My mother-in-law used to make this every summer and I could not get enough of it.

1 (16 ounce) package frozen peas, thawed
1 onion, finely chopped
2 hard-cooked eggs, chopped
½ cup mayonnaise
salt and ground black pepper to taste

Steps:

  • Combine peas, onion, hard-cooked eggs, and mayonnaise in a large bowl. Stir well to combine. Season with salt and pepper. Chill for one hour before serving.

Another one from my mom. I associate this with springtime but it is good year round. From Gooseberry Patch's Hometown Favorites Cookbook.

Number Of Ingredients 6

1 (10 ounce) package frozen peas, thawed and well drained
1 (8 ounce) can sliced water chestnuts, drained
1 cup celery, thinly sliced
1/2 cup sliced green onion
1/4 cup mayonnaise
1/4 cup sour cream

Steps:

  • In a mixing bowl, add the first 4 ingredients; stir to combine.
  • In a smaller bowl, add the mayonnaise and sour cream; stir to blend.
  • Spoon the mayo mixture over the pea mixture; gently stir to coat.
  • Season to taste with salt and pepper.
  • This tastes better to me chilled so I let it refrigerate 4-6 hours before serving.

I got this recipe from a local grocer's deli as I loved theirs so much and asked how it was made. It is great served with sandwiches or a side with dinner. A family favorite! ENJOY!

2 10 oz. packages of frozen peas, thawed
8 oz sliced water chestnuts, drained
1 c cheese, cubed - i.e., velveeta or american
1/2 c green onions, chopped
1/4 c mayonnaise (do not substitute)
1/4 c sour cream

Steps:

  • 1. Blend together peas, water chestnuts, green onions, and cheese. In a separate bowl, blend mayonnaise and sour cream; spoon over pea mixture and gently stir to coat. You can also add celery (1 cup) and salt and pepper to taste. It should be refrigerated for a few hours before serving.
