2 tablespoons olive oil
2 tablespoons unsalted butter
2 cups peeled garlic cloves (4 large heads)
5 onions, thinly sliced
2 large shallots, sliced
1 russet (baking) potato, peeled and sliced
3 tablespoons Sherry vinegar
1 tablespoon chopped fresh rosemary
6 cups chicken broth
1/2 cup heavy cream
1/2 cup well-shaken buttermilk
White pepper

Steps:

  • Melt oil and butter in a large heavy pot over moderately low heat. Add garlic and cook, stirring occasionally, until golden brown and caramelized, 10 to 12 minutes. Add onions and shallots and cook, stirring frequently, until onions are softened, about 10 minutes. Stir in potato, vinegar, and rosemary. Increase heat to high and sauté), stirring, for 2 minutes. Add broth and bring to a boil, then simmer, uncovered, until vegetables are very soft, 20 to 25 minutes.
  • Purée soup in 3 batches in blender (use caution when blending hot liquids) until very smooth. Stir in cream and buttermilk and season with salt and white pepper. Serve hot.

1 large whole head of garlic
1 1/2 tablespoons olive oil
9 cups thinly sliced sweet onions
2 1/2 cups sliced leeks
1 teaspoon salt
1 teaspoon dried thyme
2 tablespoons flour
1/3 cup dry white wine
30 ounces chicken broth
2 cups milk
6 tablespoons sour cream
toasted caraway seed (optional)

Steps:

  • Preheat oven to 350°F.
  • Remove the papery outer skin from garlic, but do not peel or separate cloves.
  • Rub 1-1/2 tsps oil over garlic head; wrap in foil and bake for one hour.
  • Let cool ten minutes; separate cloves and squeeze to extract garlic pulp.
  • Set pulp aside.
  • Heat remaining oil in a pot over medium heat; add onions and leeks and cook for 30 minutes, stirring often.
  • Add 1/2 tsp salt and thyme; cook an additional 30 minutes or until onions are golden.
  • Stir in flour; add wine and broth and bring to a boil; reduce heat and simmer 30 minutes.
  • Add garlic pulp, remaining salt and milk to onion mixture.
  • Simmer 8 minutes or until thoroughly heated.
  • Place half of the mixture in the blender and process until smooth; pour into a soup tureen or another pot and repeat with second half of mixture.
  • Garnish with sour cream and toasted caraway seeds (optional).

2 tablespoons butter
3 lb sweet onions, sliced into rings
2 cloves garlic, finely chopped
4 cups vegetable broth (32-oz carton)
2 tablespoons olive oil
4 packages (about 3.5 oz each) fresh shiitake mushrooms, stems removed, sliced
3/4 teaspoon salt
1/2 cup whipping cream
2 tablespoons dry sherry
1 tablespoon fresh lemon juice
1/8 teaspoon white pepper

Steps:

  • In 4-quart Dutch oven, melt butter over medium heat. Cook onions in butter 35 minutes, stirring occasionally, until lightly browned and very tender. Add garlic; cook 1 minute. Add 1 cup of the broth, stirring to loosen browned bits from bottom of pan. Stir in 2 cups broth. Heat to boiling; reduce heat. Cover; simmer 10 minutes. Remove from heat; cool 30 minutes.
  • Meanwhile, in 12-inch skillet, heat oil over medium-high heat. Cook mushrooms in oil 8 to 10 minutes or until lightly browned and liquid has evaporated; stir in 1/2 teaspoon of the salt. Remove from heat; keep warm.
  • In blender, place half of the onion-broth mixture. Cover; blend on medium speed 2 minutes or until smooth. Pour into large bowl. Repeat with remaining mixture. Return pureed mixture to Dutch oven. Stir in remaining 1 cup broth and the whipping cream; heat to boiling. Remove from heat; stir in sherry, lemon juice, pepper and remaining 1/4 teaspoon salt. Top with mushrooms.

