3 tblsp vegetable or chicken broth
1 tblsp soy sauce or tamari
1 and half tsps each: asian sesame oil, salt
1/2 tsp freshly ground pepper
2 tblsp vegetable oil
18 green onions, finely chopped
1 piece (2 inches long) ginger root, minced or finely grated
1 and half cups bean sprouts
1 cup fresh or frozen peas
1/3 cup rice wine or sake
5 cups leftover cooked rice or 1 and 1/4 cups uncooked rice, cooked according to package directions

Steps:

  • 1. Stir the broth, soy sauce, sesame oil, salt and pepper in a small bowl: set aside. Heat a wok or large skillet over high heat. Add the vegetable oil: heat. Add the green onions and ginger: stir fry until fragrant, about 20 seconds. Add the bean sprouts, peas and rice wine: stir fry 1 minute. 2. Add the cooked rice: stir fry until the rice is heated through, about 2 minutes. Remove the wok from the heat: pour the broth mixture over the rice. Toss until the grains are well coated. Do not omit the garlic butter, it lends the dish its character. I recommend lower-sodium soy sauce, since it will probably be used with other things, and the dish requires salt on its own, to be full of flavor. In case of any confusion, the rice, in the list of ingredients, is the measured, raw amount, before being cooked. For ease, be sure to have the rice hot, and dry, do not let it cook wet, or the dish will get to moist.

3 tablespoons butter, softened
garlic powder (about 1/2 teaspoon)
garlic salt (generous sprinkling)
vegetable oil, divided
3 -5 large eggs, beaten
1 medium onion, chopped
3/4 cup chopped scallion
salt and pepper
3 -4 tablespoons dry white wine
1 1/2 cups rice, cooked, hot
reduced sodium soy sauce, divided
soy sauce, at serving time

Steps:

  • Beat together the butter, garlic powder and garlic salt till smooth, set aside.
  • Heat a small, nonstick skillet to medium or medium-high, add a little oil, and the eggs, scramble them, I usually get them a little dry, if they are rarer, they most likely, will dissolve into the rice. Season them with some salt and pepper, adding about 1 teaspoon of the garlic butter, and a very little soy sauce. Youmay wish to place them on a board, and chop them, set them aside in either case.
  • Fry the onion in a 12-inch sauté pan in about 1 tablespoon of oil, season them and cook rather brown, adding the scallions after they soften lightly. when the fond has developed on the bottom of the pan, deglaze with about 2 tablespoons wine, if, while the onions finish cooking, another one develops, deglaze with 1-2 more tablespoons wine, make sure the liquid evaporates. Turn the heat to low.
  • Stir in the eggs, a little of the butter, and some sauce, if necessary. Add the rice. Cook and stir together over low heat. Swirl in the butter, and about 2-3 tablespoons sauce. Taste and correct for seasoning.
  • Bring to table, with more soy sauce on the side.

PAMMY'S FRIED RICE AND ONION PATTIES

I never had or heard of a "fried rice patty" until I married my husband. He loves having them with chili. He has heart problems so I came up with this healthier version...healthier then his for sure! He makes them by cooking them in ton's of butter or margarine and then serving with ton's of butter or margarine and then salted to taste. Since he hates onions, I don't put them in his...just mine. :) You can multiply this recipe easily.

1/2 cup cooked rice (I use left over)
1 egg white
1 tablespoon finely minced onion

Steps:

  • I put rice, egg white and onion in my mini chopper and "chop" till it's mixed good.
  • (You could mix it in a bowl too).
  • Spray a fry pan generously with Pam.
  • Turn burner to medium.
  • Drop mixture by the tablespoon into pan, 6 patties.
  • Cook until browned nicely on the bottom, about 3 minutes.
  • Turn, press down lightly on top of the patties with the bottom of a spatula to "flatten".
  • Cook until browned, about 3 more minutes.
  • Spread with a small amount of a soft type margarine and salt to taste.
  • (I would say this is 2 servings but that would depend on who's eating them, him or me, LOL! For him it's 1 serving.).

1 cup black rice
2 cups chicken or vegetable stock
6 eggs
2 tablespoons vegetable oil
1 tablespoons toasted sesame oil
2 cloves garlic, minced
1 teaspoon peeled and minced fresh ginger
Salt and freshly ground black pepper
2 green onions, thinly sliced for garnish
1 teaspoon sesame seeds, toasted for garnish

Steps:

  • Rinse the rice in three or four changes of water and let it drain thoroughly in a fine-mesh sieve. Transfer rice to saucepan, add the stock and bring to boil over high heat. Cover, lower the heat to a brisk simmer and cook for about 20 minutes or until the rice is tender and no liquid remains in pan. Remove from heat, uncover and fluff with a fork. Set aside. Whisk 2 of the eggs in a small bowl. Heat the vegetable oil and sesame oil in a wok or large skillet over high heat. Add the beaten eggs and cook through until they just set, gently breaking them up into large pieces as they cook. Add the garlic, ginger and cooked rice, season with salt and pepper and continue to stir and toss for 3 to 4 minutes, until some of the rice becomes crispy. Remove rice from heat and divide evenly among 4 bowls. Keep warm. Fry the remaining eggs in oil. Place an egg on top of each bowl of rice. Season with salt and pepper, garnish with green onions and sesame seeds and serve immediately.

1 1/2 cups basmati rice
2 tablespoons oil
3 cardamom pods (give them a whack to break open a little)
1/2 teaspoon cumin seed
2 onions, thinly sliced
1/2 teaspoon fresh ginger, grated
3 garlic cloves, crushed
1 green chili pepper, minced
3 cups cold water
1 cup peas (fresh or frozen)
vegetable oil (for deep frying)
2 large potatoes, peeled and diced

Steps:

  • Wash rice under cold running water drain and allow to stand 20 minutes.
  • Heat the oil in a large heavy based frying pan and fry the cardamom and cumin for a few seconds.
  • Add the onions and fry for 10 minutes until soft and golden brown.
  • Add the ginger, garlic and chili and fry a few seconds more.
  • Add the rice and stir to coat in the onion mixture.
  • Add the cold water and bring to the boil.
  • When almost all the water has evaporated add the peas.
  • In the meantime, fill a wok or frypan a third full with the vegetabel oil, heat and fry the diced potatoes for 5-7 minutes until golden.
  • Remove with a slotted spoon and drain on absorbent kitchen paper.
  • When the rice is cooked, gently mix through the fried potatoes and serve.
