1/2 cup medium pearl barley
1-1/2 cups water
1 tablespoon canola oil
1 teaspoon beef bouillon granules
1/4 teaspoon salt
1/2 cup sliced green onions
1 can (4 ounces) whole button mushrooms, drained

Steps:

  • In an ovenproof skillet, saute barley in oil until golden brown. Stir in water, bouillon and salt; bring to boil. Remove from the heat; add onions and mushrooms. , Cover and bake at 350° for 40-50 minutes or until barley is tender.

Soup
2 tablespoons (1/4 stick) butter
2 tablespoons olive oil
8 cups sliced onions
1/3 cup pearl barley
3 tablespoons dry Sherry
8 cups chicken stock or canned low-salt chicken broth
4 fresh thyme sprigs
Flans
3 tablespoons butter
2 cups sliced onions
3/4 cup whipping cream
3 large eggs
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 1/4 cups (packed) grated Swiss cheese

Steps:

  • For soup:
  • Melt butter with oil in heavy large pot over medium-high heat. Add onions; sauté until caramelized, about 20 minutes. Add barley and Sherry; cook 30 seconds. Add chicken stock and thyme. Bring to boil. Reduce heat; cover and simmer 30 minutes. Season with salt and pepper. Discard thyme. (Can be made 1 day ahead. Cool, cover, and chill. Bring to simmer before serving.)
  • For flans:
  • Preheat oven to 300°F. Place six 3/4-cup custard cups or soufflé dishes in baking pan. Melt butter in heavy medium skillet over medium heat. Add onions; sauté until tender but not brown, about 8 minutes. Cool slightly; transfer to blender. Add cream, eggs, salt, and pepper; blend until smooth. Stir in cheese. Divide custard among prepared cups. Fill pan with enough hot water to come halfway up sides of cups. Bake flans until centers are softly set, about 30 minutes.
  • Cool flans 10 minutes in pan. Cut around flans to loosen; turn out each in center of soup bowl. Ladle soup around flans and serve.

1 white onion (large, chopped)
4 white mushrooms (large,chopped)
2 celery ribs (chopped)
1 garlic clove (minced)
2 tablespoons olive oil
6 cups water
3 tablespoons vegetarian beef bouillon powder (or 3 broth cubes)
1/3 cup pearl barley
1/2 teaspoon liquid smoke
1/4 cup red wine (optional)
1 1/2 cups vegetarian beef strips (chopped)
1 tablespoon dill
1 tablespoon fresh rosemary
salt and pepper
1 cup croutons or 4 slices stale bread
1 -2 cup reduced-fat swiss cheese (shredded, or other strongly flavored cheese)

Steps:

  • chop all the veggies and garlic and sauté in olive oil in a medium soup pot until just starting to caramelize.
  • add water, broth cubes, and barley and bring to a boil.
  • add the herbs, liquid smoke, wine (if using) and "beef" pieces. simmer on med for about 25 min, until barley is swelled and softened. if you think it's too watery you can add 2-3 Tbs of corn starch, dissolved in 1/4 cup cold water and cook until thickened.
  • adjust salt and pepper, serve topped with a handful of croûtons or the slice of stale or toasted bread, and sliced or shredded cheese. broil briefly if your bowls will take it or microwave just long enough to melt the cheese if they wont. serve with salad and the rest of the red wine.

1/2 pound fresh mushrooms, sliced
1/2 cup chopped onion
1/2 cup butter, melted
1/2 cup all-purpose flour
3 cups water
1/2 cup quick-cooking barley
3 chicken bouillon cubes
3 cups whole milk
2 cups shredded Swiss cheese
2 tablespoons Worcestershire sauce
1 tablespoon dried parsley flakes
1/4 teaspoon pepper

Steps:

  • In a 3-qt. saucepan, saute mushrooms and onion in butter until tender. With a slotted spoon, transfer mushrooms and onion to a bowl; set aside. Stir flour into pan drippings; cook over medium heat until lightly browned. Stir in water until smooth. Add barley; bring to a boil. Reduce heat; simmer, uncovered, stirring constantly, for 15 minutes or until barley is tender. Nutty and nutritious barley adds real substance to this twist on classic French onion soup

1 tbsp olive oil
2 medium onions , thinly sliced
2 garlic cloves , thinly sliced
6 thyme sprigs, chopped
good pinch sugar
500ml vegetable stock
60g barley
60g cavolo nero or kale , thick stalks discarded and leaves sliced
4 slices baguette , toasted
4 tbsp grated gruyère cheese

Steps:

  • Heat the oil in a saucepan, then add the onions, garlic, thyme, sugar and a good pinch of salt. Cook on a medium-low heat for 15-20 mins or until golden coloured. Add the stock and simmer for a further 10 mins.
  • In a separate large saucepan of salted boiling water, cook the barley for 15 mins, adding the cavolo nero or kale for the final 3 mins of cooking. Drain and rinse under cold water, then add to the soup and warm through.
  • Heat the grill. Top the toasted bread with cheese and place under the grill until it's bubbly and melted. Serve in 2 large bowls with the cheesy croutons on top.

I top individual bowls with toasty buttered croutons and a sprinkling of Swiss cheese, then pop them under the broiler. The rich results are delightful! - I. 7 tablespoons butter, divided
1-1/2 cups cubed day-old bread
3 large onions, quartered and thinly sliced
1-1/2 cups water
4-1/2 teaspoons chicken bouillon granules
1/4 cup all-purpose flour
1-3/4 cups milk, divided
1-1/2 cups shredded Swiss cheese, divided
Pepper to taste
Fresh minced chives or parsley

Steps:

  • Melt 3 tablespoons of butter; toss with bread cubes. Place on a lightly greased baking sheet. Bake at 350° for 7 minutes; turn and bake 7 minutes longer or until toasted. , Meanwhile, in a large saucepan, saute onions in remaining butter until lightly browned, about 12 minutes. Stir in water and bouillon; bring to a boil. Reduce heat; cover and simmer for 15 minutes. , Combine flour and 1/2 cup milk until smooth; gradually stir into onion mixture. Stir in remaining milk. Bring to a boil; boil for 2 minutes, stirring until thickened. Reduce heat to low; stir in 3/4 cup Swiss cheese and pepper. , Ladle into four ovenproof bowls; sprinkle with reserved croutons and remaining cheese. Broil 4 in. from the heat until cheese is melted and bubbly. Garnish with chives.