2 leeks (white and pale green parts only), chopped (1 cup)
3 medium red onions, chopped (3 1/2 cups)
1/2 lb fennel bulb (sometimes called anise), stalks discarded and bulb cored and chopped (1 1/4 cups)
1 large garlic clove, minced
2 tablespoons unsalted butter
1/4 cup dry white wine
2 cups vegetable stock or low-sodium broth
1 1/4 cups water
1 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon freshly grated nutmeg
1 cup heavy cream
2 teaspoons Pernod
Garnish: chopped fresh chives

Steps:

  • Wash leeks well in a bowl of cold water, then lift out and drain well.
  • Cook onions, leeks, fennel, and garlic in butter in a 5- to 6-quart heavy pot over moderate heat, covered, stirring occasionally, until softened, about 15 minutes. Add wine and boil, uncovered, until evaporated, about 1 minute. Add stock, water, salt, pepper, and nutmeg and simmer, uncovered, until vegetables are tender, about 10 minutes. Stir in cream and simmer, stirring occasionally, until slightly thickened and liquid is reduced to about 6 cups, about 15 minutes.

1 cup water
1 ½ teaspoons lobster base
4 potatoes, cut into bite-size pieces
1 tablespoon butter, or to taste
½ onion, halved and sliced
2 teaspoons dried tarragon
2 teaspoons arrowroot powder
1 cup half-and-half

Steps:

  • Place vegetable stock, water, and lobster base in a large stockpot; bring to a boil. Stir in potatoes; boil until tender, about 15 minutes. Drain potatoes, reserving stock.
  • Melt butter in the stockpot over medium heat. Add onions and tarragon; cook and stir until onions are translucent, about 5 minutes. Add arrowroot; stir until thoroughly combined. Pour reserved stock back into the stockpot. Stir in half-and-half and bring bisque to a boil. Return potatoes to the stockpot; lower heat and simmer until heated through, about 5 minutes.

1/2 cup chopped celery
1 cup chopped sweet onion
6 cups chicken broth

1/4 cup reduced-fat cream cheese, room temp
1/2 cup heavy cream

Steps:

  • Melt the butter in a large soup pot and saute the chopped leeks, celery, onion, and garlic in the butter until tender.
  • Add the chicken broth, apple juice, salt and white pepper.
  • Bring to a boil. Reduce heat; cover and simmer for 30 minutes.
  • After 30 minutes, blend using an immersion blender/blender/food processor.
  • Add the cream cheese and heavy cream and blend thoroughly.
  • Bring back to a light simmer before serving.

CARAMELIZED ONION & SHIITAKE MUSHROOM BISQUE

2 Yellow Onions (diced)
3 cups Shiitake Mushrooms (stems removed, sliced)
1 tablespoon Garlic (minced)
4 sprigs Fresh Tyme
4 cups Vegetable Stock
8 ounces Heaby Whipping Cream
2 tablespoons Olive Oil
1 tablespoon Butter
1/4 cup Dry White Wine
1 pinch Cayanne Pepper
2 tablespoons Black Pepper
1 tablespoon Sea Salt

Steps:

  • The most time consuming part of this dish is caramelizing the onions. If you get these going first, you can prep the other ingredients while they are cooking. Heat a dutch oven on medium low and throw in the olive oil and sliced onions. Stir to coat onions in the oil, then stir every 5 minutes or so until you get closer to the end of the caramelization process.
  • Remove stems from mushrooms and slice tops, remove thyme leaves from stems, and mince garlic. Set aside.
  • Your onions will take about 45 minutes (give or take) to caramelize. You can let them get darker than I did here. At this point, stir in minced garlic and let cook for another minute.
  • Pour a splash of the veggie stock in to deglaze the bottom of the pot, then add the rest of the stock. Turn heat up and bring to a boil. Turn down and let simmer for 10 minutes on medium.
  • Remove from heat and pour into a mixing bowl. Use either a handheld immersion blender or a regular one to blend onion mixture. Set aside.
  • Reheat dutch oven and melt the butter. Add mushrooms, salt, cayanne, and black pepper. Sauté for 3 minutes. Add white wine and thyme and continue to simmer on medium for about 5-8 more minutes. Add onion mixture and bring to a boil.Reduce heat to medium low, add cream, and let simmer until it reaches the nice creamy texture of a bisque.
  • Garnish with croutons and fresh thyme, if desired. Enjoy!

