2 sweet onions, halved and sliced
1 tablespoon butter
1 frozen deep-dish pie crust (9 inches)
1 cup egg substitute
1 cup fat-free evaporated milk
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large nonstick skillet, cook onions in butter over medium-low heat until very tender, 30 minutes. Meanwhile, line un-pricked crust with a double thickness of heavy-duty foil. , Bake crust at 450° for 6 minutes. Remove foil; cool on a wire rack. Reduce heat to 425°., Spoon onions into crust. In a small bowl, whisk the egg substitute, milk, salt and pepper; pour over onions. Bake until a knife inserted in the center comes out clean, 30-35 minutes. Let stand for 5-10 minutes before cutting.

3/4 cup chopped kalamata olives
1/4 cup chopped garlic-stuffed green olives
1/2 cup chopped plum tomatoes
2 tablespoons chopped scallion
2 tablespoons chopped red onion
1/2 cup chopped white mushrooms
3 cloves garlic, minced
1/2 cup chopped marinated artichoke hearts
1/2 cup shredded sharp cheddar cheese
1/2 cup crumbled feta cheese
1 tablespoon finely chopped fresh basil
1 tablespoon finely chopped fresh oregano
1 tablespoon finely chopped fresh thyme
4 large eggs
1/2 cup reduced-fat milk
Kosher salt and freshly ground pepper
2 tablespoons unsalted butter, melted
10 sheets frozen phyllo dough, thawed

Steps:

  • Preheat the oven to 350 degrees F. Mix the kalamata and green olives, the tomatoes, scallion, onion, mushrooms, garlic and artichoke hearts in a large bowl. Stir in both cheeses, the basil, oregano and thyme; set aside, 20 minutes. Meanwhile, beat the eggs, milk, and salt and pepper to taste in another bowl.
  • Brush a 10-inch glass or ceramic pie dish with some of the butter. Stack 6 sheets of phyllo dough (keep the rest covered with a damp towel) and cut the stack into a 12-inch round with a paring knife. Place 1 phyllo round in the prepared pie dish and brush with butter; continue to layer the remaining 5 phyllo rounds in the dish, brushing each piece with butter before adding the next.
  • Spread the olive mixture evenly in the phyllo-lined dish, then pour in the egg mixture. Cut the remaining 4 phyllo sheets into 10-inch rounds. Layer on top of the pie, brushing each piece with butter before adding the next.
  • Bake until the top is golden and a knife inserted in the middle comes out clean, about 1 hour. Let rest 10 minutes before slicing.

Delicious sausage-and-eggs breakfast is impossibly easy when it's baked all in one pan.

1 small bell pepper, chopped (1/2 cup)
1 medium onion, chopped (1/2 cup)
1 1/2 cups frozen shredded hash brown potatoes

1/2 cup Original Bisquick™ mix
1 cup milk
1/8 teaspoon pepper
2 eggs

Steps:

  • Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
  • In 10-inch skillet, cook sausage, bell pepper and onion over medium heat 8 to 10 minutes, stirring occasionally, until sausage is no longer pink; drain. Mix sausage mixture, potatoes and 1/2 cup of the cheese. Spread in pie plate.
  • In medium bowl, stir Bisquick mix, milk, pepper and eggs until blended. Pour into pie plate.

This is a traditional French holiday side dish made without any cheese. It's also a very simple side dish that will impress other cooks at potluck parties.

10 slices bacon, cut into 1 inch pieces
5 onions, thinly sliced
1 teaspoon salt
⅛ teaspoon freshly ground black pepper
½ cup milk
½ cup heavy cream
1 tablespoon all-purpose flour
4 eggs
1 pinch ground nutmeg
1 (9 inch) unbaked pie crust

