time, but I still thought I'd share anyway. Enjoy!

- Pour boiling water into a bowl and add jello. Stir until dissolved, then add orange sherbet and stir until it melts completely. (It helps if you put the sherbet in the refrigerator for an hour or two to soften it before adding it to the Jello).
- Refrigerate about 2 hours or until thickened.
- Pour Jello and orange segments into a food processor. Add Cool Whip and whip in processor just until blended. Refrigerate 2 hours or overnight.
- ***Note, as first reviewer suggested, you can either add entire can of oranges to salad and blend in processor or add 1/2 then stir in the other 1/2 of whole oranges after blending in processor. It's up to you and whether or not you like whole oranges or if you want the salad to be smoother. (Thanks Pismo!).

- 1. Dissolve gelatin in hot water. Add 1 1/2 cups cold water. When gelatin has thickened, but not set, add bananas and crushed pineapple.
- 2. Fold in marshmallows and oranges. Pour into 9" X 13" pan and return to refrigerator.
- 3. After gelatin is set: Cook 2 tbsp flour, 1 egg slightly beaten, 1/2 cup sugar, and 1 cup pineapple juice. Cook until thickened. Add 2 tbsp butter.
- 4. After this mixture is cold, add 1 cup whipping cream (whipped with juice of one lemon).
- 5. Spread over top of gelatin, and keep chilled.
3 LAYER ORANGE JELLO SALAD
This recipe was in a cookbook I got for Christmas in 1974. Whenever we plan a family dinner, my cousin will always say, "And Lane will bring the Orange Jello Salad"! It's not 'diet food' so I save it for special occasions. Could also be used as a dessert.

ORANGE FLUFF JELLO SALAD
Steps:
- 1. Mix together pudding, jello and water in pan and cook over medium heat, stirring constantly, until it boils. Remove from heat and pour into large glass bowl. Refrigerate until mixture thickens, about 1 hour. Beat until creamy. Fold in Cool Whip, marshmallows and drained fruit. Chill another hour before serving. Just before serving, slice bananas and stir them in. Top with additional mini marshmallows for decoration. If you like coconut, you could also top with coconut for a more tropical flavor. Note: Some people loved it, some found it too sweet. If you want a less sweet dessert or lower calorie, use sugar free pudding, sugar free jello and light Cool Whip.
