PASTRY CRISPS WITH VANILLA ICE CREAM AND ORANGE CARAMEL SAUCE



Pastry Crisps with Vanilla Ice Cream and Orange Caramel Sauce image

1 sheet (1/2 pound) frozen puff pastry, thawed
1 navel orange
1/4 cup sugar
1/3 cup water
2 tablespoons Grand Marnier or other orange-flavored liqueur
vanilla ice cream

Steps:

  • On a lightly floured surface roll out the puff pastry 1/8 inch thick and cut out as many 6-inch squares as desired, reserving any remaining dough, covered and chilled, for another use. (Extra squares, baked, keep in an airtight container at room temperature for several days). Transfer the squares to an ungreased baking sheet, bake them in the upper third of a preheated 425°F. oven for 12 to 15 minutes, or until they are crisp and golden, and let them cool on a rack.
  • While the pastry is baking, remove the zest from half of the orange with a vegetable peeler and chop it. With a serrated knife cut away the remaining zest and the pith from the orange, discarding them, and cut the sections free from the membranes, discarding the membranes. In a heavy skillet cook the sugar over moderate heat, undisturbed, until it begins to melt and continue cooking the sugar, swirling the skillet, until it is a golden caramel. Remove the skillet from the heat and add the water carefully with the chopped zest. Simmer the sugar mixture, stirring, until the caramel is dissolved, add the Grand Marnier, and boil the mixture until it is reduced to about 1/4 cup. Strain the sauce into a bowl and let it cool until it is warm.
  • Put a pastry square on each of 2-dessert plates, top each pastry with a scoop of the ice cream and some of the orange sections, and drizzle each serving with some of the sauce.

½ cup white sugar
½ cup packed brown sugar
1 tablespoon orange juice
1 egg
1 teaspoon orange zest
2 ½ cups sifted all-purpose flour
¼ teaspoon salt
¼ teaspoon baking soda

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Cream the shortening. Gradually add the sugar and the orange juice. Cream well. Beat in the egg and the orange rind.
  • Sift the flour, salt and baking soda. Add the flour mixture to the creamed mixture a little at a time. Fill cookie press and form cookies onto an ungreased cookie sheet.
  • Bake at 375 degrees F (190 degrees C) for 10 to 12 minutes.

1 cup sugar
1 cup shortening
1 egg
1 teaspoon vanilla
1 1/2 tablespoons orange zest (From One Large Orage)
1 tablespoon orange juice
2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup sugar
2 teaspoons cinnamon

Steps:

  • Preheat oven to 350 Degrees.
  • Beat 1 Cup Sugar, Shortening, Egg, Vanilla and Orange Zest.
  • Add Orange Juice.
  • Stir in Flour, Soda, and Salt.
  • Shape dough into walnut sized balls. Combine remaining sugar and cinnamon.
  • Dip balls in cinnamon-sugar mixture and place on ungreased baking sheet.
  • Flatten cookies with the bottom of a glass dipped in cinnamon-sugar mixture.
  • Bake 10 to 15 minutes or until delicately browned.
  • ADDITIONALLY, I tried this over the weekend using lime juice and zest and rolled them in plain white sugar and they were out-of-this-world!

Steps:

  • Position racks in upper and lower thirds of oven; preheat to 300°F.
  • Coat 2 large baking sheets with cooking spray.

1/2 cup olive oil
1-1/2 teaspoons curry powder
four 6-inch pita loaves

  • In a blender blend the zest with the oil and curry powder until the mixture is smooth and transfer the orange curry oil to a bowl. Split the pita loaves, brush the rough sides with the orange curry oil, and cut the pita halves into 1/4-inch-wide strips. 3 cups low-fat plain yogurt
1 1/2 large shredded wheat biscuits, coarsely crumbled
1 1/2 tablespoons unsalted butter, melted
2 teaspoons sugar
1/2 cup water
1/4 cup honey
6 (3- by 1/2-inch) strips orange zest
1/4 cup strained fresh orange juice
1/3 cup chilled heavy cream

Steps:

  • Drain yogurt in a paper-towel-lined large sieve set over a bowl, covered and chilled, 24 hours. Discard any liquid in bowl.
  • Preheat oven to 350°F.
  • Toss shredded wheat with butter and sugar in a bowl, then spread evenly on a baking sheet and bake in middle of oven until deep golden, about 12 minutes. Cool completely.
  • Simmer water, honey, zest, and orange juice in a small saucepan, uncovered, until reduced to about 1/2 cup, 8 to 10 minutes. Remove from heat and let steep, covered, 10 minutes. Cool syrup, then pour through a sieve into a small bowl, reserving zest.
  • Finely chop half of zest and stir into yogurt in a bowl along with 4 tablespoons syrup. Thinly slice remaining zest for garnish.
  • Beat cream in a small deep bowl with a whisk or an electric mixer until it just holds stiff peaks, then fold into yogurt. Divide yogurt among 6 small dessert dishes, then drizzle remaining syrup over it and top with wheat crisps and sliced zest.