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place the bacon into a skillet, and cook over medium heat until browned. Remove bacon from skillet, reserving 4 tablespoons bacon fat, and drain on paper towels.
  • Place the onions into the same skillet with the bacon fat, and cook over medium-high heat until evenly browned, about 8 minutes. Season with salt and pepper. Combine the milk and cream in a bowl. Sprinkle the flour over the onions, and stir to blend. Stir in the milk mixture. Cook and stir over medium heat until the mixture thickens. Remove from heat, stir in the bacon, and set aside to cool 10 minutes.
  • Beat the eggs in a mixing bowl until light colored and frothy. Stir a spoonful of the onion mixture into the eggs. Add another spoonful of the onion mixture, and continue stirring. Repeat, until all the onions have been stirred into the eggs and are thoroughly blended. Pour the mixture into the prepared pie shell. Sprinkle with nutmeg.
  • Bake in preheated oven until the crust is lightly browned, about 20 minutes. Remove from the oven and cool 5 minutes before serving.

ONION CUSTARD PIE

This pie makes a good picnic breakfast.

Yield makes one 9-inch pie

Number Of Ingredients 11

10 ounces Pie Dough (page 174)
4 tablespoons (1/2 stick) butter
4 onions, peeled and sliced thin
Salt
Fresh-ground black pepper
1 1/2 cups half-and-half
2 eggs
2 egg yolks
1/2 cup grated Gruyère cheese
Fresh-ground black pepper
A pinch of cayenne

Steps:

  • Roll out into a 12-inch round: 10 ounces Pie Dough (page 174).
  • Line a 9-inch tart or pie pan with the dough, folding the edges in to make double-thick sides. Press the sides in well and prick the bottom all over with a fork. Refrigerate for at least 1 hour.
  • Preheat the oven to 375°F. To keep the dough from shrinking while it bakes, line the shell with a piece of foil or parchment paper, then fill the tart with a layer of dried beans (or other pie weights). This is known as baking blind. Bake for 15 minutes or until lightly golden around the edge. Take the tart out of the oven; remove the foil and the weights. Return to the oven and cook for another 5 to 7 minutes, until the pastry is an even light golden brown.
  • Heat in a heavy-bottomed skillet: 4 tablespoons (1/2 stick) butter.
  • When melted add: 4 onions, peeled and sliced thin.
  • Cook over medium heat until soft and golden, about 20 to 30 minutes. Season with: Salt, Fresh-ground black pepper.
  • Remove from the pan and spread on a plate to cool. Mix together: 1 1/2 cups half-and-half, 2 eggs, 2 egg yolks, 1/2 cup grated Gruyère cheese, Salt, Fresh-ground black pepper, A pinch of cayenne.
  • When the onions have cooled, spread them in the baked tart shell, pour in the custard mixture, and bake at 375°F for 35 to 40 minutes or until the top is puffed and golden brown.
  • Sauté the onions with a few sprigs of fresh herbs such as thyme, savory, or marjoram.
  • Cut 4 slices bacon into small pieces and cook until just crisp. Drain and sprinkle over the bottom of the tart shell before adding the onions.
  • Try another cheese instead of Gruyère.
  • Add to the custard 2 cups sautéed, chopped greens in place of half of the onions.

This delicious pie has a buttery cracker crumb crust and is stuffed with sweet onions. It is superb along side any barbequed meat -- especially pork.

1 ½ cups buttery round crackers, crumbled
6 tablespoons butter, softened
2 cups thinly sliced sweet onions
2 cloves garlic, minced
1 tablespoon minced fresh chives
¾ cup whole milk
2 eggs
½ teaspoon salt
¾ cup shredded Cheddar cheese
1 pinch paprika
1 tablespoon chopped fresh parsley

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a mixing bowl, combine crackers and 4 tablespoons of butter in a bowl until well blended. Press into the bottom and 1 inch up the sides of 8 inch pie plate to form a shell. Refrigerate until needed.
  • Melt remaining 2 tablespoons butter in heavy skillet over medium heat. Saute onions and garlic slowly until tender, about 12 minutes. Arrange onions in the cracker crust.
  • Beat eggs, whole milk, chives, and salt in a bowl until blended. Pour the mixture over the onions. Sprinkle with cheese and paprika.
  • Bake in a preheated 350 degrees F (175 degrees C) oven for 35 minutes, or until a knife comes out clean. Garnish with the parsley. Serve hot or at room temperature.
