Beef bouillon gives a deeper, heartier flavor, while the chicken is lighter and a little more onion-ey. This works really well in those slow-cooker recipes that call for dried onion soup mix.

1 pound dried salt cod
6 cups boiling water
2 pounds small white or new potatoes
2 to 4 tablespoons olive oil
1 large onion, peeled and thinly sliced
2 to 3 cloves garlic, peeled and finely chopped
1/2 cup chopped fresh parsley
Freshly-ground pepper, to taste
4 hard-cooked eggs, peeled and cut into wedges
12 to 18 oil-cured black olives
Additional chopped parsley

Steps:

  • Soak the cod in water overnight in the refrigerator, changing the water several times. Drain and rinse well. Place the cod in a large saucepan and add the boiling water. Simmer over moderate heat for 10 to 15 minutes, until the cod flakes easily. Drain and rinse well, and flake into small pieces, removing any bones and bits of skin. Boil the potatoes until tender but firm, drain, and allow to cool. Peel and slice the potatoes into 1/4 inch slices. Heat 2 tablespoons of the olive oil in a large, heavy skillet over moderate heat. Add the onion and garlic and cook for 5 minutes, stirring frequently, until tender but not brown. Remove the onions and garlic from the skillet and set aside. Add the sliced potatoes to the skillet, along with more olive oil if necessary, and cook for 5 minutes, stirring frequently, until golden brown. Layer half the potatoes in a well greased 2-quart casserole or gratin dish. Sprinkle with parsley and pepper, add one third of the onion mixture, and half the cod. Repeat, ending with a layer of the onion mixture. Bake in a preheated 350 degrees F oven for 30 to 40 minutes, until hot and lightly browned. Arrange the egg wedges and olives attractively on top, and sprinkle with a little chopped parsley.

1 tablespoon grapeseed oil
1 yellow onion, finely diced
1 red onion, finely diced
1/2 cup dry sherry
1/2 cup dry white wine
4 cups sour cream
3 tablespoons salt
1 teaspoon ground black pepper
1 bunch scallions, sliced 1/4-inch-thick
2 potatoes, unpeeled, preferably Kennebec
1 gallon canola oil
Sea salt and black pepper

Steps:

  • For the dip: Heat the oil in a medium pan set over medium heat. Add the yellow onions and half of the red onions and saute, stirring occasionally, until caramelized, about 20 minutes. Add the sherry and wine and cook, stirring continually, until the liquid reduces completely, about 20 minutes more. Refrigerate until completely cool, 15 to 30 minutes.
  • Add the chilled onions, reserved red onions, sour cream, salt, pepper and scallions to a large bowl. Serve at room temperature.
  • For the chips: Slice the potatoes into chips on a mandoline, about 1/8-inch-thick.
  • Put the oil in a 3- to 5-gallon pot. Bring the oil to 325 degrees F. Fry chips, turning occasionally, until golden brown and all the little bubbles around the chips stop forming, about 15 minutes. (Those bubbles are an indicator of moisture. If you take them out before they're done, your chips will be soggy.)
  • Drain chips on paper towels and season with sea salt and black pepper. Serve with dip.

1/2 lb salt cod fish
3 tablespoons butter
1 small onion, minced
1 -2 garlic clove, minced
3/4 cup all-purpose flour
1 cup chicken broth
1 cup half-and-half
black pepper
1 tablespoon olive oil
2 large idaho potatoes
1/2 cup freshly grated parmesan cheese

Steps:

  • Place the cod in a large glass bowl, add enough cold water to cover; soak at least 12 hours, changing water twice; drain and pat dry.
  • In a small saucepan, melt the butter over medium heat; add in the onion and garlic; stir 1 minute.
  • Add in about 2 tablespoons flour and stir for 1 minute.
  • Add in broth and whisk until the mixture is smooth; add in half-and-half; season with pepper and continue to whisk until the sauce thickens, about 3 minutes; then remove from heat.
  • Preheat oven to 350°; grease a 1 to 1 ½ quart casserole.
  • Cut the cod into ¼-inch strips; dredge in remaining flour, tapping off excess.
  • In a large skillet, heat the oil over medium heat; add the cod, cook 1 minute on each side; drain on paper towels.
  • Peel the potatoes, cut into thin discs, and arrange half the discs over the bottom of the casserole.
  • Layer half the cod over the potatoes and pour half the sauce over the top.
  • Repeat with the remaining potatoes, cod, and sauce.
  • Sprinkle cheese over the top; cover and bake 1 hour.
  • Uncover and bake until nicely browned, about 25 minutes.

This recipe is quick and easy to make..The taste is simply amazing.Low salt chicken broth or low salt beef broth ,caramelized onions,with toasted pieces of multi-grain bread, topped with melted cheese.This is a winner and everyone will want the recipe for it.I know its a big hit around here.

3 tablespoons becel margarine
3 tablespoons olive oil
5 large onions (peeled and sliced thin, save a handful for later)
1/8 cup water
3 sprigs fresh thyme
8 cups reduced-sodium chicken broth or 8 cups low sodium beef broth
1 teaspoon pepper
6 slices multi-grain bread (toasted) or 6 slices French bread (toasted)
2 cups swiss cheese, Gruyere (shredded) or 2 cups cheddar cheese (shredded)

Steps:

  • Caramelize the onions by putting the onions in the oil and margarine in a large Dutch oven or soup pot with the water and pepper. Cover with a tight lid. Let the onions soften and sweat over medium heat about 10 minutes.
  • When the water has evaporated, remove the lid, turn heat to low and slowly caramelize the onions, stirring frequently for about one hour. Onions should be brown in color when ready and reduced in quantity to almost one half.
  • At this time, add the broth and thyme. Also add a small bit of raw onion if desired for body and appearance. Boil and bit longer to soften these.
  • Season again with pepper to taste.
  • Preheat the oven broiler. Ladle the soup into oven proof soup bowls. Fit a slice of the toasted bread on top. Sprinkle with the cheese.
  • Place bowls on cookie sheet.
  • Broil till cheese melts and turns golden.