2 tablespoons vegetable oil
8 cups sliced yellow onions
8 garlic cloves, smashed
6 cups low-salt chicken broth
15 sprigs thyme, tied into a bundle
1 1/2 cups cubed crustless day-old bread
3 slices thick-cut bacon, cut into 1/2 "-wide pieces
Kosher salt, freshly ground pepper
3 ounces soft fresh goat cheese, crumbled

Steps:

  • Heat oil in a large wide pot over medium-low heat; add onions and cook, stirring frequently, until translucent, about 20 minutes. Add garlic; cook, stirring frequently, until onions are golden brown and caramelized, about 20 minutes. Add broth and thyme. Bring to a boil; reduce heat and simmer for 20 minutes. Remove from heat. Add bread to pot. Let stand until bread is saturated, about 10 minutes. Discard thyme. Let cool slightly.
  • Working in batches, purée soup in a blender until smooth; strain through a fine-mesh sieve into a large pot. DO AHEAD: Can be made 1 day ahead. Cover and chill.
  • Cook bacon in a medium skillet over medium heat, stirring occasionally, until brown and crispy.
  • Bring soup to a simmer, adding water to thin if needed. Season with salt and pepper. Ladle into bowls; top with cheese and bacon.

SMOKEY FRENCH ONION BISQUE WITH STEAK

4 large white onions julienned
3 Tbsp olive oil
3 Tbsp flour
1 lb steak or roast beef, cubed
3 c chicken stock
2 c beef or veal stock
1 qt heavy cream
1 Tbsp worcestershire sauce
1 Tbsp balsamic vinegar
2 Tbsp bbq sauce
1/2 Tbsp chocolate syrup (yes, really)
1/4 c smokey mozzarella cheese
1/2 tsp cracked black pepper

Steps:

  • 1. Heat the oil in a large saute pan over medium heat. Then saute the onions until they're caramelized very dark.
  • 2. deglaze the pan with chicken stock then remove the pan from the heat and add flour stirring constantly till it makes a roux paste
  • 3. return to heat and slowly add the rest of the stock while continuing to stir. Add the cream, worcestershire sauce, balsamic vinegar, bbq sauce, cheese, and chocolate syrup... mix well and simmer on low.
  • 4. in a seperate saucepan, saute the meat till just cooked and heated through then add to the soup. Simmer for 20 - 30 minutes, taste, then add salt and pepper to taste.
  • 5. * note, the original recipe called for you to deglaze the pan with 2 tblsp of brandy, bring to a flame and cook till brandy was reduced. I've tried it both ways and still prefer to deglaze with the stock - I'm including this step here though in case anyone else would like to try it that way too.

3 tablespoons butter
3 tablespoons flour
1/2-1 teaspoon salt
1/4-1/2 teaspoon pepper

4 cups milk, can use half and half for a richer soup
1 cup shredded mild cheddar cheese
1/2-3/4 cup sharp cheddar cheese, more to taste
1/2 teaspoon Worcestershire sauce (To make this recipe vegetarian, be sure to use vegetarian Worcestershire sauce.)
1 dash hot sauce, to taste

Steps:

  • In large soup pot, saute onion in butter over medium heat until soft, but not browned.
  • Add flour, salt, pepper, sage and paprika; stir constantly til flour is dissolved. Gradually stir in the milk.
  • Cook over medium heat until boiling, stirring constantly.
  • Remove from heat. Stir in cheeses, Worcestershire sauce, and hot sauce mixing until cheese melts.
  • Puree soup in the pot with a stick immersion blender, (or use countertop blender/food processor) until smooth. Return to heat and heat very gently just to heat through, but do NOT boil.
  • Serve.

6 onions, or 1 sweet or Vidalia onion per person, sliced
1/2 cup butter
2 tablespoons sugar
unsalted chicken stock to cover (at least 4 cups)
1/2 cup heavy cream
1 1/2 cups grated Parmesan cheese
bowl-sized croutons, toasted with butter and sprinkled with Parmesan cheese

Steps:

  • In a large saucepan, sauté onions in butter until they become limp; sprinkle onions with sugar while they sauté. Cover onions with stock and cook slowly, 30-45 minutes, watching to see that the stock does not boil away. Turn off heat, and taste soup for seasoning. Purée soup in batches in food processor, or blend soup in saucepan with an immersion blender. Leave some small bits of onion for texture. Return soup to saucepan, if necessary. Add cream and cheese and heat soup through slowly. Serve with croutons on side.
