1/4 cup butter, cubed
2 tablespoons canola oil
5 cups uncooked fine egg noodles
2-1/2 cups frozen peas (about 10 ounces)
2-1/2 cups chicken broth
1 cup half-and-half cream
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large skillet, heat butter and oil over medium heat. Add noodles; cook and stir 2-3 minutes or until lightly browned. Stir in peas, broth, cream, salt and pepper. Bring to a boil. Reduce heat; simmer, covered, 10-12 minutes or until noodles are tender, stirring occasionally.

3/4 pound boneless skinless chicken breasts, cubed
2 medium carrots, sliced
1 small onion, chopped
2 celery ribs, sliced
1 garlic clove, minced
5 cups water
1/4 teaspoon pepper
2 packages (3 ounces each) chicken ramen noodles

Steps:

  • In a large saucepan coated with cooking spray, saute the chicken, carrots, onion, celery and garlic until chicken is no longer pink. Add water, pepper and contents of seasoning packets from the noodles. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until carrots are tender., Break noodles into pieces and add to soup; cover and cook for 3 minutes or until tender.

3-1/4 to 3-1/2 cups all-purpose flour
3/4 teaspoon salt
6 eggs, beaten

Steps:

  • In a small bowl, combine 3-1/4 cups flour and salt. Make a well in the center. Pour eggs into well. Stir together, forming a dough. Turn dough onto a floured surface; knead for 3-4 minutes or until smooth, adding remaining flour if necessary. , Divide into nine portions; cover and let rest for 15 minutes. Roll each portion into a 12-in. x 5-in. rectangle. Roll up jelly-roll style, starting with a short side; cut into 1/4-in.-thick strips. 1 cup peas, cooked (frozen or fresh)
1/2 cup parmesan cheese
1 tablespoon extra virgin olive oil

Steps:

  • Cook noodles in a large pot of boiling salted water until tender but still firm (about 8 min).
  • Drain noodles, reserving 1/4 cup of cooking liquid.
  • Return noodles to pot.

1 ½ cups heavy whipping cream

1 pound pasta, either wide egg noodles or fettucine, preferably imported
1 package (12 ounces) frozen small peas
1/4 cup grated Parmesan cheese
1/4 cup virgin olive oil
1 teaspoon salt
1/8 teaspoon freshly ground black pepper
1 cup cooking water from the pasta

Steps:

  • Bring 3 to 4 quarts of water to a boil in a large pot. Add the pasta, and boil it until tender (about 10 minutes for imported pasta).
  • Place the frozen peas in a strainer, and run them under hot tap water until all the ice particles have melted and the peas are defrosted. Place the peas in a large serving bowl with the cheese, oil, salt and pepper.
  • When the pasta is cooked, remove 1 cup of its cooking liquid, and add it to the bowl with the peas. Drain the pasta and add it to the bowl. Toss well and serve immediately.
